I may only have about three minutes with my teenager in the morning, but our interactions are meaningful. Many of you with teens will relate, I’m sure!
Also, last week I visited an elementary school and was floored by what the cafeteria was serving them. Everything was beige! A beige piece of chicken on a beige bun with beige home fries. At lunch time I saw plenty of color though. Half of them brought back bags of chitos from the lunch cafeteria. It made me sad, and it made me run home determined to make this video!
You can feed your kids and yourself an abundance of nutrition in under two minutes! As I show you how to make this breakfast, don’t feel bad if your child’s breakfast does not look like this. In my Eat Pray Get Well book I have been very honest about how poorly I fed my son when he was small. Nothing but donuts, and cap’n crunch for breakfast. We have come a long way. Mix all ingredients in a Vitamix or very powerful blender. Without a powerful blender the texture may be undesirable due to the lack of ability to break everything down and make it smooth. The last thing you want is vegetable chunks, a vitamix breaks everything down until it’s completely smooth and creamy.
I have two great recipes for you today. A vanilla blueberry shake and a brownie recipe! Naked Nutrition is it’s a company I can actually work it. First up is the brownie recipe. These brownies are high in protein, are certified gluten free, non GMO and contain no artificial sweeteners, colors, flavors etc.
What You Will Need for Naked Nutrition Brownies

Instructions
Follow instructions on the back of Naked Brownie. You simply add water and bake!
Now onto the Naked Shake. I used the vanilla for this recipe but I also have the chocolate and love them both. It’s the easiest meal of the day for me. I make a juice every morning in my Vitamix and having all of my vegetables end up tasting like a vanilla shake? What more can you ask for?
Note: You can skip the blueberries and have the Vanilla Naked Shake alone or you can mix vegetables in like I do. I throw spinach, flax seeds, and berries in mine.

That is the very movie that started me on my own juicing journey, determined to put my own autoimmune disease (Hashimoto’s) in remission. Carrot Ginger Juice Nama Juicer Recipe
What You Will Need
8-10 organic carrots
1 inch thick slice of ginger
Quality Juicer such as the Nama Juicer

Place all ingredients in juicer and juice away!

I interviewed Supermodel Carol Alt recently and she has inspired me to eat more “raw” foods. These fruit roll-ups are Kaufmann Diet friendly and are an interesting way to get more fruit in your diet. Carol looked like the picture of health but privately she was crying out to God for answers to her failing health. Homemade Fruit Rollups

This fruit roll up recipe could not be any easier. Blend, pour, and dehydrate and you have healthy, sweet, on the go snacks for days.
Any fruit of your choice(I used blueberries, strawberries and peaches)
Lemon juice
Sweetener(monk fruit or xylitol)
Chia seeds(extra nutritional boost)
Instructions
Blend fruit (lemon, sweetener and chia seeds if desired) into a puree using a blender.

When I first started the Kaufmann diet over a decade ago due to mold illness I was at a loss as to what to eat. What You Need to Make Taco Bowls
1 lb. Ground Beef grass feed-antibiotic and hormone free
Wick Fowlers Taco Seasoning contains no sugar, yeast, or anything artificial
Large Lettuce Wraps
Cilantro
1 Avocado
1 Medium Onion
1 Can Black Beans
1 Tomato diced
Mozzarella or Yogurt cheese shredded
Jalapeno – optional
Sour Cream – optional
Salsa – optional

Instructions
Brown the ground beef in a skillet on medium-high heat.
While the meat is browning prepare your bowl by placing one large lettuce leaf inside a bowl.
Dice tomato, cilantro, jalapeno, and avocado and set aside.
Once the meat is brown add taco seasoning with a few tbsp. of water and stir until blended. Let cook additional 2 minutes.
Add seasoned meat to your lettuce bowl then pile on desired amount of black beans, cheese, cilantro, tomato, onion, and avocado.
Top with sour cream and salsa if desired.
This recipe is fine for Kaufmann 2 diet, also referred to as Kaufmann Phase 2.
Mexican Taco Bowl

This Mexican Taco Bowl is bursting with flavor and you know I wouldn’t have it any other way. The best part about this meal is not only can it be put together in less than thirty minutes but it also has the kids seal of approval.
If you thought about following the Kaufmann diet or any candida or anti-mold diet, you probably never thought vanilla cupcakes would be on the menu! In my video below, my son and I will show you how to make them and I’ll also share how Bob and I met, which I believe was divine intervention!
Video: How To Make Vanilla Cupcakes
If you are following the Kaufmann diet or any anti-mold diet such as candida or keto, you may be wondering “Can You Recover from Mold?” I wrote an ariticle about this last week as well as how long it takes for mold to get out of your system. Below I have added a television interview I did on Know the Cause with Doug Kaufmann. I discuss my decades of mold illness and recovery.
Using a spoon fill the cup cake holders 3/4 way full.
Bake for approximately 20-25 minutes (or when toothpick comes out clean) Do NOT over bake
Frosting
Mix all ingredients well. Use less honey if you don’t like it very sweet.
Let cupcakes cool for 30 minutes before placing icing on them.
Note: These vanilla cupcakes would be considered fine to eat on Kaufmann 2, also referred to as Kaufmann Phase 2. These are of course gluten free vanilla cupcakes.
This cauliflower soup (Kaufmann diet friendly) recipe was sort of an accident. We returned home from vacation tired and sick from airport and vending machine food. Unbeknownst to us, the airport would be our home for the next eight hours due to a delay. This particular airport was so small there were no restaurants inside, only a vending machine and bodega type store. So we fueled up on plenty to ease the boredom!
The next morning, exhausted from the trip, the last thing I wanted to do was go food shopping. I scouted the fridge and cupboards and I saw a head of cauliflower, mozzarella cheese, and chicken bone broth. That was going to have to be dinner since I was set on staying in and relaxing. I knew it would taste much like broccoli cheese soup (which we love), so I wasn’t worried. Everybody loved it!
What You Will Need For Cauliflower Soup
1 Head cauliflower
13.5 oz Light coconut milk (I use 365 – whole foods brand)
1 Bag shredded light moisture mozzarella cheese
32 oz Chicken broth (Pacific brand now has bone broth which I love to use or any yeast free brand)
2 cloves Garlic
2 tsp Salt
¼ tsp Thyme
¼ Onion chopped
¼ tsp Black pepper
¼ tsp Parsley
¼ cup Flour (I use Namaste Perfect Flour Blend, but you could use cassava flour or GF flour of your choice)
2 tbsp Butter
1-2 tbsp Olive oil
Instructions
In a large frying pan melt 2 tbsp of butter then add 1-2 tbsp of olive oil.
Chop the garlic and onion in a food processor then saute in butter and 1 -2 tablespoon of olive oil.
Stir occasionally.
Once garlic and onion are translucent place in a crock pot.
Add other ingredients and cook on low for 6-7 hours or on high for 3-4 hours. Enjoy!
This recipe would be considered a Kaufmann 2 recipe. Also known as Kaufmann Phase 2.
Creamy Cauliflower Cheese Soup

Try this hearty and easy creamy cauliflower cheese soup recipe!
I loved how my white queso dip recipe turned out, so I kept imagining it tossed with a gluten-free pasta. This Mac & Cheese made with chick pea pasta was even better than I expected. If you are like me, and nachos are one of your favorite comfort foods, then I think you will enjoy this recipe. If you are following the Kaufmann Diet, this would be considered just fine on Kaufmann 2 or Phase 2.
Forget the unhealthy boxed version of mac and cheese and join me as I show you how to make chickpea mac and cheese. This recipe has just the right amount of spice and the added tomatoes and jalapenos just take it to another level.
While the boxed version of mac and cheese has almost no nutritional value, this version will provide you with a substantial amount of protein and fiber from the chickpeas, (it also has fewer carbs than regular pasta) as well digestive benefits from both the chick peas and the coconut milk. If you like cherry tomatoes, add in plenty for even more of a nutritional boost.
What You Will Need To Make Chickpea Mac and Cheese
1 box of chick pea pasta or any gluten free pasta of your choice.
3/4 cup organic shredded mozzarella cheese – mozzarella cheese helps keep this a low calorie queso
3/4 cup organic shredded gouda cheese
1/4 cup coconut milk – using light coconut milk will make this a low calorie queso
2 tsp or more cilantro – save some to sprinkle on top
Dash of garlic powder
3-4 drops of Cholula hot sauce – Don’t skip this step, it gives it great flavor and don’t worry this does not make it too spicy
Pickled jalapenos jalapeno peppers
How To Get Started
Boil water and cook pasta as directed on the box. While pasta is cooking you can start on the white queso. Directions below.
Instructions For Making Easy White Queso
Melt butter in saucepan
Add coconut milk and cheese and melt on medium heat
Add all other ingredients.
Top with cilantro, tomato, and jalapeno
Feeds two people. Double recipe for more.
Pairs perfectly with corn free tortilla chips or toss with your favorite gluten free pasta for mac and cheese
Putting it all Together
Simply toss the pasta and queso cheese together and top with cilantro, tomato, and jalapeno. This recipe is just fine if you are following Doug Kaufmann’s diet and would be considered Kaufmann 2 also known as Phase 2. For more Kaufmann diet recipes, check out my recipe section.
Chick Pea Mac and Cheese

Forget the boring boxed version of mac and cheese and join me as I show you how to make chick pea mac and cheese. This recipe has just the right amount of spice and the added tomatoes and jalapeños just take it to another level.
Why do we care about Valencia peanuts? If you searched “Do Valencia peanuts have less mold” than you already have an inkling about how just how moldy peanuts notoriously are. They not only contain mold, but the poisonous mycotoxin you are eating with the mold is called aflatoxin. Alfatoxin comes from aspergillus mold and according to cancer.org is group 1 carcinogen. That means aflatoxin is a known human carcinogen. So this is where Valencia peanuts enter the picture. Do Valencia peanuts have less mold?
Valencia peanuts are mostly grown in New Mexico and because the climate is dry and they are grown in bushes above ground, they are less susceptible to aflatoxin. However, mold can grow on any peanut that is not stored properly or when exposed to moisture.
Read on and I’ll share some interesting facts about peanuts as well as what brand of Valencia peanut butter is best and why Valencia peanuts have less mold.
Alfatoxins Explained
As mentioned above, aflatoxin is the mycotoxin (mold poison) of the mold Aspergillus. Unfortunately, they can be found in our food supply and especially in corn, wheat, and peanuts. The mold mostly forms due to wet and warm growing conditions and/or bad storing practices.
Many types of mold can grow on our food supply but Aspergillus really came to our attention due to its carcinogenic, toxic nature. Aspergillus also become front and center in the 60s when over 100,000 turkeys mysteriously died. The cause turned out to be Brazilian groundnut meal affected by Aspergillus flavus.
Are Valencia Peanuts Aflatoxin Free?
As I stated above, Valencia peanuts are generally known to have lower levels of aflatoxin compared to other peanuts. However, it is not guaranteed that Valencia peanuts are completely aflatoxin-free, as the presence of aflatoxin can depend on various factors such as climate, storage conditions, and processing methods.
Aflatoxins are harmful to human health. They not only cause cancer but can also cause systemic fungal infections. Aspergillus, the mold responsible for aflatoxins, is also sometimes found in people who have chronic sinus infections. Does Organic Peanut Butter Have Mold?
Organic peanut butter, like any food, has the potential to contain mold if it has not been stored properly or has been exposed to moisture. However, reputable manufacturers of organic peanut butter take precautions to prevent mold growth, such as using high-quality peanuts, storing them in dry conditions. Make sure you buy a certified organic brand with Valencia being the best choice.
Once you get your peanuts home, store them in a cool, dry place and to consume them before the expiration date. If you notice any signs of mold on your peanuts, such as green or blue patches or a musty smell, discard them.
What Nuts Have the Least Mold?
In general, almonds and hazelnuts have been found to have lower levels of aflatoxins compared to peanuts, pistachios, and walnuts. However, it is important to note that even within a particular type of nut, there can be variations in aflatoxin levels.
Remember that people who have life-threatening allergies to peanuts should not eat any type of peanut or peanut butter. Some are of the thought that it’s the mold poisons itself that cause the allergic reaction more-so than the immune reaction to the food. Because all nuts (and legumes such as peanuts) could possibly contain mycotoxins, it’s safer to not eat any at all when you have serious allergies.

Place chicken breast in crockpot and pour salsa verde over chicken. Cook on high for 4 hours or low for 8 hours. The chicken will be so tender you call pull it with a fork. Bake shells according to directions on the back and fill taco shells with desired toppings.
