Taco “Pasta” (Kaufmann Diet Friendly)
Yep, another chickpea pasta recipe! This time a taco pasta recipe. I bought a case of chickpea pasta recently so I apologize ahead of time for all the chickpea pasta recipes coming your way! You can tell we have kids in the house by some of these recipes (it looks a bit like hamburger helper). This is actually a nutritionally solid meal. I added some fire roasted tomatoes and grilled red pepper to make sure there were veggies in there. We paired this with a kale Caesar salad.
What You Will Need For Kaufmann friendly Taco Pasta
- 1 Box Chick Pea Pasta
- 1 lb Grass fed beef
- Taco Seasoning (I used Wick Fowlers, it contains no sugar, yeast, or anything artificial)
- 1 Can fire roasted tomatoes
- 1-2 Red bell pepper (roasted – place in oven at 350 degrees for 15-20 minutes in a glass container)
- 1 cup Low moisture mozzarella cheese
- 3 tbsp Salsa (or more of good quality salsa – no sugar, preservatives, etc)
- Salt (to taste)
- Black pepper (to taste)
- Sour cream (or plain yogurt to top)
- Jalapeños (for the top)
Instructions
- Cook pasta according to instructions.
- While pasta is cooking brown ground beef in a large skillet on medium heat.
- Once brown add taco seasoning and all other ingredients except toppings.
- Drain pasta and add to the beef mixture in the skillet.
- Add toppings and enjoy!
This recipe would be fine if you are following Doug Kaufmann’s diet. It would be considered Kaufmann 2 also known as a Kaufmann Phase 2 recipe.
