Corn Free Nachos (Gluten Free)
I created this Corn Free Nachos recipe for my husband and I who used to love a cold beer and some nachos on a Friday night. This was of course back when I ate all things “junk” and would then scratch my head in confusion as to why I was chronically ill. Since starting the Kaufmann diet, I have learned that almost all of our former guilty pleasures can be re-created into a healthier and often times tastier version! However, no replacement has been found for the beer just yet.

Chili Recipe – This is what you will top your nachos with. My chili recipe also comes with a recipe for happiness. I hope you enjoy! Side note – boy, has my photography come a long way! When I look back at the old photos in this post, it makes me realize a re-shoot is in order!

Corn Free Nachos (Gluten Free)
Ingredients
- 1 Beanitos or Beanfield Brand Tortilla chips
- 1 Erin's Chili Recipe
- Yogurt cheese
- Jalapenos
- 1 jar Salsa
- Sour cream
Instructions
- Preheat oven to 350 degrees.
- Spray or wipe cookie sheet with coconut oil (I found a coconut non stick spray I love from Trader Joes).
- Spread corn free tortillas on cookie sheet and top with preheated chili and yogurt cheese.
- Bake on middle rack for about 8 minutes. Top with jalapeños, salsa, and sour cream.
