Vanilla Cupcakes (Kaufmann Diet Friendly)

If you thought about following the Kaufmann diet or any candida or anti-mold diet, you probably never thought vanilla cupcakes would be on the menu!  In my video below, my son and I will show you how to make them and I’ll also share how Bob and I met, which I believe was divine intervention!

If you are following the Kaufmann diet or any anti-mold diet such as candida or keto, you may be wondering “Can You Recover from Mold?”  I wrote an ariticle about this last week as well as how long it takes for mold to get out of your system.  Below I have added a television interview I did on Know the Cause with Doug Kaufmann.  I discuss my decades of mold illness and recovery.

What You Will Need for Vanilla Cupcakes

Cupcakes

  • 6 tbs Butter
  • 1/2 cup + 2 tbsp xylitol or monk fruit
  • 2 Eggs
  • 1/2 cup Coconut milk
  • 1 tsp Vanilla
  • 1/2 cup Coconut flour
  • 1/4 cup Almond flour
  • 1/4 cup Tapioca flour
  • 1/2 tsp Salt
  • 1/4 tsp Baking powder
  • 1/8 Baking soda

Frosting

  • 1/2 cup Cocoa powder unsweetened
  • 1/2 cup Coconut cream
  • 1/2 cup Honey (or xylitol to keep sugar free)
  • 2 tbsp Organic salted butter
  • 1 tsp Vanilla

Instructions

Cupcakes

  • Preheat oven to 350 degrees
  • Place cupcake holders inside cupcake tray.
  • Mix all dry ingredients in a medium size bowl.
  • Mix all wet ingredients in a separate bowl.
  • Combine wet and dry ingredients.
  • Using a spoon fill the cup cake holders 3/4 way full.
  • Bake for approximately 20-25 minutes (or when toothpick comes out clean) Do NOT over bake

Frosting

  • Mix all ingredients well. Use less honey if you don’t like it very sweet.
  • Let cupcakes cool for 30 minutes before placing icing on them.

Note: These vanilla cupcakes would be considered fine to eat on Kaufmann 2, also referred to as Kaufmann Phase 2.  These are of course gluten free vanilla cupcakes.

Cauliflower Soup (Kaufmann Diet Friendly)

This cauliflower soup (Kaufmann diet friendly) recipe was sort of an accident.   We returned home from vacation tired and sick from airport and vending machine food.   Unbeknownst to us, the airport would be our home for the next eight hours due to a delay.   This particular airport was so small there were no restaurants inside, only a vending machine and bodega type store.  So we fueled up on plenty to ease the boredom!

The next morning,  exhausted from the trip, the last thing I wanted to do was go food shopping.  I scouted the fridge and cupboards and I saw a head of cauliflower, mozzarella cheese, and chicken bone broth.  That was going to have to be dinner since I was set on staying in and relaxing.   I knew it would taste much like broccoli cheese soup (which we love), so I wasn’t worried.  Everybody loved it!

What You Will Need For Cauliflower Soup

  • 1 Head cauliflower
  • 13.5 oz Light coconut milk (I use 365 – whole foods brand)
  • 1 Bag shredded light moisture mozzarella cheese
  • 32 oz Chicken broth (Pacific brand now has bone broth which I love to use or any yeast free brand)
  • 2 cloves Garlic
  • 2 tsp Salt
  • ¼ tsp Thyme
  • ¼ Onion chopped
  • ¼ tsp Black pepper
  • ¼ tsp Parsley
  • ¼ cup Flour (I use Namaste Perfect Flour Blend, but you could use cassava flour or GF flour of your choice)
  • 2 tbsp Butter
  • 1-2 tbsp Olive oil

Instructions

  • In a large frying pan melt 2 tbsp of butter then add 1-2 tbsp of olive oil.
  • Chop the garlic and onion in a food processor then saute in butter and 1 -2 tablespoon of olive oil.
  • Stir occasionally.
  • Once garlic and onion are translucent place in a crock pot.
  • Add other ingredients and cook on low for 6-7 hours or on high for 3-4 hours. Enjoy!

This recipe would be considered a Kaufmann 2 recipe.  Also known as Kaufmann Phase 2.

Creamy Cauliflower Cheese Soup

Mac & Cheese (Kaufmann Diet Friendly)

I loved how my white queso dip recipe turned out, so I kept imagining it tossed with a gluten-free pasta. This Mac & Cheese made with chick pea pasta was even better than I expected.   If you are like me, and nachos are one of your favorite comfort foods, then I think you will enjoy this recipe.  If you are following the Kaufmann Diet, this would be considered just fine on Kaufmann 2 or Phase 2.

Forget the unhealthy boxed version of mac and cheese and join me as I show you how to make chickpea mac and cheese.  This recipe has just the right amount of spice and the added tomatoes and jalapenos just take it to another level. 

While the boxed version of mac and cheese has almost no nutritional value, this version will provide you with a substantial amount of protein and fiber from the chickpeas, (it also has fewer carbs than regular pasta) as well digestive benefits from both the chick peas and the coconut milk.  If you like cherry tomatoes, add in plenty for even more of a nutritional boost.

What You Will Need To Make Chickpea Mac and Cheese

  • 1 box of chick pea pasta or any gluten free pasta of your choice.
  • 3/4 cup organic shredded mozzarella cheese – mozzarella cheese helps keep this a low calorie queso
  • 3/4 cup organic shredded gouda cheese
  • 1/4 cup coconut milk – using light coconut milk will make this a low calorie queso
  • 1 tbsp grass fed butter
  • 1 tbsp good quality salsa – I used 365 hatch chili salsa
  • 1/2 tomato chopped (for garnish)
  • 2 tsp or more cilantro – save some to sprinkle on top
  • Dash of garlic powder
  • 3-4 drops of Cholula hot sauce – Don’t skip this step, it gives it great flavor and don’t worry this does not make it too spicy
  • Pickled jalapenos jalapeno peppers

How To Get Started

Boil water and cook pasta as directed on the box. While pasta is cooking you can start on the white queso.  Directions below.

 

Instructions For Making Easy White Queso

  • Melt butter in saucepan
  • Add coconut milk and cheese and melt on medium heat
  • Add all other ingredients.
  • Top with cilantro, tomato, and jalapeno
  • Feeds two people. Double recipe for more.
  • Pairs perfectly with corn free tortilla chips or toss with your favorite gluten free pasta for mac and cheese

Putting it all Together

Simply toss the pasta and queso cheese together and top with cilantro, tomato, and jalapeno.  This recipe is just fine if you are following Doug Kaufmann’s diet and would be considered Kaufmann 2 also known as Phase 2.  For more Kaufmann diet recipes, check out my recipe section.

Chick Pea Mac and Cheese

Forget the boring boxed version of mac and cheese and join me as I show you how to make chick pea mac and cheese.  This recipe has just the right amount of spice and the added tomatoes and jalapeños just take it to another level. 
Course Main Dishes

Ingredients
  

  • 3/4 box Chick pea pasta
  • Queso (see recipe for queso here)
  • 1 Tomato (diced for topping)
  • Jalapeños (topping to taste)
  • Black pepper (to taste)

Instructions
 

  • Boil water and cook pasta for 10 minutes.
  • While pasta is cooking make the queso dip recipe (see link in notes) in a medium saucepan.
  • Drain and rinse paste then add it back to saucepan.
  • Once queso has melted, pour on pasta and mix well.
  • Serve with jalapeños, black pepper and tomatoes on top.

Do Valencia Peanuts Have Less Mold (For the Peanut Lovers)

Why do we care about Valencia peanuts?  If you searched “Do Valencia peanuts have less mold” than you already have an inkling about how just how moldy peanuts notoriously are.  They not only contain mold, but the poisonous mycotoxin you are eating with the mold is called aflatoxin.  Alfatoxin comes from aspergillus mold and according to cancer.org is group 1 carcinogen.  That means aflatoxin is a known human carcinogen.  So this is where Valencia peanuts enter the picture.  Do Valencia peanuts have less mold, and is there a such thing as mold free peanut butter?

Valencia peanuts are mostly grown in New Mexico and because the climate is dry and they are grown in bushes above ground, they are less susceptible to aflatoxin.  However, mold can grow on any peanut that is not stored properly or when exposed to moisture.

Read on and I’ll share some interesting facts about peanuts as well as what brand of Valencia peanut butter is best and why Valencia peanuts have less mold.

Alfatoxins Explained

As mentioned above, aflatoxin is the mycotoxin (mold poison) of the mold Aspergillus.  Unfortunately, they can be found in our food supply and especially in corn, wheat, and peanuts.  The mold mostly forms due to wet and warm growing conditions and/or bad storing practices.

Many types of mold can grow on our food supply but Aspergillus really came to our attention due to its carcinogenic, toxic nature.  Aspergillus also become front and center in the 60s when over 100,000 turkeys mysteriously died.  The cause turned out to be Brazilian groundnut meal affected by Aspergillus flavus.

Are Valencia Peanuts Aflatoxin Free?

As I stated above, Valencia peanuts are generally known to have lower levels of aflatoxin compared to other peanuts. However, it is not guaranteed that Valencia peanuts are completely aflatoxin-free, as the presence of aflatoxin can depend on various factors such as climate, storage conditions, and processing methods.

Aflatoxins are harmful to human health.  They not only cause cancer but can also cause systemic fungal infections.  Aspergillus, the mold responsible for aflatoxins, is also sometimes found in people who have chronic sinus infections.  Check out my article titled Sinus Infections from Mold (From Someone Who Had 4 Sinus Surgeries).

Does Organic Peanut Butter Have Mold?

Organic peanut butter, like any food, has the potential to contain mold if it has not been stored properly or has been exposed to moisture. However, reputable manufacturers of organic peanut butter take precautions to prevent mold growth, such as using high-quality peanuts, storing them in dry conditions.  Make sure you buy a certified organic brand with Valencia being the best choice.

Once you get your peanuts home, store them in a cool, dry place and to consume them before the expiration date. If you notice any signs of mold on your peanuts, such as green or blue patches or a musty smell, discard them.

What Nuts Have the Least Mold?

In general, almonds and hazelnuts have been found to have lower levels of aflatoxins compared to peanuts, pistachios, and walnuts. However, it is important to note that even within a particular type of nut, there can be variations in aflatoxin levels.

Which Peanut Butter is Best?

I don’t eat peanut butter too often but when I do, it’s always either Trader Joe’s Organic Crunchy Salted Valencia Brand or Pacific Beach organic Valencia Peanut butter.

Peanuts Often Contain Mold and Cause Allergies

Remember that people who have life-threatening allergies to peanuts should not eat any type of peanut or peanut butter.  Some are of the thought that it’s the mold poisons itself that cause the allergic reaction more-so than the immune reaction to the food.  Because all nuts (and legumes such as peanuts) could possibly contain mycotoxins, it’s safer to not eat any at all when you have serious allergies.

What You Need For Salsa Verde Chicken Tacos

Directions

Place chicken breast in crockpot and pour salsa verde over chicken.  Cook on high for 4 hours or low for 8 hours.  The chicken will be so tender you call pull it with a fork.  Bake shells according to directions on the back and fill taco shells with desired toppings.

This recipe would be considered Kaufmann 2 also known as Kaufmann Phase 2.  For more phase 2 dinner recipes check out my recipe section.

Salsa Verde Chicken Tacos (Kaufmann Diet Friendly)

Easy Crock pot salsa verde chicken taco recipe.
Course Main Dishes

Ingredients
  

  • 2-3 Organic Chicken Breasts
  • 1 jar Salsa Verde
  • Siete Grain Free Taco Shells
  • Cheddar Cheese
  • Sour Cream (optional)
  • Lettuce (optional)

Instructions
 

  • Place chicken breast in crockpot and cover with the salsa verde.
  • Cook on high for 4 hours or on low for 6-8 hours.
  • Heat taco shells according to directions.
  • Place chicken in taco shells and top with desired toppings.

  • Salt and pepper
  • Garlic powder
  • Parsley

  • Gluten free flour
  • Butter (organic)
  • Olive oil

Instructions For Making Meatball Soup

  • Preheat oven to 400 degrees.
  • Chop onion and garlic in food processor then sauté in 2 tbsp butter and 1-2 tbsp olive oil. Stir occasionally. Toss 1 tbsp of sautéed onion and garlic mixture in with ground beef. Add a dash of parsley, fennel, salt, pepper, parmesan cheese to ground beef.
  • Form meat mixture into meatballs and place on a cookie sheet that has been brushed with olive oil.
  • Brown meatballs for 15 minutes in oven. In crockpot add sautéed onion garlic and all other ingredients listed below in the recipe bar.  Use a frother to blend flour in crockpot.
  • Once meatballs are done browning add to crock pot.
  •  Cook on low for 5-6 hours or on high for 3-4.

Ingredients
  

Meatballs

  • 1 lb Ground beef (organic grass fed)

  • Dash of fennel
  • Dash of salt
  • Dash of black pepper
  • Parmesan cheese
  • Chopped onion
  • Garlic

  • 1 Bag of carrots diced
  • 3 Garlic cloves
  • 1/4 Onion chopped
  • Hand full of chopped spinach
  • 32 oz Bone broth
  • 13.5 oz Light coconut milk
  • 2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Thyme
  • 1/2 tsp Garlic powder
  • 1/4 cup Flour (I used Namaste Perfect Flour Blend which is wheat/gluten free)
  • 2 tbsp Butter
  • 1 tbsp Olive oil

Instructions
 

  • Preheat oven to 400 degrees.
  • Chop the garlic and onion in a food processor.
  • Sauté in 2 tbsp butter and 1-2 tbsp of olive oil. Stir occasionally.
  • Toss about 1 tbsp of the sautéed onion and garlic in with your ground beef.
  • Add all other seasons to ground beef.
  • Form into meatballs and place on a cookie sheet that has been brushed with olive oil.

Tomatoes Caprese (Kaufmann Diet Friendly)

These Oven Fried Green Tomatoes are grain free, gluten-free, and are Kaufmann diet friendly.  If you are following Doug Kaufmann‘s diet this would be just fine on the Phase 2, also known as Kaufmann 2.  If you are not sure what the Kaufmann diet is, I have a full explanation in my article titled What Can I Eat as well as my television interview on Know the Cause discussing my years of chronic illness due to mold exposure.

What You Need For Tomatoes Caprese

  • 1/2 cup almond flour
  • 2 large green tomatoes
  • 1/2 cup coconut flour
  • 1 cup tapioca flour
  • 1 egg
  • 1/4 -1/2 cup coconut milk (or any milk of your choice)
  • mozzarella cheese in the shape of a ball you can slice
  • salt

  • Place all flours and salt and pepper and mix in a separate bowl.
  • Cut the green tomatoes about 1/4 inch thick.
  • Fully submerge tomato slice in the egg, then in the flour, then once again into the egg mixture and flour for a second time.
  • Place parchment paper over a baking sheet and grease the paper well. Add more salt and pepper before placing in the oven.
  • Bake for 20 minutes and turn them over half way through baking. You can also fry these in coconut oil. I have made them this way as well and it’s delicious.
  • Slice cheese in 1/4 inch slices and place between tomatoes AFTER they come out of the oven. My husband loves to put either a sugar free balsamic glaze or pimento cheese spread on his. Enjoy!

  • Mozzarella cheese (in the shape of a ball to slice)

How to Eat More Vegetables On the Kaufmann Diet

It seemed only natural to do a post regarding ways to eat more fruits and vegetables after my interviews with Supermodel Carol Alt, Joe Cross and Tommy Rosa.  We all, at some point end up changing our eating habits when our health starts to slip away.  In my case, I turned to the Kaufmann diet.

When model Carol Alt became ill during the height of her career, she turned to a mostly raw diet to regain her health.  Tommy Rosa on the other hand, was involved in a hit-and-run accident and had a near death experience.  During this time, he believes he went to heaven and met Jesus, who gave him health revelations to live by.  One of them was eating clean, vibrant foods found in nature.  And, In my video interview with Joe Cross from the movie Fat, Sick, and Nearly Dead, Joe explains how he juiced his way back to health after dealing with the side effects of a dreadful autoimmune disease.

If you have time to revisit those interviews above, they are enlightening and inspiring.  Carol is the reason I bought my first Vitamix, and because of Joe, juicing became a habit of mine.  My mentor Doug Kaufmann helped me realize my long list of health problems were from mold exposure.  Whatever the reason you are here, diet is a crucial part of recovering from health issues.  In the video below I will share how I squeeze in large quantifies of vegetables in my teenage son’s breakfast.  If you are looking for a way to eat more vegetables on the Kaufmann diet, watch my video below as I make my son and I our daily juice.

3 Appliances That Make It Easy To Eat More Fruits And Vegetables

Carol Alt suggests these 3 appliances if you want to give a raw diet a try or if you just want to get in more fruits and vegetables.  I completely agree and I would not be able to consume this much vegetables without the help of these great tools below!

  1. Blender– My husband bought me a Vitamix last year (no I did not get it sent to me for free.)  They are pricey, but let me tell you, it is worth every penny!  Recently in a podcast I was asked if my house was burning down what would I grab and my response was “my Vitamix.”  A Vitamix allows you to blend whole fruits and vegetables with the skin into a liquid that is not thick or gritty.  This option retains the fiber.  The powerful blade allows you to make smooth nut butters, as well as hot soups (I share a video below of my teenage son and I making broccoli and cheese soup).  You can also make “nice cream”.  I will be doing a video shortly on how to make this dairy free, healthy dessert.
  2. Juicer – I use the Nama cold press juicer.  This is the brand Joe Cross uses.
  3. Dehydrator – The sky is the limit of what you can make in a dehydrator.  There is anything from dried fruit, fruit roll ups, and Carol Alts favorite, cauliflower popcorn (which I made and loved it.)  It really does taste like popcorn.

Chocolate Nut Crust (Kaufmann Diet Friendly)

This no bake chocolate nut crust takes less than 3 minutes to make and if you are following the Kaufmann diet, it would be considered Kaufmann 2 friendly.  This chocolate nut crust is so versatile, lately I have been filling the crust with sugar free puddings and I also use it for my almond butter pie recipe.  For those of you that are new to Doug Kaufmann’s diet, it focuses on starving out pathogens such as yeast and candida, therefore, it’s a diet low in sugar and carbs.

Ingredients for Chocolate Nut Crust

  • 1 cup walnuts
  • 1 cup pecans
  • 2 tablespoons melted butter
  • 1 tablespoon maple syrup (plus 1 tsp more)
  • 1 tablespoon organic cocoa powder
  • 1 teaspoon vanilla
  • Dash salt

Instructions

  • Blend all crust ingredients in a powerful blender such as the Vitamix.
  • Keep the dough somewhat chunky with nuts and not completely blended.
  • Place in pie pan.

Ingredients
  

  • 1 cup Walnuts

Instructions
 

  • Place all ingredients in a powerful blender and mix well.
  • Place in pie dish and mold with hands.

Chocolate Brownies (Kaufmann Diet Friendly)

These Kaufmann diet friendly brownies make it hard to believe you have just given up wheat and sugar.  When I realized my 20 year sinus infection was due to mold and not just bacteria, I knew I was going to have to make a life change because all the surgeries and antibiotics in the world were not helping!  I was going to have to change my diet to starve out the infection.  Many recipes were born from this change of diet and I hope you enjoy them as much as we did.

Fudge Pan Brownies

Note: I have tried making them in both in a glass baking dish and in a metal pan and hands down it comes out better in the cake pan.  The brownies get slightly crisped edges and they are so SO moist!  I got the inspiration for these brownies from a fantastic cookie recipe over at eating with purpose.  I tweaked it a bit and these fantastic brownies were born.

What You Will Need for Kaufmann Diet Friendly Brownies

  • 1 cup almond butter
  • 2 organic eggs
  • 3/4 cup xylitol
  • 1 tsp vanilla extract
  • ½ tsp apple cider vinegar
  • ¼ cup unsweetened cocoa powder
  • 2 tbsp tapioca flour or other Kaufmann diet approved flour
  • ½ tsp sea salt
  • ½ tsp baking soda

Instructions

  • Preheat the oven to 350 degrees.
  • Spray TWO square or round metal cake pans with either a non-stick butter or coconut oil spray.
  • In a medium size bowl beat the eggs then add the almond butter, vanilla, and the apple cider vinegar.
  • Add xylitol, coco powder, flour, salt and baking soda and mix well.
  • Place 1/2 of the dough in each pan and spread it out until it’s even. This will take a little work as the dough is very sticky but if you use a rubber spatula dipped in water, this makes it much easier.
  • Bake for 10 minutes. Do no overcook. Do not be concerned if the center looks too moist. Once they cool in the refrigerator for 2-3 hours they will be perfectly moist (but not too moist) and chewy. I keep the brownie in the pans and store it in the refrigerator covered with plastic wrap. It’s doesn’t stick around long in my house anyway!

Why I Started The Kaufmann Diet

Below is my interview on Know the Cause with Doug Kaufmann.  If you have any health issues that don’t get better with conventional medicine, then mold may be the reason.   I talk about my decades long battle with chronic illness until I found my “cause.”

Kaufmann 2 Diet (Kaufmann Phase II)
Notes – apple cider vinegar has many health benefits. ACV contains Malic acid which exhibits anti-fungal activity. There are also claims it reduces pain associated with fibromyalgia. Drinking apple cider vinegar has been linked to improved control of blood sugar, heart health, and may even aid in cancer prevention.
Almond butter – contains calcium, copper, vitamin E and magnesium to name a few. Some health benefits of almonds include improved cholesterol levels to combat cardiovascular disease, they aid in keeping the nervous system functioning properly as well as keeping bones strong and healthy.
