Stuffed Cabbage (Kaufmann Diet Friendly)

My stuffed cabbage is a great Kaufmann diet dinner recipe as it’s both savory and hearty.   Believe me it will not make you feel deprived.  If you are not sure what the Kaufmann diet is, it’s a diet similar to keto in which you are consuming less sugar and carbs.  The Kaufmann diet is a way of starving pathogens such as mold and yeast, which is crucial for those suffering from candida or fungal infections.  For more information on the health issues that lead me to this diet, feel free to read my story and watch my interview below with Doug Kaufmann.


Beef and Quinoa Stuffed Cabbage

Try this delicious beef & quinoa stuffed cabbage!
Course Main Dishes

Ingredients
  

  • 1/2 lb Organic grass fed beef
  • 1 Head cabbage
  • Quinoa (I used Suzie's quinoa in a pouch out of convenience. The only ingredients are quinoa, olive oil, and sea salt.)
  • 1/4 cup Chicken broth
  • 1 Egg
  • 2 cloves Garlic diced
  • 1/4 Yellow onion diced
  • 2 tbs Worcestershire sauce (I used Annie's organic)
  • 2 tbs Honey (or xylitol if you are cutting out all sugar)
  • 8 oz Tomato sauce (double if you like extra sauce)
  • 1 tbs Arrowroot powder
  • 2 tsp Salt
  • 1 tsp Pepper

Instructions
 

  • Chop onion and garlic and sauté in medium saucepan with olive oil over medium heat for about 5 minutes then set aside.
  • Boil water in large pot and submerge about 10-15 cabbage leaves for 2 minutes, just enough time to get them soft.
  • Remove cabbage leaves from water and set leaves in a strainer and set aside.
  • Lightly beat the egg and combine meat, quinoa, onion, garlic, salt, pepper, and chicken broth. Mix well.
  • In a small bowl combine your sauce - tomato sauce, Worcestershire sauce, and honey or xylitol. and just a pinch of sea salt.
  • Taking one leaf at a time, place meat/quinoa mixture in the middle of the leaf then role up and place seam down in the crockpot.
  • Once all stuffed cabbage is in crockpot, pour sauce over cabbage and cook on high for 4 hours, or low for 8 hours. Enjoy!

Roasted Tomatoes With Pesto (Kaufmann Diet Friendly)

We made these roasted tomatoes with pesto over a bed of quinoa and brown rice for lunch last week.  Watch my video below and I’ll show you how easy it is to make.

 

What You Will Need For Roasted Tomatoes

  • 4-6 roma tomatoes
  • 1/4 cup olive oil
  • 1 tablespoon jarred minced garlic
  • 1/4 teaspoon red pepper flakes – more if you like spicy
  • fresh basil
  • 3/4 tsp salt (sprinkle more on top once roasted to desired taste)
  • 1/2 teaspoon black pepper
  • shaved parmesan for the top (optional)

 

Instructions

  • Cut Roma tomatoes in half
  • Toss with all ingredients listed
  • Roast at 400 degrees for 30 minutes.
  • Top with pesto sauce and parmesan shavings (optional if dairy free)

If you are following the Kaufmann diet, this roasted tomato recipe would be considered Kaufmann diet friendly.  Specifically Kaufmann 2, formally known as Kaufmann phase 2.  The reason this roasted tomato recipe is considered phase 2 is because of the parmesan in the pesto sauce as well as the brown rice.  If you omit those ingredients this would be a Kaufmann 1 or phase 1 recipe.

Healthy Cream Cheese Frosting (Kaufmann 1 Friendly)

This Kaufmann 1 diet friendly healthy cream cheese frosting proves how easy it is to go sugar free.  You can whip this together in less than 3 minutes!

All you need is 5 ingredients and you are on your way to making this easy cream cheese frosting!

What You Will Need To Make Healthy Cream Cheese Frosting

  • 4 oz of cream cheese
  • 1 tbsp heavy cream (maybe you could use coconut milk instead but I haven’t tried it)
  • 1 tsp vanilla extract
  • 2 tbsp organic butter softened
  • 1/4 cup powdered monk fruit (must be powdered)

Instructions

Add all ingredients to a bowl and blend with a mixer until fully combined.

Which Sugar Free Substitutes Are Best?

Xylitol, monk fruit and Stevia are all great choices if you are on either the Kaufmann diet or a keto diet.  These sugar substitutes will not feed candida and yeast and all have a low glycemic index.  That is what makes this recipe a healthy cream cheese frosting.

Why Do I Eat A Kaufmann Diet?

The Kaufmann diet is very similar to the candida or Keto diet in which you are avoiding sugar and high carbohydrates.  In my case, and for most people that try the Kaufmann diet, it’s because this particular way of eat starves pathogens.  In particular mold and yeast like candida.  Both are linked to illnesses such as chronic sinus infections, chronic fatigue, fibromyalgia, allergies, co-infections such as chronic Epstein Barr virus and even cancer.

Naked Nutrition Chocolate Shake

Sometimes companies will approach me to try their products and 99% of the time I have to turn them down.  I don’t want to eat or put things on my body that have preservatives, toxins, or artificial anything.  This naked nutrition chocolate shake (naked shake) was different.  When I saw that most of their products have only 3 ingredients, I was curious.   Then I noticed one of the ingredients was the powerful antifungal MCT oil. That’s when I said, “Sure, I will absolutely try it!”

MCT oil is a type of saturated fat found in coconut oil or palm kernel oil and has been shown to have antifungal and antimicrobial effects.  Read on and I’ll show you how I make the shake and how easy it is to add (and hide) fresh vegetables, which go completely unnoticed in the shake by our kids.

Ham & Egg Breakfast Cups (Kaufmann Diet Friendly)

Breakfast may be one of the easiest recipes when it comes to figuring out what to eat on the Kaufmann diet.  These ham & egg breakfast cups take about five minutes to put together, then can be stored in Tupperware until ready to eat.

What You Will Need for Ham & Egg Cups

  • ham slices (I use Applegate brand – free of hormones and antibiotics)
  • organic eggs
  • shredded mozzarella cheese
  • salt
  • pepper
  • garlic powder

Instructions

  • Preheat oven to 400 degrees.
  • Lightly grease muffin pan and fill each with a slice of ham.
  • Crack egg into the middle of the ham in each muffin circle.
  • Sprinkle each with salt, pepper, shredded mozzarella and garlic salt. B
  • Bake for about 15 minutes or until knife comes out clean when stuck in center of egg.
  • When ready to eat, pop in the microwave for about 10 seconds!

Bacon Egg & Sausage Cups (Kaufmann Diet Friendly)

Breakfast is easy if you are following the Kaufmann diet.  These bacon egg & Sausage cups take about minutes to throw together.  Bakes in just 15 minutes, then just store them away until you’re ready to eat!

What You Will Need For This Kaufmann 2 Breakfast Recipe

  • 6 organic eggs
  • 1 scallion (diced)
  • 1/2 cup chopped spinach
  • 6 slices bacon (cooked and crumbled)
  • 1 chorizo sausage (I buy the pre-cooked and cut into small pieces)
  • 1/4 cup shredded mozzarella cheese (optional)
  • dash of salt, black pepper, and garlic powder

Instructions for Bacon Egg & Sausage Cups

  • Preheat oven to 350.
  • Lightly grease a muffin pan.
  • In a medium bowl mix all ingredients
  • Poor mixture into muffin pan and fill almost to the top.
  • Sprinkle salt, pepper, and garlic powder on top.
  • Bake for 13-15 minutes or until a knife inserted into the center of “muffin” is clean.
  • Makes 8 breakfast cups. Store in the refrigerator in airtight Tupperware or a zip lock bag.

If you are following the Kaufmann diet and are looking for some Kaufmann 1 dessert ideas like these lemon bites I have you covered.  I started the Kaufmann diet over a decade ago after the devastating effects black mold had on my health.  Below, I will also share a television interview on Know the Cause with Doug Kaufmann explaining why I follow his diet.

As a general rule, all you need to make any sugar and gluten free dessert including these lemon bites, is to have a great gluten free flour alternative on hand, as well as a sugar free healthy sweetener.

What You Need To Make Sugar Free Lemon Bites

Crust

  • 1 cup tapioca flour
  • ¾ cup almond flour (I used Bob’s red mill)
  • 1 stick grass fed butter (softened)
  • ½ cup monk fruit or xylitol
  • ¼ tsp vanilla extract
  • dash of salt

Lemon Filling

  • 3 lemons
  • 4 eggs
  • ¼ flour (1/8 cup tapioca flour and ⅛ cup almond flour)
  • ½ cup monk fruit or xylitol

How To Make Gluten and Sugar Free Lemon Bites

  • Preheat oven to 350 degrees.
  • Mix all ingredients for CRUST and mix well until you form a dough.
  • Place dough in a round or circular oven safe dish. (No need to grease the dish due to the butter)
  • Pat down until the dish is covered with the crust. Bake crust for 10 minutes.
  • In a medium size bowl zest one lemon and add the juice of all 3 lemons, then add remaining lemon filling ingredients mentioned above.
  • Once crust has baked for 10 minutes pour lemon filling on top of crust and bake for 20 minutes. Filling will stiffen once cooled.
  • Cool in refrigerator for a least one hour before cutting into circles with a cookie cutter or you can simply cut into squares.
  • Top with sugar free powdered sugar if desired.  Powdered Monk Fruit is a great choice.
  • This recipe is Kaufmann Diet 1 (phase 1) friendly as well as keto friendly

How to Make Almond Butter Pie (Kaufmann Diet Friendly)

This almond butter pie is proof that it’s not that hard to still enjoy dessert when giving up sugar and gluten!  This pie is a no bake, so it’s ready in minutes and is also Kaufmann diet friendly.  If you are not sure what the Kaufmann diet is (diet created by Doug Kaufmann) here is the Kaufmann diet explained.  This almond butter pie recipe would be fine for the Kaufmann diet phase 2.

What You Will Need For Chocolate Nut Crust

1 cup walnuts

1 cup pecans

2 tablespoons melted butter

1 tablespoon maple syrup (plus 1 tsp more)

1 tablespoon organic cocoa powder

1 teaspoon vanilla

Dash salt

What You Will Need For Almond Butter Pie Filling

1 cup almond butter

1 1/2 cups heavy whipping cream

2 tablespoons maple syrup (taste filling and add a bit more if you would like it sweeter)

1 teaspoon vanilla

Lily’s Chocolate Chips for drizzle (they are sweetened with stevia)

Whipped cream for top (optional)  I thought the whipped cream kicked it up a notch!

Instructions

Blend all crust ingredients as seen in video above and place in pie pan.  Mix all pie filling ingredients and cover crust.  Melt chocolate chips and decorate top of pie.  Place in refrigerator.  Top with Whipped cream if desired.

What is the Purpose of the Kaufmann Diet?

The purpose of the Kaufmann diet is to starve pathogens, candida and fungus in particularly.  If you eat the Standard American Diet, have taken more than your share of antibiotics or have lived or worked in a structure that has had a mold problem, your illness could be caused by mold and candida.

  • Whipped cream for top (optional for topping)

Instructions
 

Pie Crust Instructions

  • Add all pie crust ingredients into a blender.
  • Blend until you get a thick and chunky consistency.
  • Place mixture into pie pan and mold with hands.

Pie Filling Instructions

  • Add all pie filling ingredients into a blender, except chocolate chips and whipped cream.
  • Blend until smooth.
  • Pour into pie pan and even out with spoon.
  • Melt the chocolate chips and drizzle on top of pie.
  • Add whipped cream on top if desired.

Healthy Hot Chocolate (Kaufmann Diet Friendly)

  • 1 tbsp coco powder – I used Equal Exchange Baking Cocoa (it does not contain sugar)
  • ½ tsp vanilla extract or flavor
  • ½ tbsp coconut oil
  • 4½ tsp xylitol
  • Pinch of salt
  • Blender of any kind or a frother will do as well.
  • Don’t skip the final step which is to mix this in a bullet or any blender. Makes one serving. Double the recipe for two.

Kaufmann Diet Friendly

If you are following the Kaufmann Diet, this recipe would be considered Kaufmann 1.  Previously known as Kaufmann Phase 1.  Since sugar is off limits on Kaufmann 1, this makes for a nice sweet treat or even a good Kaufmann 1 dessert choice to knock out a sweet tooth.  See my recipe section for more Kaufmann diet drinks and Kaufmann diet recipes.

Instructions

  • Heat all ingredient in a saucepan on medium heat until hot. The coco powder does not completely dissolve so here is my favorite part, once the mixture is hot, pour it into a bullet or a blender for 5 seconds. This makes the drink so frothy and it’s mixed perfectly! Don’t leave out this last step.
  • Use a frother if you do not have a blender.  They are cheap and such a wonderful addition to your kitchen appliances.

Healthy Hot Chocolate

Ditch that prepackaged powdered stuff and try this quick and healthy creamy hot chocolate!
Course Drinks

Equipment

  • 1 Nutri bullet or a blender

Ingredients
  

  • 1 cup Light coconut milk
  • 1 tbsp Coco powder (I used Equal Exchange Baking Cocoa, it does not contain sugar)
  • 1/2 tsp Vanilla extract
  • 1/2 tbsp Coconut oil
  • 4 1/2 tsp Xylitol
  • pinch Salt

UPDATE: I have since bought a "frother" they are cheap and quick so I no longer do the step above using the bullet. If you don't have one they are a fantastic addition in the kitchen!
