Come join myself and my teenage son as we make a delicious Vitamix Broccoli Cheese soup in under 7 minutes. He starts college this year so I am soaking up every moment! About the recipe: There is nothing easier than Vitamix recipes. My Vitamix was not given to me for free, and it was a bit on the expensive side. With that being said, it was one of the best purchases I ever made hands down! For two years I was on the fence about buying one. It was my interview with Supermodel Carol Alt that made me pull the trigger and buy one. Now, I would never want to live without it (as dramatic as that sounds!)
Carol told me she turned to a raw diet after dealing with chronic health issues for most of her life. Raw food helped her to regain her health. Although I don’t have intentions on going “raw”, she inspired me to eat more foods in their raw state. Blending real, raw food makes the process so easy. Carol’s advice to me was that all you need is a great blender, juicer, and dehydrator and you will be on well on your way. What You Need For Vitamix Broccoli Cheddar Soup Recipe
- 1 (13.5 ounce) can light coconut milk
- Head broccoli chopped (1 head)
- 1 bag shredded cheddar cheese
- Garlic Cloves (2)
- 2 tsp salt
- 2 tsp thyme
- ¼ onion chopped
- 1 (32 ounce) container chicken or bone broth
- ½ tsp black pepper
- 2 tsp parsley

Instructions On How To Make Vitamix Broccoli Cheddar Cheese Soup
For instruction see video. Note – for roasting the garlic and onion: Preheat oven to 425. Place on baking sheet and sprinkle onion and garlic with olive oil. Place in oven for about 10 minutes.
