We always have store-bought hummus in the house and my husband kept asking why I don’t make it homemade. I tried so many times to make hummus and it was never good! Maybe he took that as a challenge because he whipped up this hummus in under 5 minutes. I would imagine he’s sorry he ever did, because now I buy the ingredients every week and ask him to make it!

Ingredients
1 15 oz can chickpeas
1/3 cup tahini
2 tbsp olive oil
1 lemon
1 garlic clove
1/2 tsp sea salt
1 dash paprika
1 dash of red pepper flakes
5 tbsp of water
Directions
Mix all ingredients until very smooth in the Vitamix Blender. I have tried making hummus in the past with a standard blender and could never get it smooth enough for my likening. But maybe if you blend it for a longer period of time? Let me know how yours turns out!
When I first started the Kaufmann diet over a decade ago due to mold illness I was at a loss as to what to eat. Slowly I started building my recipe base and it became so easy to make dishes like this taco bowl Kaufmann diet friendly. I also love sharing what I learned about overcoming mold illness and I share my interview with Doug Kaufmann on Know the Cause below.
What You Need to Make Taco Bowls
1 lb. Ground Beef grass feed-antibiotic and hormone free
Wick Fowlers Taco Seasoning contains no sugar, yeast, or anything artificial
Large Lettuce Wraps
Cilantro
1 Avocado
1 Medium Onion
1 Can Black Beans
1 Tomato diced
Mozzarella or Yogurt cheese shredded
Jalapeno – optional
Sour Cream – optional
Salsa – optional

Instructions
Brown the ground beef in a skillet on medium-high heat.
While the meat is browning prepare your bowl by placing one large lettuce leaf inside a bowl.
Dice tomato, cilantro, jalapeno, and avocado and set aside.
Once the meat is brown add taco seasoning with a few tbsp. of water and stir until blended. Let cook additional 2 minutes.
Add seasoned meat to your lettuce bowl then pile on desired amount of black beans, cheese, cilantro, tomato, onion, and avocado.
Top with sour cream and salsa if desired.
This recipe is fine for Kaufmann 2 diet, also referred to as Kaufmann Phase 2.
Mexican Taco Bowl

This Mexican Taco Bowl is bursting with flavor and you know I wouldn’t have it any other way. The best part about this meal is not only can it be put together in less than thirty minutes but it also has the kids seal of approval.
If you thought about following the Kaufmann diet or any candida or anti-mold diet, you probably never thought vanilla cupcakes would be on the menu! In my video below, my son and I will show you how to make them and I’ll also share how Bob and I met, which I believe was divine intervention!

If you are following the Kaufmann diet or any anti-mold diet such as candida or keto, you may be wondering “Can You Recover from Mold?” I wrote an ariticle about this last week as well as how long it takes for mold to get out of your system. Below I have added a television interview I did on Know the Cause with Doug Kaufmann. I discuss my decades of mold illness and recovery.
Using a spoon fill the cup cake holders 3/4 way full.
Bake for approximately 20-25 minutes (or when toothpick comes out clean) Do NOT over bake
Frosting
Mix all ingredients well. Use less honey if you don’t like it very sweet.
Let cupcakes cool for 30 minutes before placing icing on them.
Note: These vanilla cupcakes would be considered fine to eat on Kaufmann 2, also referred to as Kaufmann Phase 2. These are of course gluten free vanilla cupcakes.
This cauliflower soup (Kaufmann diet friendly) recipe was sort of an accident. We returned home from vacation tired and sick from airport and vending machine food. Unbeknownst to us, the airport would be our home for the next eight hours due to a delay. This particular airport was so small there were no restaurants inside, only a vending machine and bodega type store. So we fueled up on plenty to ease the boredom!
The next morning, exhausted from the trip, the last thing I wanted to do was go food shopping. I scouted the fridge and cupboards and I saw a head of cauliflower, mozzarella cheese, and chicken bone broth. That was going to have to be dinner since I was set on staying in and relaxing. I knew it would taste much like broccoli cheese soup (which we love), so I wasn’t worried. Everybody loved it!
What You Will Need For Cauliflower Soup
1 Head cauliflower
13.5 oz Light coconut milk (I use 365 – whole foods brand)
1 Bag shredded light moisture mozzarella cheese
32 oz Chicken broth (Pacific brand now has bone broth which I love to use or any yeast free brand)
2 cloves Garlic
2 tsp Salt
¼ tsp Thyme
¼ Onion chopped
¼ tsp Black pepper
¼ tsp Parsley
¼ cup Flour (I use Namaste Perfect Flour Blend, but you could use cassava flour or GF flour of your choice)
2 tbsp Butter
1-2 tbsp Olive oil
Instructions
In a large frying pan melt 2 tbsp of butter then add 1-2 tbsp of olive oil.
Chop the garlic and onion in a food processor then saute in butter and 1 -2 tablespoon of olive oil.
Stir occasionally.
Once garlic and onion are translucent place in a crock pot.
Add other ingredients and cook on low for 6-7 hours or on high for 3-4 hours. Enjoy!
This recipe would be considered a Kaufmann 2 recipe. Also known as Kaufmann Phase 2.
Creamy Cauliflower Cheese Soup

Try this hearty and easy creamy cauliflower cheese soup recipe!
I loved how my white queso dip recipe turned out, so I kept imagining it tossed with a gluten-free pasta. This Mac & Cheese made with chick pea pasta was even better than I expected. If you are like me, and nachos are one of your favorite comfort foods, then I think you will enjoy this recipe. If you are following the Kaufmann Diet, this would be considered just fine on Kaufmann 2 or Phase 2.
Forget the unhealthy boxed version of mac and cheese and join me as I show you how to make chickpea mac and cheese. This recipe has just the right amount of spice and the added tomatoes and jalapenos just take it to another level.
While the boxed version of mac and cheese has almost no nutritional value, this version will provide you with a substantial amount of protein and fiber from the chickpeas, (it also has fewer carbs than regular pasta) as well digestive benefits from both the chick peas and the coconut milk. If you like cherry tomatoes, add in plenty for even more of a nutritional boost.
What You Will Need To Make Chickpea Mac and Cheese
1 box of chick pea pasta or any gluten free pasta of your choice.
3/4 cup organic shredded mozzarella cheese – mozzarella cheese helps keep this a low calorie queso
3/4 cup organic shredded gouda cheese
1/4 cup coconut milk – using light coconut milk will make this a low calorie queso
2 tsp or more cilantro – save some to sprinkle on top
Dash of garlic powder
3-4 drops of Cholula hot sauce – Don’t skip this step, it gives it great flavor and don’t worry this does not make it too spicy
Pickled jalapenos jalapeno peppers
How To Get Started
Boil water and cook pasta as directed on the box. While pasta is cooking you can start on the white queso. Directions below.
Instructions For Making Easy White Queso
Melt butter in saucepan
Add coconut milk and cheese and melt on medium heat
Add all other ingredients.
Top with cilantro, tomato, and jalapeno
Feeds two people. Double recipe for more.
Pairs perfectly with corn free tortilla chips or toss with your favorite gluten free pasta for mac and cheese
Putting it all Together
Simply toss the pasta and queso cheese together and top with cilantro, tomato, and jalapeno. This recipe is just fine if you are following Doug Kaufmann’s diet and would be considered Kaufmann 2 also known as Phase 2. For more Kaufmann diet recipes, check out my recipe section.
Chick Pea Mac and Cheese

Forget the boring boxed version of mac and cheese and join me as I show you how to make chick pea mac and cheese. This recipe has just the right amount of spice and the added tomatoes and jalapeños just take it to another level.
These Oven Fried Green Tomatoes are grain free, gluten-free, and are Kaufmann diet friendly. If you are following Doug Kaufmann‘s diet this would be just fine on the Phase 2, also known as Kaufmann 2. If you are not sure what the Kaufmann diet is, I have a full explanation in my article titled What Can I Eat as well as my television interview on Know the Cause discussing my years of chronic illness due to mold exposure.
What You Need For Tomatoes Caprese
1/2 cup almond flour
2 large green tomatoes
1/2 cup coconut flour
1 cup tapioca flour
1 egg
1/4 -1/2 cup coconut milk (or any milk of your choice)
mozzarella cheese in the shape of a ball you can slice
salt
Instructions
Heat oven to 400 degrees.
Mix egg and milk in a bowl.
Place all flours and salt and pepper and mix in a separate bowl.

Fully submerge tomato slice in the egg, then in the flour, then once again into the egg mixture and flour for a second time.
Place parchment paper over a baking sheet and grease the paper well. Add more salt and pepper before placing in the oven.
Bake for 20 minutes and turn them over half way through baking. You can also fry these in coconut oil. I have made them this way as well and it’s delicious.
Slice cheese in 1/4 inch slices and place between tomatoes AFTER they come out of the oven. My husband loves to put either a sugar free balsamic glaze or pimento cheese spread on his. Enjoy!

This no bake chocolate nut crust takes less than 3 minutes to make and if you are following the Kaufmann diet, it would be considered Kaufmann 2 friendly. This chocolate nut crust is so versatile, lately I have been filling the crust with sugar free puddings and I also use it for my almond butter pie recipe. This chocolate nut crust is so versatile, lately I have been filling the crust with sugar free puddings and I also use it for my almond butter pie recipe.
Place all ingredients in a powerful blender and mix well.

These Kaufmann diet friendly brownies make it hard to believe you have just given up wheat and sugar. When I realized my 20 year sinus infection was due to mold and not just bacteria, I knew I was going to have to make a life change because all the surgeries and antibiotics in the world were not helping! I was going to have to change my diet to starve out the infection. Many recipes were born from this change of diet and I hope you enjoy them as much as we did.
Note: I have tried making them in both in a glass baking dish and in a metal pan and hands down it comes out better in the cake pan. The brownies get slightly crisped edges and they are so SO moist! I got the inspiration for these brownies from a fantastic cookie recipe over at eating with purpose. I tweaked it a bit and these fantastic brownies were born.
What You Will Need for Kaufmann Diet Friendly Brownies
1 cup almond butter
2 organic eggs
3/4 cup xylitol
1 tsp vanilla extract
½ tsp apple cider vinegar
¼ cup unsweetened cocoa powder
2 tbsp tapioca flour or other Kaufmann diet approved flour
½ tsp sea salt
½ tsp baking soda
Instructions
Preheat the oven to 350 degrees.
Spray TWO square or round metal cake pans with either a non-stick butter or coconut oil spray.
In a medium size bowl beat the eggs then add the almond butter, vanilla, and the apple cider vinegar.
Add xylitol, coco powder, flour, salt and baking soda and mix well.
Place 1/2 of the dough in each pan and spread it out until it’s even. This will take a little work as the dough is very sticky but if you use a rubber spatula dipped in water, this makes it much easier.
Bake for 10 minutes. Do no overcook. Do not be concerned if the center looks too moist. Once they cool in the refrigerator for 2-3 hours they will be perfectly moist (but not too moist) and chewy. I keep the brownie in the pans and store it in the refrigerator covered with plastic wrap. It’s doesn’t stick around long in my house anyway!
Why I Started The Kaufmann Diet
Below is my interview on Know the Cause with Doug Kaufmann. If you have any health issues that don’t get better with conventional medicine, then mold may be the reason. I talk about my decades long battle with chronic illness until I found my “cause.”

Kaufmann 2 Diet (Kaufmann Phase II)Notes – apple cider vinegar has many health benefits. ACV contains Malic acid which exhibits anti-fungal activity. There are also claims it reduces pain associated with fibromyalgia. Drinking apple cider vinegar has been linked to improved control of blood sugar, heart health, and may even aid in cancer prevention.Almond butter – contains calcium, copper, vitamin E and magnesium to name a few. Some health benefits of almonds include improved cholesterol levels to combat cardiovascular disease, they aid in keeping the nervous system functioning properly as well as keeping bones strong and healthy.

My stuffed cabbage is a great Kaufmann diet dinner recipe as it’s both savory and hearty. Believe me it will not make you feel deprived. If you are not sure what the Kaufmann diet is, it’s a diet similar to keto in which you are consuming less sugar and carbs. The Kaufmann diet is a way of starving pathogens such as mold and yeast, which is crucial for those suffering from candida or fungal infections. Quinoa(I used Suzie's quinoa in a pouch out of convenience. The only ingredients are quinoa, olive oil, and sea salt.)
1/4cupChicken broth
1Egg
2clovesGarlic diced
1/4Yellow onion diced
2tbsWorcestershire sauce(I used Annie's organic)
2tbsHoney(or xylitol if you are cutting out all sugar)
8ozTomato sauce(double if you like extra sauce)
1tbsArrowroot powder
2tspSalt
1tspPepper
Instructions
Chop onion and garlic and sauté in medium saucepan with olive oil over medium heat for about 5 minutes then set aside.
Boil water in large pot and submerge about 10-15 cabbage leaves for 2 minutes, just enough time to get them soft.
Remove cabbage leaves from water and set leaves in a strainer and set aside.
Lightly beat the egg and combine meat, quinoa, onion, garlic, salt, pepper, and chicken broth. Mix well.
In a small bowl combine your sauce - tomato sauce, Worcestershire sauce, and honey or xylitol. and just a pinch of sea salt.
Taking one leaf at a time, place meat/quinoa mixture in the middle of the leaf then role up and place seam down in the crockpot.
Once all stuffed cabbage is in crockpot, pour sauce over cabbage and cook on high for 4 hours, or low for 8 hours. Enjoy!

We made these roasted tomatoes with pesto over a bed of quinoa and brown rice for lunch last week. Watch my video below and I’ll show you how easy it is to make.
What You Will Need For Roasted Tomatoes
4-6 roma tomatoes
1/4 cup olive oil
1 tablespoon jarred minced garlic
1/4 teaspoon red pepper flakes – more if you like spicy
fresh basil
3/4 tsp salt (sprinkle more on top once roasted to desired taste)
1/2 teaspoon black pepper
shaved parmesan for the top (optional)
Instructions
Cut Roma tomatoes in half
Toss with all ingredients listed
Roast at 400 degrees for 30 minutes.
Top with pesto sauce and parmesan shavings (optional if dairy free)
If you are following the Kaufmann diet, this roasted tomato recipe would be considered Kaufmann diet friendly. Specifically Kaufmann 2, formally known as Kaufmann phase 2. The reason this roasted tomato recipe is considered phase 2 is because of the parmesan in the pesto sauce as well as the brown rice. If you omit those ingredients this would be a Kaufmann 1 or phase 1 recipe.
