It doesn’t get any easier than this for a sweet tooth!  Classic berries and homemade whipped cream.  Sometimes we forget about the simple….sugar free (except for the berries) and can be made dairy free.  See substitutions below.  Enjoy!

Ingredients
  

  • 16 oz Organic heavy whipping cream OR coconut cream chilled overnight unopened
  • 1 tsp Vanilla extract
  • 2 tbsp Xylitol or monk fruit

Instructions
 

  • In a large bowl mix heavy whipping cream, vanilla, and xylitol with an electric mixer until stiff peaks are just about to form. Make sure not to over-beat, cream will then become lumpy and butter-like. You can also use a wire whisk but it takes much longer to thicken.
  • If using coconut cream, chill overnight in the refrigerator, open and only remove the "cream" leaving the milk and saving for other recipes. Same steps as above, mix with vanilla and sweetener.

No-Bake Almond Joy Energy Balls

My son is 11 and if you read my story you know I was a junk food junkie up until just a few years ago. Which means, you guessed it, so was my son! I do carry guilt about this but as the old saying goes “when you know better you do better”. One of the biggest challenges was getting him off sugar as he is just as addicted as I was. I couldn’t tell him not to eat all the junk food he loved and was addicted to without having replacements, but they had to be GREAT tasting replacements or it just simply wouldn’t work. This is one of the first dessert recipes I tried and they were a hit! These no-bake almond joy energy balls are packed with protein along with other nutrients. Because dates are a bit high in sugar I do serve them in moderation. I should add however, dates are low on the glycemic index so they can be a good replacement for diabetics in moderation.

No-Bake Almond Joy Energy Balls

These no-bake almond joy energy balls are packed with protein along with other nutrients.
Prep Time 10 minutes
Course Desserts, Snacks
Servings 2 dozen

Ingredients
  

  • 2 cups Dates
  • 2 cups Almonds raw
  • 1/4 cup Unsweetened Cocoa Powder
  • 3/4 cup Coconut Flakes keep 1/2 cup to roll in
  • 1/4 tsp Sea Salt
  • 1/2 tsp Vanilla Extract
  • 1-2 tbsp Unsweetened Almond Milk

Instructions
 

  • Put 1/2 cup of coconut flakes into the food processor and process to break up flakes slightly. Do not over-process or it will become coconut butter.
  • Remove flakes and set aside in a bowl.
  • Place dates in the food processor and process until they have broken up and then come together into a ball.
  • Break up date ball with hands and add in almonds, cocoa powder, 1/4 cup of coconut flakes and sea salt.
  • Process for several minutes, scrapping down the sides as needed.
  • Add in vanilla extract and 1 tbsp of almond milk.
  • Process until mixture comes back together into a ball. If it doesn’t do this, add in 1 more tablespoon of almond milk. It should look like the photo above.
  • Remove mixture from the food processor and roll into roughly 2 dozen balls.
  • Roll each ball in the coconut flakes you processed earlier.
  • Optional: place balls on a baking sheet and flash freeze in freezer for 15-20 minutes. This ensures the balls won’t stick together when you place them in your container.
  • Store in an airtight container in the fridge for several weeks or the freezer for several months.

Bacon Brussels Sprouts (Kaufmann Diet Approved)

This bacon Brussels sprouts recipe is not only Kaufmann diet approved but one of the few things all three of my kids agree about.  They love them.  This recipe would be considered Kaufmann 1, also known as Phase 1.

What You Need For Bacon Brussels Sprouts

  • Organic bacon – Update:  I try not to eat pork anymore so I buy organic nitrite/nitrate free turkey bacon
  • Brussels sprouts
  • 1 tbsp olive oil
  • salt to taste
  • pepper to taste

Bacon Brussel Sprouts

A guilt free way to eat bacon! These Brussel Sprouts are still delicious on their own but the bacon really adds some delicious flavor to this side dish. I serve a vegetable to our 3 kids every night and I could not find one they all agreed on until now. This is a recipe the kids get excited about and we eat this side dish about twice a week.
Course Kaufmann 1, Side Dishes

Ingredients
  

  • Bacon-organic Nitrite/Nitrate free
  • Brussel sprouts
  • 1 tbsp Olive Oil
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Cook the bacon until it’s crispy, then crumble into small pieces.
  • Cut the bottoms off of the Brussel sprouts and then cut them in half. Steam the Brussel sprouts for approximately 15 minutes. I do not recommend boiling them. It changes the flavor and consistency in an unfavorable way.
  • In a bowl toss the Brussel sprouts with a tbsp of olive oil and the bacon pieces.
  • Salt and pepper to taste.

Health benefits of brussel sprouts - Brussels sprouts are surprisingly high in protein for a green vegetable, and just one serving would meet your needs for vitamin C and vitamin K for the day. Not only do brussel sprouts help prevent cancer but they offer digestive support, are an anti-inflammatory and they lower your risk of heart disease. This is to just name a few.

Gluten Free Flatbread (Kaufmann Diet Friendly)

This easy gluten-free flatbread is not only easy to make but is great on the candida or low mold diet aka the Kaufmann diet.  I got the idea for this bread from another blogger called Eating with Purpose, but I tweaked the recipe a bit to fit our needs.

Kids can find it hard to transition from commercial white bread to a healthier bread, but not with this recipe!  It only takes 8 minutes in the oven and about 5 minutes to throw together.   Use your imagination as to the many ways you can use this bread.  We mostly use it to dip in olive oil and spices along side our gluten free pasta dishes .

Because the flour contains brown rice, this gluten free flatbread recipe would be considered Kaufmann 2, also known as the Kaufmann Phase 2 diet.

Easy Flatbread (Gluten Free)

This easy gluten free flatbread is an absolute staple in our house.  I got the idea for this bread from another blogger called Eating with Purpose, but I tweaked the recipe a bit until I could get the kids to love it as much as I do.

Course Breads and Muffins

Ingredients
  

  • 1 cup NAMASTE PERFECT FLOUR BLEND
  • 1/2 cup almond flour
  • 2 table spoons of flax seed optional OR Chia seeds
  • 1 tsp xylitol
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 3 organic eggs
  • 3/4 cup plain organic yogurt no sugar added - We use Stonyfield Organic

Instructions
 

  • Pre-heat oven to 350º
  • In a large bowl combine perfect flour blend, ground flax or chia, xylitol, baking soda and salt.
  • In a small bowl, blend eggs and yogurt
  • Add the egg mixture into the dry ingredients
  • Pour batter onto parchment paper …Smooth batter out with a spoon over the entire surface area, so it is thin and even.
  • Sprinkle herbs of choice and sea salt
  • Bake at 350º for 8 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and cut into desired size with a pizza cutter.

Phase II (Kaufmann 2) friendly.
You can also make this recipe by using 1/2 cup almond flour and 1 cup NAMASTE PERFECT FLOUR BLEND. if you use Namaste flour blend you can then disregard the brown rice and tapioca flour.

Gluten and Corn Free Nachos

I created these gluten and  Corn Free Nachos recipe for my husband and I who used to love a cold beer and some nachos on a Friday night.  This was, of course, back when I ate all things “junk” and would then scratch my head in confusion as to why I was chronically ill.  Since starting the Kaufmann diet, I have learned that almost all of our former guilty pleasures can be re-created into a healthier and often times tastier version!  However, no replacement has been found for the beer just yet.

Corn Free Nachos (Gluten Free)

I created this Kaufmann 2 friendly Corn Free Nachos recipe for my husband and I who used to love a cold beer and some nachos on a Friday night.

Ingredients
  

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray or wipe cookie sheet with coconut oil (I found a coconut non stick spray I love from Trader Joes).
  • Spread corn free tortillas on cookie sheet and top with preheated chili and yogurt cheese.
  • Bake on middle rack for about 8 minutes. Top with jalapeños, salsa, and sour cream.

I made these Berry Cinnamon Muffins using Namaste perfect blend flour. I like the idea of having all the ingredients already measured out for me. It also contains no wheat, gluten, soy, corn, potato, dairy, casein, peanuts or tree nuts. Non-GMO, all natural, no preservatives. The only ingredients are sweet brown rice flour, tapioca starch, brown rice flour, arrowroot powder, sorghum flour, and xanthan gum.

  • 1 1/2 cups Namaste Perfect Flour Blend see ingredients below
  • 1 cup blackberries or raspberries
  • ¾ cup xylitol
  • ½ tsp salt
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/3 cup coconut oil
  • 1 egg
  • ½ cup milk
  • ½ tsp vanilla
  • 1 tbsp sour cream

Instructions
 

  • Preheat oven to 400°F. Grease or spray muffin tin or insert paper liners.
  • Combine flour, xylitol, salt, baking powder and cinnamon in medium bowl. Mix well.
  • Add remaining ingredients; mix well.
  • Fill muffin cups 3/4 full. Insert berry directly into the middle of the muffin and push down until it’s partly submerged into the batter.
  • Bake for approximately 15 minutes. Muffins are done when toothpick inserted in center comes out clean.

What would you say brings you happiness?  Wealth? Your family? Good health? A rewarding career? Beautiful surroundings?  I would imagine these would be among the most popular answers.  I imagine too that many of us have several or even all of these things, yet true and sustaining happiness stills eludes us.

We all know happiness can be temperamental and fleeting.  We are satisfied momentarily by the good things in our lives until we start thinking about how a little more of this, or a little less of that would REALLY make us happy.  We start to play the “if only” game.  “If only I made a little more money.”  “If only my husband understood me better.”  “If only I can reach 20,000 likes on facebook.”  Sound familiar?  How many times have we started a day off feeling all is right with the world until we hear that our best landed our dream job, or she got engaged and that is something that you have been hoping and praying for.  Or perhaps your friend posts yet another slideshow of her beautiful family on their beautifully expensive vacation.  Before you waste any more time chasing happiness, let’s take a look at what King Solomon had to say about this topic.  By today’s standards King Solomon was a trillionaire.  In fact, historians report that he was probably one of the wealthiest and wisest rulers to ever walk the earth.  King Solomon surrounded himself with all the luxuries money could buy and denied himself nothing. He had over 700 wives, over 300 concubines, and everything he could have ever wanted and more (aside from perhaps enough sleep).  He still however, felt something was missing.  When he came to the end of his life, this is what he had to say:

I denied myself nothing my eyes desired;
I refused my heart no pleasure.
My heart took delight in all my labor,
and this was the reward for all my toil.
Yet when I surveyed all that my hands had done
and what I had toiled to achieve,
everything was meaningless, a chasing after the wind;
nothing was gained under the sun.

Sounds impossible doesn’t it?  To have everything and still not be satisfied?  When he looked around at everything he had, and everything he had created,  he realized that it was not the money and material things, or the power and conquests that brought meaning to his life.  He discovered that when he turned away from God he no longer had the peace, self-fulfillment and happiness he once knew.  Most of us at some point in our lives have walked away from God, or what we knew is right, to go fulfill a need or a pleasure that we believed would satisfy us. It’s only later, after the excitement of our momentary pleasure wears off, do we go back to feeling empty. God has promised us something better.  In psalm 37-4 it says “delight in the Lord and he will give you the desires of your heart”. Sometimes we think we know what will makes us happy but God says he knows us better than we know ourselves and therefore knows what would truly make us happy.  I wonder how many of us can say “thank God, I didn’t get what I asked for!” I know I have! He knows exactly what people to bring into our lives, what husband, what job, etc, will make us happy and fulfill us.  He also promises to give us peace that surpasses all understanding, which come to think of it, just may be where “happiness” lies, in our peace.  The peace we feel even through the tough times.  The peace we feel in His promise to take our tragedy and loss and “make all things work together for good”.

So the recipe for happiness is don’t chase after happiness. Or money, or people, but to chase after God instead and watch him fulfill his promise of giving you the desires of your heart.

Crockpot Chili

Course Main Dishes

Ingredients
  

  • 1 lb. Organic grass fed ground beef
  • 2 cans Fire roasted tomatoes
  • 1 can Baked beans
  • 1 bag Diced carrots or zucchini I try to add veggies wherever I can
  • 1 can Black beans
  • 1 pkg Wick Fowlers 2 Alarm Chili Kit Don't use the Flour to keep Kaufmann 2

Instructions
 

  • Brown ground beef and drain before putting in the crockpot.
  • Add about half of the seasonings from each packet (except for the corn masa flour – disregard)
  • Drain beans and the remaining ingredients to the crock pot. Stir and cook on low for 6 hours or high for 3 hours.
  • Top with mozzarella or yogurt cheese if you’d like.
