How to Make Hummus in Under 5 Minutes [Video]

We always have store-bought hummus in the house and my husband kept asking why I don’t make it homemade.  I tried so many times to make hummus and it was never good!  Maybe he took that as a challenge because he whipped up this hummus in under 5 minutes. I would imagine he’s sorry he ever did, because now I buy the ingredients every week and ask him to make it!

Ingredients

  • 1 15 oz can chickpeas
  • 1/3 cup tahini
  • 2 tbsp olive oil
  • 1 lemon
  • 1 garlic clove
  • 1/2 tsp sea salt
  • 1 dash paprika
  • 1 dash of red pepper flakes
  • 5 tbsp of water

Directions

Mix all ingredients until very smooth in the Vitamix Blender.  I have tried making hummus in the past with a standard blender and could never get it smooth enough for my likening.  But maybe if you blend it for a longer period of time?  Let me know how yours turns out!

  • The Vitamix I bought is the A2500 and I love it!

  • 1 bag carrots chopped
  • 2 garlic cloves
  • 32 oz chicken broth
  • 2 tsp salt
  • 8 oz coconut milk
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp parsley
  • 1/4 tsp thyme
  • 1/4 cup flour ( I used Namaste Perfect Flour Bend) you can use any gluten free flour you like
  • 2 tbsp butter
  • 1 tbsp olive oil

What Makes This Soup Creamy

The use of the coconut milk (there is no coconut flavor in the end product) and the flour is what turns this turkey soup into a creamy treat.

Is This Soup Kaufmann Diet Friendly?

Yes!  If you are trying to eat a low mold diet,  candida diet, or any diet in which you are lowering your carbs and sugar intake (such as the Kaufmann diet) this recipe would be a fit. This recipe would be considered okay on the Kaufmann diet 2 (also known as Kaufmann 2.)

Creamy Turkey Soup Recipe

Not sure what to do with your Thanksgiving day leftovers?  My husband and I whipped up this creamy turkey soup in about 45 minutes! It was so easy and so incredibly delicious.
Course Main Dishes

Ingredients
  

  • Turkey cut into cubes (fully cooked)
  • 1/2 Medium onion
  • 1 bag Carrots diced
  • 6 Stalks of celery
  • 2 Garlic clove
  • 32 oz Chicken broth
  • 8 oz Coconut milk
  • 2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/2 tsp Garlic powder
  • 1/4 tsp Parsley
  • 1/4 tsp Thyme
  • 1/4 cup Flour I use Namaste Perfect Flour blend (gluten free)
  • 2 tbsp Butter
  • 1 tbsp Olive oil

Instructions
 

  • Chop the onion and garlic in a food processor.
  • Sauté in 2 tbsp butter and 1-2 tbsp of olive oil. Stir occasionally until translucent and slightly golden.
  • Add chopped celery and carrots and add just enough chicken broth to cover vegetables. Sauté for an additional fifteen minutes.
  • Add flour and stir. Add all spices and stir.
  • Add remaining chicken stock and coconut milk to a large pot. Pour the sautéed vegetables in the large pot and allow to simmer on medium-low for approximately 40 minutes or longer.
  • Add cooked turkey the last 5 minutes of cooking. Enjoy!

(Video) How to Make Pasta Fagioli Like the Blue Zones

If you haven’t watched Netflix’s Live to 100 – Secrets of the blue zone, it really is fascinating.  Something all the blue zones have in common around the world is surprisingly (or not so surprisingly) is that fact that they eat very little meat.  I won’t spoil the rest of the commonalties in case you want to watch it, but I will share this blue zone inspired pasta fagioli soup recipe.  I tweaked it a bit and added some more nutrition here and there and it truly turned out amazing.  Enjoy!

Easy Pasta Fagioli recipe!

Ingredients
  

  • 3/4 Large onion chopped
  • 2 can Cannellini Beans
  • 2 28 oz cans Fire roasted tomatoes
  • 1/4-1/2 cup Fresh Parsley chopped
  • 6 Cloves Garlic
  • 1/2 cup diced carrots
  • 1 tsp Fennel
  • 1 tsp Thyme
  • 2 32 oz cartons Vegetable broth
  • 2 can Coconut milk
  • 3 tsp Salt
  • 1/2 tsp Black Pepper
  • Pasta of your choice Cook separately and add to soup a few minutes before serving
  • 1/2 cup Pecorino cheese

Instructions
 

  • See video for instructions and heat on stove top for 2 hours. Crockpot: cook on high for 2 hours.

Notes

If you use quinoa, rice, or lentil pasta, this dish would be Kaufmann diet 2 friendly.

Breakfast With My Teen (Can you Relate?)

I may only have about three minutes with my teenager in the morning, but our interactions are meaningful.  Many of you with teens will relate, I’m sure!

Also, last week I visited an elementary school and was floored by what the cafeteria was serving them.  Everything was beige!  A beige piece of chicken on a beige bun with beige home fries.  At lunch time I saw plenty of color though.  Half of them brought back bags of chitos from the lunch cafeteria.  It made me sad, and it made me run home determined to make this video!

You can feed your kids and yourself an abundance of nutrition in under two minutes! As I show you how to make this breakfast, don’t feel bad if your child’s breakfast does not look like this.  In my Eat Pray Get Well book I have been very honest about how poorly I fed my son when he was small.  Nothing but donuts, and cap’n crunch for breakfast.  We have come a long way.  I hope you enjoy this video.

Whats in the Juice (for two)

Cabbage – I don’t measure but it’s about 1 cup

1/2 Cucumber (sometimes we put zucchini)

Handful Spinach (you can use any green)

1 tablespoon Flaxseed

1 tablespoon Sea Moss – See my video on how to prepare it.

Berries

Naked Shake – we use both Vanilla and Chocolate

Ginger – just a small slice

 

Instructions

Mix all ingredients in a Vitamix or very powerful blender.  Without a powerful blender the texture may be undesirable due to the lack of ability to break everything down and make it smooth.  The last thing you want is vegetable chunks, a vitamix breaks everything down until it’s completely smooth and creamy.

 

Naked Nutrition (Shake & Brownie Recipe)

I have two great recipes for you today.  A vanilla blueberry shake and a brownie recipe!  Naked Nutrition is it’s a company I can actually work it.  Most food brands that contact me carry products filled with sugar, preservatives and all kinds of crazy ingredients.  Products I have no interest in sharing.  Naked Nutrition is different.  Most of their products only have 3 ingredients and one of them is MCT oil.  I think you all see where I am going with this and why I love these products already.  MCT contains antifungal properties!  Hallelujah I’m in!  As you know my whole website and diet revolves around all things antifungal.  Now on to the recipes!

First up is the brownie recipe.  These brownies are high in protein, are certified gluten free, non GMO and  contain no artificial sweeteners, colors, flavors etc.

What You Will Need for Naked Nutrition Brownies

  • Naked Brownie Mix
  • Water

Instructions

  • Follow instructions on the back of Naked Brownie.  You simply add water and bake!

Now onto the Naked Shake.  I used the vanilla for this recipe but I also have the chocolate and love them both.  It’s the easiest meal of the day for me.  I make a juice every morning in my Vitamix and having all of my vegetables end up tasting like a vanilla shake?  What more can you ask for?

Note:  You can skip the blueberries and have the Vanilla Naked Shake alone or you can mix vegetables in like I do.  I throw spinach, flax seeds, and berries in mine.

Carrot Ginger Juice & Interview with Joe Cross [Video]

I have the easiest carrot ginger juice recipe for you, plus my interview with Joe Cross.  Remember when we watched Joe juicing his way across the United States in Fat, Sick, and Nearly Dead?  That is the very movie that started me on my own juicing journey, determined to put my own autoimmune disease (Hashimoto’s) in remission.  Which, I say ecstatically it has stayed in remission for years now! I interview Joe Cross below and will also share the best green juice along with the carrot ginger juice.

Joe Cross and I talk about our autoimmune disease and how nutrition from raw plants can be so powerful in helping to restore the body.  I myself developed the autoimmune disease, Hashimoto’s from toxic mold exposure, and Joe Cross has Urticaria.  Both of our autoimmune diseases are in remission.  Joe’s juicing experiment proved the right food can help restore health.

What You Will Need

  • 8-10 organic carrots
  • 1 inch thick slice of ginger
  • Quality Juicer such as the Nama Juicer

  • Place all ingredients in juicer and juice away!

Carrot and Ginger Juice

This juice is nutritional powerhouse! Ginger and carrots not only contain antifungal properties, but anti-viral compounds as well. Ginger and carrots have been shown to fight cancer. This juice is also packed with Vitamin A, C, K, B8, potassium, and Iron.
Course Drinks

Equipment

  • 1 Juicer (I have the Nama Juicer but you can use whatever you have handy)

Ingredients
  

  • 8-10 Carrots sticks
  • Ginger- use the size of a nickel and about 1/2 of an inch thick.

Instructions
 

  • Throw all ingredients into the juicer. It's as simple as that!

Fruit Roll-ups (Kaufmann Diet Friendly)

I interviewed Supermodel Carol Alt recently and she has inspired me to eat more “raw” foods.  These fruit roll-ups are Kaufmann Diet friendly and are an interesting way to get more fruit in your diet.  Carol looked like the picture of health but privately she was crying out to God for answers to her failing health.  Be sure to read my interview with her, it’s eye opening to the healing power of raw foods.

What You Will Need For Fruit Roll-ups

  • Kaufmann diet friendly fruits such as berries
  • 1 tsp lemon juice
  • Monk fruit or xylitol to taste
  • Chia Seeds (optional)
  • Dehydrator
  • Blender

Directions

  • Blend fruit (lemon, sweetener and chia seeds if desired) into a puree using a blender.
  • Pour on dehydrator sheet.
  • Set dehydrator to 118 degrees for approximately 10 hours. Time will vary depending on the type of dehydrator you have. You will know they are done when they look completely dry and you are able to pull the fruit right off the sheet.
  • Roll and store in air tight container.

Note: this recipe would be considered Kaufmann 1 also referred to as Kaufmann Phase 1.

Homemade Fruit Rollups

This fruit roll up recipe could not be any easier.  Blend, pour, and dehydrate and you have healthy, sweet, on the go snacks for days.
Course Snacks

Equipment

  • Blender or food processor
  • Food dehydrator

Ingredients
  

  • Any fruit of your choice (I used blueberries, strawberries and peaches)
  • Lemon juice
  • Sweetener (monk fruit or xylitol)
  • Chia seeds (extra nutritional boost)

Instructions
 

  • Blend fruit (lemon, sweetener and chia seeds if desired) into a puree using a blender.
  • Pour on dehydrator sheet.

Notes

Note: You can add a little lemon juice and monk fruit or xylitol if you wish. You can even add chia seeds for an extra nutritional boost. All the extras are not needed though you can simply use fruit.

Taco Bowl (Kaufmann Diet Friendly)

When I first started the Kaufmann diet over a decade ago due to mold illness I was at a loss as to what to eat.  Slowly I started building my recipe base and it became so easy to make dishes like this taco bowl Kaufmann diet friendly.  I also love sharing what I learned about overcoming mold illness and I share my interview with Doug Kaufmann on Know the Cause below.

What You Need to Make Taco Bowls

  • 1 lb. Ground Beef grass feed-antibiotic and hormone free
  • Wick Fowlers Taco Seasoning contains no sugar, yeast, or anything artificial
  • Large Lettuce Wraps
  • Cilantro
  • 1 Avocado
  • 1 Medium Onion
  • 1 Can Black Beans
  • 1 Tomato diced
  • Mozzarella or Yogurt cheese shredded
  • Jalapeno – optional
  • Sour Cream – optional
  • Salsa – optional

Instructions

  • Brown the ground beef in a skillet on medium-high heat.
  • While the meat is browning prepare your bowl by placing one large lettuce leaf inside a bowl.
  • Dice tomato, cilantro, jalapeno, and avocado and set aside.
  • Once the meat is brown add taco seasoning with a few tbsp. of water and stir until blended. Let cook additional 2 minutes.
  • Add seasoned meat to your lettuce bowl then pile on desired amount of black beans, cheese, cilantro, tomato, onion, and avocado.
  • Top with sour cream and salsa if desired.

This recipe is fine for Kaufmann 2 diet, also referred to as Kaufmann Phase 2.

Mexican Taco Bowl

This Mexican Taco Bowl is bursting with flavor and you know I wouldn’t have it any other way.   The best part about this meal is not only can it be put together in less than thirty minutes but it also has the kids seal of approval. 
Course Main Dishes

Ingredients
