What You Will Need
8-10 organic carrots
1 inch thick slice of ginger
Quality Juicer such as the Nama Juicer
Instructions
Place all ingredients in juicer and juice away!

I interviewed Supermodel Carol Alt recently and she has inspired me to eat more “raw” foods. These fruit roll-ups are Kaufmann Diet friendly and are an interesting way to get more fruit in your diet. Carol looked like the picture of health but privately she was crying out to God for answers to her failing health. This fruit roll up recipe could not be any easier. Blend, pour, and dehydrate and you have healthy, sweet, on the go snacks for days.
Any fruit of your choice(I used blueberries, strawberries and peaches)
Lemon juice
Sweetener(monk fruit or xylitol)
Chia seeds(extra nutritional boost)
Instructions
Blend fruit (lemon, sweetener and chia seeds if desired) into a puree using a blender.
Pour on dehydrator sheet.
Set dehydrator to 118 degrees for approximately 10 hours. Time will vary depending on the type of dehydrator you have. You will know they are done when they look completely dry and you are able to pull the fruit right off the sheet.
Roll and store in air tight container.

Note: You can add a little lemon juice and monk fruit or xylitol if you wish. You can even add chia seeds for an extra nutritional boost. All the extras are not needed though you can simply use fruit.

Ground beef (organic grass fed)
Carrots diced
Garlic cloves
Onion
Spinach
Bone broth or Vegetable stock
Light coconut milk
Salt and pepper
Garlic powder
Parsley
Thyme
Gluten free flour
Butter (organic)
Olive oil

Instructions For Making Meatball Soup
Preheat oven to 400 degrees.
Chop onion and garlic in food processor then sauté in 2 tbsp butter and 1-2 tbsp olive oil. Stir occasionally. Toss 1 tbsp of sautéed onion and garlic mixture in with ground beef. Add a dash of parsley, fennel, salt, pepper, parmesan cheese to ground beef.
Form meat mixture into meatballs and place on a cookie sheet that has been brushed with olive oil.
Brown meatballs for 15 minutes in oven. In crockpot add sautéed onion garlic and all other ingredients listed below in the recipe bar. Use a frother to blend flour in crockpot.
Once meatballs are done browning add to crock pot.
Cook on low for 5-6 hours or on high for 3-4.

Meatball Soup (Kaufmann Diet Friendly)

Try this meatball soup recipe that is healthy, easy and gluten free!
1/4cupFlour(I used Namaste Perfect Flour Blend which is wheat/gluten free)
2tbspButter
1tbspOlive oil
Instructions
Preheat oven to 400 degrees.
Chop the garlic and onion in a food processor.
Sauté in 2 tbsp butter and 1-2 tbsp of olive oil. Stir occasionally.
Toss about 1 tbsp of the sautéed onion and garlic in with your ground beef.
Add all other seasons to ground beef.
Form into meatballs and place on a cookie sheet that has been brushed with olive oil.
Brown meatballs for 15 minutes in oven.
In a crockpot add the rest of your sautéed onion garlic and all other ingredients except flour.
Once meatballs are done browning add those to crock pot as well. Add flour and stir. I use a frother to completely blend flour. They are such a great staple to have in the kitchen and are only a few bucks!
Cook on low for 5-6 hours or on high for 3-4. Enjoy!

It seemed only natural to do a post regarding ways to eat more fruits and vegetables after my interviews with Supermodel Carol Alt, Joe Cross and Tommy Rosa. We all, at some point end up changing our eating habits when our health starts to slip away. In my case, I turned to the Kaufmann diet.
When model Carol Alt became ill during the height of her career, she turned to a mostly raw diet to regain her health. Tommy Rosa on the other hand, was involved in a hit-and-run accident and had a near death experience. During this time, he believes he went to heaven and met Jesus, who gave him health revelations to live by. One of them was eating clean, vibrant foods found in nature. And, In my video interview with Joe Cross from the movie Fat, Sick, and Nearly Dead, Joe explains how he juiced his way back to health after dealing with the side effects of a dreadful autoimmune disease.
If you have time to revisit those interviews above, they are enlightening and inspiring. Carol is the reason I bought my first Vitamix, and because of Joe, juicing became a habit of mine. My mentor Doug Kaufmann helped me realize my long list of health problems were from mold exposure. Whatever the reason you are here, diet is a crucial part of recovering from health issues. 3 Appliances That Make It Easy To Eat More Fruits And Vegetables
Carol Alt suggests these 3 appliances if you want to give a raw diet a try or if you just want to get in more fruits and vegetables. I completely agree and I would not be able to consume this much vegetables without the help of these great tools below!
Blender– My husband bought me a Vitamix last year (no I did not get it sent to me for free.) They are pricey, but let me tell you, it is worth every penny! Recently in a podcast I was asked if my house was burning down what would I grab and my response was “my Vitamix.” A Vitamix allows you to blend whole fruits and vegetables with the skin into a liquid that is not thick or gritty. This option retains the fiber. The powerful blade allows you to make smooth nut butters, as well as hot soups (I share a video below of my teenage son and I making broccoli and cheese soup). You can also make “nice cream”. I will be doing a video shortly on how to make this dairy free, healthy dessert.
Dehydrator – The sky is the limit of what you can make in a dehydrator. There is anything from dried fruit, fruit roll ups, and Carol Alts favorite, cauliflower popcorn (which I made and loved it.) It really does taste like popcorn.

Which Sugar Free Substitutes Are Best?
Xylitol, monk fruit and Stevia are all great choices if you are on either the Kaufmann diet or a keto diet. These sugar substitutes will not feed candida and yeast and all have a low glycemic index.
Why Do I Eat A Kaufmann Diet?
The Kaufmann diet is very similar to the candida or Keto diet in which you are avoiding sugar and high carbohydrates. In my case, and for most people that try the Kaufmann diet, it’s because this particular way of eat starves pathogens. In particular mold and yeast like candida. Both are linked to illnesses such as chronic sinus infections, chronic fatigue, fibromyalgia, allergies, co-infections such as chronic Epstein Barr virus and even cancer.

If you are following the Kaufmann diet and are looking for some Kaufmann 1 dessert ideas like these lemon bites I have you covered. I started the Kaufmann diet over a decade ago after the devastating effects black mold had on my health. Below, I will also share a television interview on Know the Cause with Doug Kaufmann explaining why I follow his diet.
As a general rule, all you need to make any sugar and gluten free dessert including these lemon bites, is to have a great gluten free flour alternative on hand, as well as a sugar free healthy sweetener.

What You Need To Make Sugar Free Lemon Bites
Crust
1 cup tapioca flour
¾ cup almond flour (I used Bob’s red mill)
1 stick grass fed butter (softened)
½ cup monk fruit or xylitol
¼ tsp vanilla extract
dash of salt
Lemon Filling
3 lemons
4 eggs
¼ flour (1/8 cup tapioca flour and ⅛ cup almond flour)
½ cup monk fruit or xylitol

My Interview with Doug Kaufmann on Know The Cause
How To Make Gluten and Sugar Free Lemon Bites
Preheat oven to 350 degrees.
Mix all ingredients for CRUST and mix well until you form a dough.
Place dough in a round or circular oven safe dish. (No need to grease the dish due to the butter)
Pat down until the dish is covered with the crust. Bake crust for 10 minutes.
In a medium size bowl zest one lemon and add the juice of all 3 lemons, then add remaining lemon filling ingredients mentioned above.
Once crust has baked for 10 minutes pour lemon filling on top of crust and bake for 20 minutes. Filling will stiffen once cooled.
Cool in refrigerator for a least one hour before cutting into circles with a cookie cutter or you can simply cut into squares.
Top with sugar free powdered sugar if desired. Powdered Monk Fruit is a great choice.

Use a frother if you do not have a blender. They are cheap and such a wonderful addition to your kitchen appliances.

2 16 oz cans organic pumpkin (nothing added)
32 oz chicken both broth or chicken stock

Remove bay leaves and sprinkle salted sunflower seeds on top before serving.
Is Pumpkin Soup Good For You?
I’m so glad you asked! Pumpkin contains Vitamins such as C, E, and folate as well as antioxidants all which can strengthen your immune system. Onion and garlic are natural antifungals and can also protect against some cancers.
Coconut milk is a great source of healthy fat and is also a natural antifungal. If you are unaware of the diseases that fungus and mold can cause please read my story. Anyone who has lived in a moldy home (knowingly or unknowingly) have been on many rounds of antibiotics or birth control, or eat the Standard American Diet you may have a yeast or fungal issue. How to make the best tasting green juice for beginners. Back in my horrendously unhealthy eating days, the thought of juicing seemed laborious. I had no clue about what combinations of fruits and vegetables went well together. I ever remember making a smoothie with broccoli. It was disgusting and it was a long time before I juiced again. It got me thinking, I couldn’t have been the only one that needs help with easy and great tasting beginner juice recipes.

What Makes This Green Juice for “Beginners?”
This beginner green juice recipe is mild and sweet making it a great introductory juice. Many people give up in the beginning when they start juicing because they can’t tolerate the taste of their juice. Also, because of it’s “green” color, many (especially kids) can be put off by green juice recipes. Adding green apples to any juice in the beginning really helps with the flavor. Green apples are also a good choice because they are lower in sugar than red apples.
If you are just starting out and used to eating doughnuts for breakfast like I was, it won’t be an easy transition. When we change our habits, the old ones do eventually fall to the waist side. It might be hard to believe now but one day you won’t even miss those doughnuts. You will miss the days you are unable to juice!
Nutrition in this Green Juice
Spinach is high in zinc, niacin, protein and fiber, as well as vitamins A, C, E, K, and B6. The folate in spinach is good for your heart and for brain function.
Cucumbers contain fisetin which is like natures anti-inflammatory and also plays a role in brain function. Cucumbers also contain anti-carcinogenic (anti-cancer) properties and as well as support digestive health.
Green apples aid in digestion and are a great source of energy as they contain carbohydrates. They are rich in vitamin C which is an antioxidant (and antioxidants help eradicate free radicals which cause damage to cells).
Something to ponder as you are drinking your green liquid therapy:
Doughnuts, a breakfast favorite for Americans, is also one of the worst 5 foods you can eat according to Dr. Mercola. They raise your blood sugar, are high in calories, high in trans fats (which lead to heart disease) and are loaded with sugar. And we know sugar of course leads to fungal overgrowth, which if you follow Eat, Pray, Get Well, you are already aware of the link between fungus and cancer.

If you need ideas on how to ditch bread in your diet you will love this video on how to make chia and flax seed crackers. I make these crackers in the dehydrator in order to keep the ingredients technically “raw” (anything heated at 118 degrees or below is considered raw). The reason being is we aren’t killing off some of the vitamins and maybe more importantly the enzymes in food which literally keep us alive and healthy. My interview with Supermodel Carol Alt (who mostly eats a raw diet) inspired this recipe!
How To Make Chia Seed And Flax Seed Crackers (Video)
All you need is 4 ingredients to make these Kaufmann diet friendly crackers. If you are following the Doug Kaufmann diet, this recipe is a great option and would be considered Kaufmann 1 diet friendly (formally known as Kaufmann phase 1.)
What You Will Need To Make Chia Seed & Flax Seed Crackers
1 cup Organic Chia Seeds 1/2 cup Organic Flax Seeds 1/4 cup salted Sunflower Seeds (optional) Salt and pepper to taste Seasoning of your choice (I used Everything but the bagel seasoning)
Instructions For Making Chia Seed & Flax Seed Crackers
See video for dehydrator instructions and set dehydrator to 118 degrees (on some dehydrators you may have to bump up the temperature to get an internal temp of 118. After about two hours flip over and remove silicone lining so air can crisp the other side. Break into cracker size pieces. I consider this a great Kaufmann diet breakfast option or for a mid-day snack.
If using an oven – I haven’t tried it this way, but I would suggest an oven temp of 200 degrees. Bake on one side until crispy then flipping over until the other side is crispy. Break into cracker size pieces.
