Strawberry Vanilla Bean Roasted Cashews

These roasted cashews carry a real nutritional punch. I leave them out on the counter for the kids and watch them disappear!
Course Desserts, Snacks

Ingredients
  

  • 1 lb Cashews
  • 1 Vanilla bean
  • 2 tsp Vanilla extract
  • 1/3 cup Xylitol
  • 1 cup Dried strawberries I used Trader Joes brand
  • 1/4 tsp Cinnamon
  • pinch Salt
  • 1 Egg white

Instructions
 

  • Place cashews in bowl and just enough water to cover them. Add 1 tsp. of vanilla extract. Soak for 2-3 hours.
  • Drain water and lay cashews out on parchment paper to dry completely (About 1 hour or longer.)
  • Once cashews are dry preheat oven to 200 degrees and spray cookie sheet with coconut oil spray.
  • In a bowl combine dry cashews with egg white, xylitol, vanilla, cinnamon, salt and dehydrated strawberries. Mix well and spread cashews onto cookie sheet.
  • Sprinkle 1 tbsp. more of xylitol on top of cashews.
  • Bake at 200 degrees for 2-3 hours. Toss cashews after 1 hour and continue to bake for another hour or two. If after two hours they still look moist continue to bake for another hour. Checking every 30 minutes. They will continue to dry out even after they are removed from oven.
  • Take out of oven and store in air tight container. Enjoy!

Kaufmann 1 Diet (Kaufmann Phase I)

Toss the cashews with a wooden spoon. Don’t be discouraged when you notice they are still wet after a couple stirs.  They will dry up and they will also continue to dry when they come out of the oven.

Creamy Hot Chocolate … and Listening to that still small voice

Coffee or tea…or how about hot chocolate?  Now you can ditch that prepackaged powdered stuff.   You know the kind with the dehydrated marshmallows inside?  Yes, admittedly those do taste pretty good but I promise you this recipe tastes even better and actually has some health benefits! I know you want to, but don’t skip ahead to the recipe just yet without reading below because I know all of us can see ourselves in this story….

On Monday I was enjoying my day off doing one of my favorite things.  I was on my way to Pier 1 to shop for some cool food photography props when I spotted a women and her toddler sitting on the bench at the bus stop waiting for the bus.  I instantly felt prompted to give her the little bit of cash I was carrying that I was about to deposit in the bank that afternoon.  I was surprised at all of the thoughts that went through my head in those few seconds.  “But I NEED this money to be deposited today”, “there really is nowhere to safely pull over”, “I should give it to her, she may really need it”, “what if my gesture insults her?” and … “my husband just got laid off in a corporate cut back how can this be a good idea?”.  I figured that last one in itself should justify me not being inconvenienced right?  Then the light turned red which placed me not too far from where she was sitting.   I relented and decided to give her the money.  I rolled down my window and yelled out the window twice in an effort to get her attention. My shouts went unheard and the light turned green. I did not feel like turning the car around, so I guiltily thought to myself “I did try, and I can always give the money to the homeless man I saw in a wheelchair on the way home instead”.  I thought that seemed like a fair trade off but immediately the feeling that came across me was that that is not what I was being lead to do and that no it really wasn’t “good enough”.  Feeling a bit bothered (as we do when we ignore what we know we are supposed to do) I walked into Pier 1 and instead of enjoying my favorite pastime I felt heavy and burdened and frankly a bit selfish.

Twenty minutes later I pulled out of Pier 1 and saw the woman still waiting for the bus.  I was so relieved to see her I drove right over, parked on the side of the road and walked up to the bench. I reached out my hand with the money and told her not to take this gesture the wrong way but that I felt I was to give her this money and to do whatever she’d like with it.  She froze and didn’t even reach out her hand to take it right away.  I wasn’t sure if she was insulted, or if there was a language barrior but she didn’t say a word, she just started to cry and then reached out to take the money from my hand.  As I was walking away I heard her yell out through her cry “thank you”!  I didn’t turn around I just raised up my arm in a gesture of “your welcome”.

I realized not only did her face and tears prove she was in dire straits  but also that when we listen to that still small voice it turns out not only are we blessing that other person but also ourselves! I drove home thinking of all the possible reasons she became so emotional.  Maybe she was short her rent payment, or maybe she wouldn’t have been able to eat lunch that day. I thought about all the times in my past when I was in need and the right person or circumstance appeared, and how glad I was she was still there so I could get a second chance to do the right thing.  When we let our flesh get in the way and justify all the reasons for not helping we miss out on such wonderful opportunities.  You never know who’s path you may cross and how you can make a huge difference in their lives and how one day we will all need someone to take that same time for us.

Healthy Hot Chocolate

Ditch that prepackaged powdered stuff and try this quick and healthy creamy hot chocolate!
Course Drinks

Equipment

  • 1 Nutri bullet or a blender

Ingredients
  

  • 1 cup Light coconut milk
  • 1 tbsp Coco powder (I used Equal Exchange Baking Cocoa, it does not contain sugar)
  • 1/2 tsp Vanilla extract
  • 1/2 tbsp Coconut oil
  • 4 1/2 tsp Xylitol
  • pinch Salt

Instructions
 

  • Heat all ingredient in a saucepan on medium heat until hot.
  • Once the hot chocolate is hot, pour into a bullet or a blender for 5 seconds. This makes the drink so frothy and it's mixed perfectly! Don't leave out this last step.
  • Top with homemade whipped cream if desired - click here for whipped cream recipe

Don't skip the final step which is to mix this in a bullet or blender. Makes one serving. Double the recipe for two.
UPDATE: I have since bought a "frother" they are cheap and quick so I no longer do the step above using the bullet. If you don't have one they are a fantastic addition in the kitchen!

Guiltless Reuben Sandwich

Today was just one of those perfect days! My husband and I were both off today so once the kids were off to school we had the whole day ahead of us! But first and foremost on my mind was tearing into my order of breads, tortillas, and pizza crusts I received from Guiltless Foods! I have been on the hunt for great tasting wheat and yeast free bread for years now. Not an easy task as many of you know! When I saw Guiltless Foods being endorsed on the TV show Know the Cause I knew I wanted to try it.   So for lunch we decided to make Rueben sandwiches and I call this a “guiltless” Reuben not only because we used Guiltless foods bread but because there is also no thousand island dressing on this sandwich.  Instead we just added some spicy mustard and it was delicious!

We decided the bread tasted a lot like rye and the texture was fantastic!  It was moist and hearty and it did not make me miss regular bread in the least. Their bread is low carb, grain free, preservative free, and made from their signature blend of seeds and egg whites. If you are trying to follow the phase 1 diet or just trying to lose weight I recommend their sandwich bread!  Tonight…guiltless pizza is on the menu, can’t wait!

Guiltless Reuben Sandwich

Try this easy and healthy Guiltless Rueben Sandwich. I call this a “guiltless” Reuben not only because we used Guiltless foods bread, but because there is also no thousand island dressing on this sandwich.  Instead we just added some spicy mustard and it was delicious!
Course Main Dishes

Ingredients
  

  • Guiltless Sandwich Bread
  • Corned Beef antibiotic & hormone free
  • Gouda Cheese Slices
  • Sauerkraut
  • Spicy mustard if desired
  • Beanitos tortilla chips

Instructions
 

  • Stack the corned beef, gouda cheese, and sauerkraut on the bread. I prefer to heat in oven until melted.
  • Add the spicy mustard and a side of Beanitos tortilla chips to complete.

Notes

This sandwich is Kaufmann 1 Diet (Kaufmann Phase I).  Pairing with Beanitos would make it Kaufmann 2 Diet (Kaufmann Phase II). Sauerkraut is a great source of probiotics and contribute to healthy gut flora!

Considering putting your children on a phase 1 diet but don’t know where to start?   Or maybe you are trying to get your kids off of cereal and need some healthier breakfast ideas?  These berry cream cheese crepes should do the trick.  When it comes to getting kids to eat phase 1 or even phase 2 we all know what a challenge it can be, especially when they had been eating junk food for most of their life.  We are not even there yet but we are always working on it.  Because of the cravings and addictions they have to sugar and processed foods we knew we had to take it slow and ease them into a healthier way of eating.  A few years ago I started taking all their not so healthy favorites and revamping them by turning them into something healthy that they could still get excited about.

These crepes are made with wholesome ingredients but sweet enough to where kids love them.  You can also top the crepes with some homemade whipping cream for some added sweetness and it would STILL be a phase one breakfast!

Berry Cream Cheese Crepes

These crepes are made with wholesome ingredients and sweet enough to where kids love them.
Course Breakfast, Desserts

Ingredients
  

  • CREPES:
  • 1/3 cup Almond milk (I haven't tried with coconut milk yet but bet it would be delicious)
  • 2 tbsp Beaten egg
  • 1/4 tsp Vanilla extract
  • 1/8 cup Tapioca flour
  • 1/8 cup Almond flour I used Bob's Red Mill
  • 1-1/2 tsp Xylitol
  • 1/4 tsp Baking powder
  • Dash salt
  • 2 tsp Butter
  • FILLING:
  • 2 oz Cream cheese softened
  • 3 tbsp Xylitol
  • 4 tsp Almond milk
  • 1/8 tsp Vanilla extract
  • 1/3 cup Fresh berries (blueberries, strawberries and raspberries)

Instructions
 

  • To make the filling, you must mix 2 oz. of cream cheese, 3 tbsp. xylitol, 4 tsp. almond milk and 1/8 tsp. vanilla extract in a medium size bowl and set aside.
  • To make the crepes, start with a medium size bowl and mix almond milk, 2 tablespoons of beaten egg, vanilla, tapioca flour, almond flour, xylitol, salt, and baking powder.
  • In a saucepan heat 1 tablespoon of butter on medium heat. Pour in crepe batter and let cook until most of the moisture is gone and it begins to turn golden brown. Be patient flipping as they are delicate and break easily. Cook on the other side for approximately 3-4 minutes until golden brown.
  • Add your cream cheese mixture and top with berries.
  • Fold into a roll and top with homemade whipped cream if desired.

Notes

Double the recipe to make more than 4 crepes.

Bacon Avocado Egg Salad and School Lunches from Around the World

I found the picture below on social media and found it both eye opening and fascinating.  Pictured below are school lunches from around the world in comparison to a typical American school lunch. Why do we feed our kids this way? It got me thinking about my son’s diet. Although his diet is MUCH better than it was and we’ve come a LONG way, there is still room for improvement. I have been letting him buy school lunch as the fight over packing his lunch was exhausting.  Well the fight is back on! It’s time to bump up his nutrition to another level. After a bit of negotiating we agreed he would pack lunch twice a week.  Hey it’s a good start.  Remember he was born eleven years ago, back when his mother was all junk food all the time.  I remember taking delight in feeding him cakes and sugary treats because I loved watching his little face would light up! Boy, I wonder if he sometimes misses his “old” mom.  I am happy to report that he’s actually excited about the change.  His dream is to become a professional football player so he’s willing to do (and eat) anything he has to achieve that goal. He has even asked me to become his personal nutritionist to help get him there. My reaction? I think we were in the car and on our way to the store picking out lunch foods within 15 minutes. A little overboard I know but I’ve been waiting for this day!

Here is our first packed lunch.  I’m so excited about this! Not only is it packed with protein from the eggs and yogurt, but the yogurt also contains probiotics, and the tomato (which may or may not end up in the school garbage can) supports heart health and is an excellent source of Vitamin C which can combat the formation of free radicals known to cause cancer.  His snack is a side of guacamole and Beanito chips, again some great healthy fat and protein from the avocado and the Beanitos are made from 100% navy beans (but they taste JUST like a corn chip).

I will be posting more lunch ideas as we work on this with a little trial and error (he’s a very picky eater).  If any of you have any good lunch ideas for kids I’d love to hear them!

Ingredients
  

  • 2 strips Cooked bacon
  • Tortilla wraps (make sure they are yeast free)
  • 2 Organic eggs
  • 1 Handful of spinach leaves
  • 1 Medium avocado
  • 1 Tomato
  • 1/4 cup Plain yogurt
  • 1 tbsp apple cider vinegar
  • 1 dash Tarragon
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Place eggs in a saucepan and cover with water. On medium heat bring eggs to a boil. Then cover and remove from heat and let sit for 10 minutes.
  • Take eggs out of water with a spoon and place in a bowl. Put eggs in the refrigerator for 20 minutes to cool.
  • While eggs are cooling fry your bacon in a saucepan until crispy.
  • Peel eggs under cold water.
  • In a bowl mix the eggs with yogurt, apple cider vinegar, tarragon, salt and pepper. Cut avocado into chunks and lightly toss with your egg salad.
  • Place egg salad on wrap. Add bacon and top with spinach and tomato if desired.

Pumpkin Cheesecake Roll… and A Trip To See Dr. Dennis

Sugar addicts – you will love this recipe and when it’s time for dessert you will not feel like you are missing out on a thing! Staying on course Thanksgiving Day just takes a bit of preparation and planning, but it will be well worth it.

If you are one of the lucky one’s that don’t have any sinus issues you can stop reading here.  To all of  you desperate sinuses suffers that I hear from weekly, keep reading… I have some news!  Doug Kaufmann (from Know The Cause) recently had Dr Dennis, an ENT from Atlanta on his show.  Turns out he is the same doctor who preformed my adenoidectomy/tonsillectomy back in 1999. After hearing him speak, I realized he is seemingly one of the only physicians that actually has an alternative to surgery and antibiotics!  He said people with chronic sinusitis are 9,000 times more allergic to mold/fungus (wow).  He has been doing research into the treatment of chronic sinusitis for more than 30 years and has created products which make our bodies less susceptible to the mold we are breathing in, giving your body a chance to fight the fungus.  This week I am flying to Atlanta for an appointment with him.  He will be my fifth and final opinion before giving into surgery #5.  Stay tuned for next week’s post and I’ll fill you in on all of the details. There may be hope for us all!

Pumpkin Cheesecake Roll

This pumpkin cheesecake roll contains no grains, sugar, or anything artificial added to it. 
Course Desserts

Ingredients
  

  • 3 Eggs separated
  • 2 cup Xylitol
  • 2/3 cup Canned pumpkin
  • 1/4 cup Almond flour I used Bob's Red Mill
  • 1/4 cup Coconut flour
  • 1/4 cup Tapioca flour
  • 1 tsp Baking soda
  • 1/2 tsp Cinnamon
  • 1/8 tsp Salt
  • 8 oz Cream cheese, softened
  • 2 tsp Butter (melted)
  • 3/4 tsp Vanilla extract

Instructions
 

  • Line a 15-in. x 10-in. x 1-in. baking pan with waxed paper. Grease the paper with coconut oil spray.
  • In a large bowl, beat egg yolks on high speed for about 30 seconds. Gradually add 1/2 cup xylitol and pumpkin, beating on high for about one minute.
  • In a small bowl, beat egg whites and slowly add remaining xylitol. Beat for 30 seconds.
  • Pour into egg yolk mixture. Combine the flour, baking soda, cinnamon and salt; add to your pumpkin mixture. Spread into prepared pan.
  • Bake at 375° for 12-15 minutes. Cool for 30 minutes.
  • Turn cake onto a kitchen towel and gently peel off waxed paper. Roll up cake in the towel jelly-roll style and leave for 10 minutes.
  • In a small bowl, beat the cream cheese, butter, xylitol and vanilla.
  • Unroll cake and spread filling evenly to within 1/2 in. of edges. Roll up again.
  • Wrap in wax paper and then again in aluminum foil and freeze until firm. Keep in the freezer and take out approximately 10 -20 minutes before cutting.

Guiltless Barbeque Pulled Pork Sandwich…& Sugar Addiction!

What I love most about running my blog (besides helping others) is that it helps keep me accountable.  Although eating this way has become a lifestyle and my passion, it doesn’t mean I don’t ever get tempted by my former pleasures.  I’d even go as far as to call them former addictions.  People laugh when I tell them “I can’t eat that, I am addicted to sugar”.  But sugar addiction is very real. I bet many of you remember the fascinating study they performed on rats?  When given the choice between sugar water or cocaine they went for the sugar every time!  Even the rats that were formally addicted to cocaine switched over to the sugar water.  Research shows sugar can be even more addicting than cocaine for humans as well as rats.   When we eat sugar there is an intense release of dopamine (one of our feel good chemicals) and as time goes by we need more and more sugar to get that same level of high. I believe it!  I have noticed that when I give into the temptation (as I did yesterday) there is no amount of sugar that seems to satisfy, which inevitably leads to a binge.  Maybe like other types of addicts, I too will always be one, which means even indulging once in a while is not an option for me.

Well today is a new day and instead of self loathing I think it’s time for some healing.  I will go back on the phase 1 diet for a week and keep my gratitude in the forefront.  I’m grateful I have this knowledge that I didn’t have just 7 or 8 years ago. I’m grateful for all the healing that has occurred in my body over the years, and I’m thankful for the 2nd and 3rd, and hundreds of chances that God gives us. Remember, faltering occasionally is not the definition of failure but giving up is!

Guiltless Barbeque Pulled Pork Sandwich

Try this quick and healthy Guiltless Barbeque Pulled Pork Sandwich recipe!
Course Main Dishes

Ingredients
  

  • 1 pkg Against the Grain Rolls (yeast, wheat, and sugar free)
  • 2 lbs Pork roast shoulder or butt
  • 1 bottle Barbeque Sauce This bbq sauce recipe is from Doug Kaufmann's book "Eating your way to good health"
  • 2 tbsp Butter (melted)
  • 2 tbsp Green bell pepper (chopped)
  • 1 cup Water
  • 1 cup Tomato juice
  • 2 tsp Mustard power
  • 1 tsp Salt
  • 1 tsp Celery seed
  • 2 tbsp Honey or stevia to taste
  • 2 tsp lemon juice
  • 1 pkg Bean tortilla chips

Instructions
 

  • Place pork and 1/2 cup of water in a crock pot. Cook on low for 8 hours or on high for 4 hours.
  • Once the pork is done it will be so tender you can split it with a fork. Remove the pork and place in a large bowl.
  • Add your homemade barbeque sauce and roughly pull the pork apart with a fork.
  • Serve on against the grain buns and top with coleslaw if desired.

Blackened Fish Tacos… and A Love Story

Today Bob and I are celebrating our ONE year wedding anniversary.  For those of you who don’t know the story.  Bob was married to my good friend Laura.   My family and Laura’s family grew up together in Bronx, NY and we all considered ourselves family.  I eventually moved to Florida as did Laura soon after.

In July of 2012 Laura passed away from Melanoma.  I’ll do my best to describe Laura but my words won’t do her justice.  She was the most generous, thoughtful person you could ever meet.  She was always thinking of others before herself.  Maybe the biggest example of this selflessness was what was happening behind the scenes before her passing.  She was so concerned about everyone being happy and living life to the fullest that she was already planning  who she thought would be a great fit for Bob.  She sat him down a week before she passed and told him that she had somebody she thought would be great for him (or could put up with him I’m not sure).  It was me.  Although he wanted nothing to do with the idea of women or dating, after a period of time Bob got the nerve to ask me out for coffee.  We became inseparable from that day forward and fell in love.

We will both be forever grateful to Laura for the newfound joy we both found after such a period of grief and sadness.  I know some of you can sense some irony in our story.  I’ll add to that by saying that Laura and I share the same birthday.  Also, our sons (who are best friends) also share the same birthday.

I will end by saying God truly has a plan for all of us and I thank God everyday that Bob was a part of my plan.  Tonight we will be celebrating our anniversary on the beach.  Reminiscing about our wedding day one year ago and enjoying our favorite meal,  fish tacos!  (I actually tied in the fish tacos, I bet you didn’t see that coming)!  Trust God and enjoy your life regardless of what season you are in.  You never know what incredible surprises are waiting for you just around the corner.

Blackened Fish Tacos

Try this quick and tasty Blackened Fish Taco recipe!
Course Main Dishes
Servings 5

Ingredients
  

Instructions
 

  • Sprinkle blackened seasoning on both sides of the fish..
  • Heat olive oil or coconut oil in a skillet or frying pan over med-high heat. Once the oil is hot (about 1-2 minutes). Place fish in pan and Cook for 4-5 minutes on each side
  • Preheat oven to 350 degrees. When fish is about 2 minutes away from being done, place tortillas in the oven and heat for 1-2 minutes.
  • Cut fish into bite size pieces and place in tortilla shells. Add desired toppings.

Notes

A quick note about the tortilla wraps - by now you have all heard me talk about Doug Kaufamann and his TV show Know The Cause (which was actually the catalyst in my changing my diet). Although he suggests eliminating most grains, flour tortillas in moderation are acceptable on his Kaufmann 2 Diet. I make sure they are also sugar, yeast, and preservative free.

Chocolate Strawberry Shake Recipe

If you are looking for a quick breakfast idea, this chocolate strawberry smoothie is a great option!  This recipe is also very kid-friendly and can be a fantastic breakfast for your child when school is back in session.  It’s packed with probiotics and enzymes and is Kaufmann diet friendly (low mold diet.)

Making this chocolate strawberry smoothie only requires a few ingredients but it’s packed with nutrition. Read on and I’ll show you how to make it.

What You Will Need to Make Chocolate Strawberry Smoothie

  • 1 single package (or serving scoop) of Garden of Life organic plant protein powder. Flavors come in smooth vanilla, smooth chocolate, smooth energy or almond butter (I used smooth chocolate for this recipe)
  • 6 ounces unsweetened almond milk
  • 1 cup of frozen or fresh strawberry’s (or berries of your choice)
  • 2 ounces coconut water

What’s Inside the Protein Powder

Strawberry Chocolate Shake

This recipe is very kid friendly and can be a fantastic breakfast for your child when school is back in session. Making this chocolate strawberry smoothie only requires a few ingredients but it's packed with nutrition.
Course Drinks

Ingredients
  

  • 1 scoop Single package or serving scoop of Garden of Life organic plant protein powder. Flavors come in smooth vanilla, smooth chocolate, smooth energy or almond butter (I used smooth chocolate for this recipe).
  • 6 oz Unsweetened almond milk
  • 1 cup Frozen or fresh strawberry’s or berries of your choice
  • 2 oz Coconut water

Instructions
 

  • Mix all ingredients in blender or Vitamix and ENJOY!

Notes

If you are following Doug Kaufmann's diet - AKA the Kaufmann diet this recipe would be Kaufmann friendly. This chocolate strawberry smoothie recipe has antifungal properties.

If you are following a low mold diet such as Doug Kaufmann’s diet, this sausage cheese omelette is a great Kaufmann 2 breakfast option. Note: Kaufmann 2 is also known as phase 2.

Why a Low Mold Diet?

I have a friend who’s child is allergic to so many foods and is constantly sick.  When I mention that going on a diet free of wheat (most grains actually), sugar, soy, peanuts, yeast, and corn people feel so overwhelmed they just give up and say it’s too hard.   These are foods typically high in mold.  For an in-depth at which foods are on a low mold diet, and which foods that kill mold in the body, read my article titled What Can I Eat.

Mold exposure can lead to disease as well as mimic many diseases such as cancer, chronic fatigue, thyroic disease and more.  To learn more read My Story.

Sausage Cheese Omelette Wrap

Not sure what to have for breakfast this morning?  How about a sausage and cheese omelette wrap?
Course Breakfast
Servings 2

Ingredients
  

  • Sausage (antibiotic, hormone, nitrate free)
  • 3 Organic eggs
  • Organic milk
  • Shredded cheddar or mozzarella cheese
  • Spinach
  • Tortilla wraps
  • Salt and Pepper

Instructions
 

  • Melt butter in a skillet or frying pan.
  • Beat 3 eggs with 2 tablespoons of milk.
  • Pour eggs in pan on medium heat and sprinkle with salt and pepper. When the egg no longer looks wet on top (see my picture at the top of this blog for reference) add your sausage and cheese and sprinkle with spinach.
  • Let cook additional 3-4 minutes before lifting one side of the egg with a spatula folding it over into a moon shape. Cut as desired and roll into the tortilla wrap. Enjoy!

Notes

Kaufmann 2 Diet (Kaufmann Phase II)
Flour tortilla wraps are eaten only in moderation on the phase II diet.
