If you haven’t watched Netflix’s Live to 100 – Secrets of the blue zone, it really is fascinating. Something all the blue zones have in common around the world is surprisingly (or not so surprisingly) is that fact that they eat very little meat. I won’t spoil the rest of the commonalties in case you want to watch it, but I will share this blue zone inspired pasta fagioli soup recipe. I tweaked it a bit and added some more nutrition here and there and it truly turned out amazing. Enjoy!

(Video) How to Make Pasta Fagioli Like the Blue Zones
Erin PorterIngredients
- 3/4 Large onion chopped
- 2 can Cannellini Beans
- 2 28 oz cans Fire roasted tomatoes
- 1/4-1/2 cup Fresh Parsley chopped
- 6 Cloves Garlic
- 1/2 cup diced carrots
- 1 tsp Fennel
- 1 tsp Thyme
- 2 32 oz cartons Vegetable broth
- 2 can Coconut milk
- 3 tsp Salt
- 1/2 tsp Black Pepper
- Pasta of your choice Cook separately and add to soup a few minutes before serving
- 1/2 cup Pecorino cheese
Instructions
- See video for instructions and heat on stove top for 2 hours. Crockpot: cook on high for 2 hours.
