Easy Guacamole…And Rejection

I just love that quote!  Recently when I did not hear back from a particular health program I was truly hoping to share my story with, I said to myself  “I guess they just don’t like ripe, juicy peaches”!  It lightened the mood and put everything in perspective for me. Behind the scenes of this blog I am often pitching myself to television people, brands, health stores, and even to other fellow bloggers.  There is certainly a sense of vulnerability in doing this.  I present my ideas, my passions, my hard work, and essentially myself to others in the hopes of being accepted and validated.   I throw out my “pitch” and then wait to hear back (or not hear back) as to whether they think I am relevant enough or interesting enough for their brand, their store, or their television show.  When they do show interest, normally their first question is “how many followers do you have”?  Translation – show us how many people think you are interesting and relevant.  If that number makes them happy you are “IN”.  If that number isn’t high enough for them, the conversation goes dead. Rejection.

Something that can truly make us miserable is expecting everyone to jump at the chance to get to know us, like us, or be interested in working with us. Or even worse, we let our self worth hang in the balance and let others make that determination for us.  I believe there is no emotion more painful than rejection.  Temporary feelings of rejection are normal and a part of the human experience, but having a root of rejection is entirely something else.  In my experience, rejection started at home as a child, so by the time I was an adult that root was so deep and so solid it took decades to dig it up.   This topic is near and dear to my heart because I know first hand how this “root” of rejection doesn’t just steel your joy, but it can actually steer the course of your life.  It makes it difficult to love others, it leaves you with feelings of inferiority, anger, suspicion, and depression.  Some of you have never had much of a problem with rejection.  To those I say you are truly blessed and to go enjoy this fantastic healthy guacamole.  But to others who have a root of this painful emotion, I want to share  a video from my favorite pastor Charles Stanley (who if not for him, I don’t know where I’d be today) on Rejection.  I lost count of how many times I listened to it over the years, but if you are ready to dig up that root, it’s a fantastic start.  Click to listen here.

Update: I did in fact here from that television show and they ARE interested,  but I am wise enough now not to sweat the people who are NOT interested.  When we can learn to blow off rejection life truly becomes that much sweeter!

Try this quick and easy guacamole recipe!
Course Snacks

Ingredients
  

  • 2 Avocados
  • 1 tsp Chopped jalapeno (more if you like spicy)
  • 1 1/2 tbsp Cilantro
  • 2 tsp Chopped scallions
  • 4-5 tsp Lemon squeezed
  • Salt (to taste)
  • Pepper (to taste)

Instructions
 

  • Mix all ingredients and enjoy!

How To Make Healthy Hot Chocolate That Is Sugar Dairy Gluten Free | Video

Are you still drinking the hot chocolate packets with dehydrated marshmallows?  I know, they are pretty darn good, but they are also full of ingredients you don’t want to be ingesting.   My son and I will show you how to make a healthy hot chocolate that is sugar, dairy, and gluten free.  It’s the perfect antidote to a sweet tooth!

 

INGREDIENTS For Healthy Hot Chocolate That Is Sugar Dairy Gluten Free

  • 1 cup of light coconut milk
  • 1 tbsp. coco powder – I used Equal Exchange Baking Cocoa (it does not contain sugar)
  • ½ tsp. vanilla extract or flavor
  • ½ tbsp. coconut oil
  • 4½ tsp. xylitol
  • Pinch of salt
  • nutri bullet or a blender
  • Don’t skip the final step which is to mix this in a bullet or blender. Makes one serving. Double the recipe for two.

INSTRUCTIONS
  1. Heat all ingredient in a saucepan on medium heat until hot. The coco powder does not completely dissolve so here is my favorite part, once the mixture is hot, pour it into a bullet or a blender for 5 seconds. This makes the drink so frothy and it’s mixed perfectly! Don’t leave out this last step.
  2. UPDATE: I have since bought a “frother” they are cheap and quick so I no longer do the step above using the bullet. If you don’t have one they are a fantastic addition in the kitchen!

Course Drinks

Equipment

  • 1 Nutri bullet or a blender

Ingredients
  

  • 1 cup Light coconut milk

I Try To Eat Clean – Because If I Don’t I Get Sick

As you may know, I eat pretty clean.  It’s been one of the most important life commitments and goals I’ve made over the last seven years.  But having house guests for over a month really put that commitment to the test.

I knew before my guests arrived that things could get tricky for me during their stay.   My guests (AKA my mom and my step dad) view eating out as one of life’s greatest pleasures.  These two excitedly plan their lunch and dinner while eating breakfast.

For the first two weeks I did well!  I stuck to my convictions about eating healthy and avoided the biggest temptations like a champ.  I even brought my own homemade grain free bread to restaurants and watched as everyone ate dessert.  All the while I could almost taste the chocolate mousse in my mouth, my mind patted myself on the back for being so resolute.  When the family would go out every other night to the local ice cream shop (the same ice cream shop I used to visit up to four times a week back in my unhealthy days) I would either stay home for some needed quiet time or spend a half hour next door browsing in a clothing shop.  I was doing great and feeling great. Until….

I Fell Off The Wagon and Got Sick!

On week three I had a an ever so subtle shift in my thinking and a moment of weakness.   It’s safe to say ice cream sodas are my Achilles heel and so one evening I thought “what’s the harm in just one ice cream soda with my family?”   Once the decision was made to stray from my goal,  I took on the mind frame of  “Go Big or Go Home!”

Within hours  I was quickly reminded of my old sugar addiction because now  I was intensely craving anything sweet.  It didn’t matter that I was full.  I was in sugar heaven.  This lead to several days of eating nothing that resembled Phase 1 and Phase 2 eating.  Think candy, cakes, and processed foods.  I didn’t just go off course, I abandoned the road completely and plummeted off a cliff, and I have to say I actually enjoyed the ride (or free fall) for a few days.  It was when I hit the bottom of that ravine that I was forced to face reality.

While in bed one night, I looked over at my nightstand and there were my old standbys.   Afrin for my stuffy nose, Benadryl because my ears and throat were so itchy I couldn’t sleep,  Pepcid for reflux, and ibuprofen for my sinus headache.  And also my asthma inhaler that I haven’t had to use in ages (and wasn’t even sure was still good).  Sound familiar to anyone?

My family looked on with concern as I walked around with a tissue constantly in my hand, and as I retired early to bed because the Benadryl zapped  all my energy.   I generally became less involved with their activities simply because I wasn’t feeling up to it.   After a few days of feeling miserable, I knew I had to go cold turkey and jumped right back on the wagon.  I said goodbye (again) to old favorites that certainly didn’t favor me back.

Getting Back To Gluten And Grain Free

I’m happy to be back on course.   I’d be lying if I said I didn’t sometimes miss my ice cream sodas and other old favorites but I certainly don’t miss what they do to my body.  The feeling I get  from nourishing my body with healthy foods that give me energy, focus, clarity and a sense of well being can’t compare to the quick high of sugar.  Emotionally I feel better as well.  I sometimes think we must have some kind of inner compass that inherently guides us to what we should and shouldn’t be eating.  When I’m eating right, I feel right not just physically but mentally and emotionally as well knowing I’m doing the right thing by my body!

I thought these tortillas were a great way to get back on the wagon of healthy eating.  If  you are anything like me it’s almost impossible to go without bread so it’s imperative to have some on hand.   Enjoy these grain free 4 ingredient tortillas and whether you are on the wagon already or have fallen off and struggling to get back on, this recipe will surely help you on your course!

Homemade Tortillas

Enjoy these grain free 4 ingredient tortillas!
Course Breads and Muffins
Servings 4

Ingredients
  

  • 1/2 cup Almond flour
  • 1/2 cup Tapioca flour
  • pinch Sea salt
  • 1/2 tsp Chia seeds
  • 3 tbsp Warm water + 1 tsp (If you like paper thin tortillas you can add a bit more water until it's slightly runny rather than dough-like)

Instructions
 

  • Warm up your tortilla maker. This is the one I use - tortilla maker.
  • Mix all ingredients in a bowl until it has a nice dough consistency.
  • Spray tortilla maker with coconut oil or nonstick olive oil spray.
  • Separate dough into 3 balls and place on tortilla maker one at a time. Press down for approximately 15-20 seconds. Remove and you are done!

 

How To Make Spicy Sweet Potato Chorizo Hash

If you love a little spice in your breakfast like we do I think you will love my spicy sweet potato chorizo hash recipe.  Since my post titled Homemade Granola & Is Cereal Really That Bad For You many of you wrote in asking just what CAN  you eat for breakfast while on a low sugar, low carb diet.  So I thought it was a good idea to continue with the “anything but cereal” breakfast posts.

If you want to know how to make sweet potato chorizo hash you have come to the right place.  Read on and I’ll show you step by step how the make this hash breakfast.

What You Will Need To Make Sweet Potato Chorizo Hash

  • 2-3 sweet potatoes
  • 2-3 cooked chorizo sausage links (antibiotic/hormone free)
  • 1/8 of an onion chopped (if you like onion you can use 1/4)
  • salt
  • pepper
  • paprika

Instructions On Making Sweet Potato Chorizo Hash

  • I like to precook my sweet potatoes in the crock pot. Cover each sweet potato with aluminum foil and place in crock pot.
  • Add 1/4 cup water in the pot. Let cook on high for 1-2 hours or until soft but not mushy. You can test by sticking a fork down the middle of potato.
  • Cut sweet potato into desirable sized chunks.
  • Chop onion in food processor.
  • Heat 1 tbsp olive oil in a skillet on medium heat. Cook onions until they are slightly golden brown.
  • Place chorizo sausage in food processor and chop until the sausage is ground.
  • Remove sweet potatoes from crock pot and peel. Add sausage and sweet potato to skillet.
  • Add salt, pepper, and paprika to taste.

How To Store the Sweet Potato Hash

I like to make a big batch and keep it sealed in Tupperware and reheat individual portions in the mornings to serve.  Stays good in the refrigerator for about 3 days.

Reasons to feel good about this breakfast:

Grapefruit provides almost half of your daily vitamin C intake.  It is low in calories (less than 45 calories in a half grapefruit) and grapefruit also supports immune health, supports heart health, and lowers cholesterol.

Sweet potatoes are a great source of vitamin A, and are rich in other vitamins and minerals like manganese, copper, Vitamin C, B6, and potassium to name a few!

  • Organic eggs
  • Shredded mozzarella cheese
  • Salt
  • Pepper
  • Garlic powder

Instructions
 

  • Preheat oven to 400 degrees.
  • Lightly grease muffin pan and fill each with a slice of ham.
  • Crack egg into the middle of the ham in each muffin circle.
  • Sprinkle each with salt, pepper, shredded mozzarella and garlic salt.
  • Bake for about 15 minutes or until knife comes out clean when stuck in center of egg.

 

 

Healthy Super Bowl Snacks…And Do You Live Your Life on the Sidelines?

I posted this last year, but a lot has changed since then.  Not only is it updated with additional amazing healthy snacks like guacamole, white queso dip, and spinach artichoke dip, but I’m hoping since some of you read this post last year, you are not only healthier, but are out there enjoying life!  And whether you are watching super bowl this year or not, these recipes are still the perfect party food for any occasion when entertaining, yet still trying to eat healthy.  

There are few things less painful than knowing you are living your life on the sidelines.  For those of you that are extroverts, living life to it’s fullest comes easy to you and I have always admired you from the sidelines.  But for the rest of us, you know, the cautions ones, life can sometimes be a little less rewarding.  We are the ones who have to analyze every decision and even sometimes every word before it’s spoken in order to weigh out any potential embarrassment.  And while you are waiting, analyzing the potential threat, you are also watching your life pass you by.   After all, most introverts have an inner extrovert dying to come out, or at least I did!  I am well versed on this topic as  I spent half of my life on the sidelines.  I took public speaking classes and watched with awe as people honed their skills when I couldn’t even manage to stand up and introduce myself.  I joined that class twice with high hopes that I could push through the fear, but I quit both times when it was my time to stand before the class.  I just couldn’t do it.  That was for other people.  I was the one in the meetings watching others blurt out the fantastic idea (or joke) I had, but was too unsure of myself to present it.  I sat off to the side watching people living out MY dream!  Before I learned photography I actually remember thinking that skill was somehow for other people who had some sort of natural talent I was sure I didn’t have.   I thought blogs were for people with real writing talent, not for someone like me.  Learning guitar was for people who could could sing as well.  Dance lessons were for other people with more rhythm.  So I disqualified myself from many of the things that would bring my life excitement and joy!  Sound familiar?

So what changed?  Many years ago I heard the eight life changing words that helped transform my life.  If you follow my blog you already know what they are. And that is “ten percent of people will not like you” .  They simply will not like you no matter how great you may be.   So essentially you are living your life on the sidelines as to make sure you don’t do or say anything wrong and have to face rejection.  Whether you are in or out of the game that 10% still exists.  You will still face rejection and some people who will not like you.  But I came to realize in the game is where you really start to like yourself and once that happens it’s a game changer!  Doors start to open you thought could never open for you.  I think it’s when we lose our fear of rejection that we can let loose and be ourselves. Thats when incredible things started to happen. When I was inevitably faced with having to speak in front of people I not only didn’t “die” , but even found I kind of enjoyed it, which is a miracle in itself.  After years of practice I can now take a decent picture! I write regardless of the fact that I don’t have any formal education in writing, and I dance even though I’m pretty crappy at it!  But who cares?   Because life now is so much more sweet, and FUN when you stop censoring yourself.  We weren’t made to be spectators only.

If you saw yourself in this post, I say come on over and get in the game and forget about what others may think of you.  In the game is where all the fun is.  It’s where all the chances are taken, it’s where you are stretched, and where you find out what you are capable of.  It’s where your self esteem soars, it’s where you will sometimes get rejected and where you learn you can handle it.  It’s also where you find out what your weaknesses are.    It’s where you learn that in spite of those weaknesses, you like yourself anyway!  Don’t let life pass you by, and I expect to see YOU in the game!

Grilled Artichoke with Aioli…And What Could Sinus Infections Have In Common With Cancer?

I bet you never heard those two ailments in the same sentence.  Neither had I until last year.  Writing this blog has given me the opportunity to meet and learn from some of the most intelligent minds in medicine.  After decades of battling my own bacterial and fungal sinus infections, my focus (as well as every doctors focus) had ALWAYS been on eradicating the bacteria.  It was as if the fungus didn’t even exist.  Boy, if I could go back 25 years and know then what I know now.  I don’t entirely blame this on the doctors as they are taught almost nothing about fungus in medical school, but are taught everything about bacteria.  Yes, we all know certain bacteria can be very dangerous and have to be dealt with, but fungus in it’s own right is dangerous.  For one, fungus spew mycotoxins (fungal poisons) and the particular fungus I had called Aspergillus spew mycotoxins called “aflotoxins”.  Aflotoxins are among the most carcinogenic substances known to man.  Yes, take your time to go back and read that again.  Does fungus still sound harmless?  The irony is the treatment for sinus infection is most commonly antibiotics, which are in fact mycotoxins (fungal poisons).  So essentially, you are trying to kill the bacteria by adding a hefty dose of fungal metabolites which only fuels the fungal infection.  Not sure if fungus can also be involved in your chronic sinusitis?  In 1999 the Mayo Clinic released their research findings and announced over 90% of all sinus infections are fungal in nature.  Then why does my sinus culture result come back showing bacteria you may ask?  Because bacteria are opportunistic!  Once the fungal mycotoxins have sufficiently suppressed your immune system, the bacteria has a chance to gain a foothold as well.

I also learned fungus mimics cancer in many ways.  Leading to question whether fungus causes cancer, or if cancer is a fungus.  Many doctors are starting to believe so.  Both cancer and fungus need sugar and carbohydrates to survive, they simply die without it.  Neither need oxygen, and where cancer is caused by genetic mutations, mycotoxins are known to cause genetic mutations. We are also hearing more and more about misdiagnosis of cancer, where upon further investigation the true diagnosis was fungus. If you think fungus can only wreak havoc in your sinuses, read about the many links fungus has to other diseases such as chronic fatigue, fibromyalgia, reflux, neuropathy, Epstein Barr, and so much more.  Some of these diseases of which I had, only to dissipate once I introduced anti-fungals and started an anti-fungal diet.  Further convincing me of the role of fungus in my illness.

What my future holds as a result of being exposed to aflotoxins in my own body for decades is unknown. But, what I do know is this.  Both cancer and fungus need carbs and sugar to survive. So I plan on living a long healthy life eating in a fashion that does not make me a hospitable, most welcoming host for these deadly pathogens.

How can you reduce your risk of a fungal infection?  Fix any known leaks in your home, do not over use antibiotics, don’t drink excessive amounts of alcohol, and limit (if not completely disregard) foods known to contain mycotoxins like cereal, wheat, corn, alcohol, and peanuts.

If you are one of the millions that do have chronic sinusitis, I don’t have to tell you the treatment is complicated.  Chances are you have already had a surgery or two (4 in my case), endless rounds of antibiotics, steroids, allergy shots, and you are probably still sick.  Because I am not a doctor I cannot give medical advice.  But if I had a chance to talk to my teenage self when I came down with my first sinus infection it would be this.  Test your environment for mold and fix the issue.  Clean up your diet as to not feed fungus, take natural anti-fungals, buy a quality air filter, and do not take endless amounts of antibiotics and possibly unnecessary surgeries.  I would also visit websites like Know The Cause and learn everything I could about fungus (which I did).   I can’t go back in time, but hopefully I can spare many people the misery of the antibiotic/surgery hamster wheel so many of us find ourselves on.

 

Grilled Artichoke Hearts with Aioli

Impress your guests with this healthy and tasty grilled artichoke hearts and aioli recipe.
Course Side Dishes, Snacks

Ingredients
  

  • 1 Artichoke or frozen artichoke hearts

Aioli

  • 2 cups Greek yogurt
  • 4 cloves Garlic
  • 2 tbs Lemon juice
  • 1/4 tsp Sea salt (to taste)
  • 1/4 tsp Black pepper (to taste)
  • 1/4 tsp Crushed red pepper fakes (or more if you like extra spicy)

Instructions
 

Artichoke

  • Steam whole artichoke for 30-45 minutes or until you can put a knife through the base of the artichoke with ease.
  • Finish on the grill for approximately 5 minutes. If using frozen artichoke hearts follow instructions on package.

Aioli

  • Chop garlic in food processor.
  • In a medium bowl combine all ingredients, add garlic and mix well. Enjoy!

Jerk Chicken…And 4 ways to say you are sorry

Almost a decade ago I read a book called The Love Dare.  I highly recommend it to anyone who wants to improve any relationship in their life.  One line from that book has never left me. It was simply “be a joy, not a jerk”.  So simple, yet these six words can make all the difference in the world in your marriage, in your relationship with your children, or even with co-workers.  Think about it, who wants to live with a jerk?  Nobody.  We all find ourselves gravitating toward people full of joy and who treat us kindly.  This book also says the joy two people find in their marriage is directly linked to the daily level of kindness expressed.  We all want great relationships, but what about those days when we wake up and our inner jerk is just clamoring to come out and say something rude and regretful?  If you are anything like me, you beat yourself up for awhile, then you determine never to be a  “jerk” again only to someday fall short again.  The older I get the more slack I give myself because I realize this inner jerk is within all of us, but it’s in the way we handle ourselves that makes all the difference in the world to those around us and even to ourselves.

1)   Humble yourself.   Never be too proud to say you were wrong.  Even if they share in some of the blame don’t mention their part in it, only your part.   Before I met my husband it was very difficult for me to admit when my behavior was unbecoming.  I was much more comfortable making the other person feel like THEY were wrong to get “off the hook”.  The problem is the other person is not buying it, and they are only conceding to make you go away, which is definitely not winning.  By watching my husband, I have learned to apologize right away.  Not only do all the negative feelings dissolve almost immediately, but I’ve learned humility makes a person more attractive and it also creates a safe atmosphere for the other person to apologize as well.

2) Prove it – forgiveness is immediate, but proving yourself and regaining trust when you hurt someone’s feelings takes time.  Show that person you care about them so much that you will not make that same mistake again and again.

3) Make it up to them – you can’t buy your way out of what you may have said to hurt that person but you can show them how much you care by being your best everyday to be a joy and not a jerk.

4) Be silly – I ordered this T- shirt (pictured above) last year knowing unfortunately someday I would need to wear it.  How can someone not forgive you when you approach them wearing this shirt?  Take what you did to hurt their feelings seriously, but you don’t have to be so hard on yourself and take yourself so serious!  Forgive and move on.  This includes forgiving yourself!

Now on to this jerk chicken!

This dish was really enjoyable to make.  There are so many wholesome, vibrant, flavors and ingredients in this recipe.  Not to mention, so many ingredients are anti-fungal (and cancer fighting) including  ginger, carrots, onion, garlic, cinnamon, and the list goes on!

Try this wholesome and flavorful Jerk Chicken recipe!

Course Main Dishes

Ingredients
  

  • 4-8 Chicken breasts
  • 8 cloves Garlic
  • 2 tsp Allspice
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/2 Onion
  • 1 1-inch piece fresh ginger
  • 2 Scallions diced
  • 2 Limes squeezed
  • 1-2 tbsp Coconut aminos (I use this in place of soy sauce-I used Coconut Secret brand)
  • 1/4 cup Extra-virgin olive oil
  • pinch Salt
  • pinch Black pepper
  • 4 Sprigs fresh thyme
  • 1/2 Habanero pepper
  • 1/2 Serrano pepper
  • 1/4 cup Xylitol
  • Shredded carrot (used for toppings)

Instructions
 

  • Place all of these fresh wonderful ingredients (minus the chicken) in a food processor until puree is pretty smooth.
  • Place puree in a zip lock bag and add the chicken breast. Seal zip lock bag and marinate over night.
  • Preheat oven to 400 degrees (ignore this if grilling)
  • Place marinated chicken on baking dish and top with remaining marinade from bag.
  • Bake in oven for 30-40 minutes. Enjoy!

Kaufmann 1 Diet (Kaufmann Phase 1), unless you add the wild brown rice-then it would be phase 2.

 

Slow Cooker Spicy Andouille Sausage and Black Bean Soup

Dinner doesn’t get much easier than this slow cooker spicy andouille sausage and black bean soup.  It’s full of nutrition and powerful flavors, plus it only takes minutes to put together!   If you are lucky enough to have the Cuisinart 3:1 cooker it’s even easier.  This crock pot allows you to sauté your onion and garlic right in the crock pot before adding the rest of your ingredients, then you switch the setting to slow cook. (I don’t even get paid to say that, that’s how much I love this thing).   If you don’t have one you can just sauté in a frying pan the old fashioned way then add them to the crockpot, equally delicious!  Enjoy!

Ingredients
  

  • Andouille Chicken Sausage make sure it's antibiotic and hormone free. I used Brat Hans for this recipe
  • 2 cloves Garlic
  • 1 Green pepper optional
  • 1/4 Onion chopped
  • 64 oz Black beans (2 x 32oz cans)
  • 32 oz Chicken broth
  • 13.5 oz Light coconut milk
  • 1 Tomato
  • 2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/8 tsp Garlic powder
  • 1/4 tsp Parsley
  • 1/4 tsp Thyme
  • 1/4 cup Flour (you can use 2 tbsp. brown rice flour and 2 tbsp. arrowroot flour)
  • 2 tbsp Butter
  • 1 tbsp Olive oil
  • sour cream optional

Instructions
 

  • Chop the onion and garlic in a food processor.
  • Sauté in 2 tbsp butter and 1-2 tbsp of olive oil. Stir occasionally.
  • Once translucent and slightly golden, add chicken broth and coconut milk.
  • Add flour and see TIP below before adding remaining ingredients including sausage that has been cut into bite size pieces.
  • Cook on low for 6-8 hours or high for 4 hours.
  • Top with sour cream, chopped onions, and tomato.

Notes

Kaufmann 2 Diet (Kaufmann Phase II)
Tip - Once I mix in the flour I use a battery powered milk frother to blend it right in the crock pot to avoid lumps. It works great! Then I add the beans and sausage. If you do not have a milk frother you could also use a bullet or a blender and mix some of the chicken broth with the flour before adding to the crockpot. Cook on low for 6-8 hours or high for 4 hours.

 

Gouda and Sauerkraut on Oat Bread With Sweet Potato Fries

As I was eating my delicious gouda and sauerkraut melt on oat bread with sweet potato fries, I starting thinking my lunch seems too good to be true.   Call it gut instinct, but something inside made me double check the Kaufmann diet as I never want to put information out there that contradicts his diet.  I distinctly remembered gouda cheese being on the “ok” list years ago when I started this anti-fungal diet, but after my research today this is what I found from Know The Cause  “Many copies of our books containing the Phase one Diet allow for certain cheeses and cream while on the Phase one or Two Diet. The Phase one and Two Diets are still evolving, and while we like to keep the diet open to new information that comes out about any and all foods (especially whether or not those foods may be suitable for an anti-fungal diet) the most recent versions of the Phase one and Two Diets exclude most dairy, including cheese and cream”.

After reading Doug’s update I thought of ditching this recipe and post altogether.  But because I am a person that likes to take mistakes, mishaps, and set backs and turn them into opportunities, I decided to instead think of the positives of this recipe and I found two! One, is the fact that this very important update could further help people reach their health goals.  Secondly,  I didn’t exactly stop eating this sandwich as I read that update and I’ll tell you why.  I believe in balance along with knowledge.  I often get asked if I ever have a cheat day or fall off the wagon and the answer is an astounding OF COURSE!  Nobody can be perfect with what they put in their mouth everyday, nor would I want to live a life with those kind of restrictions.  But as most of you know, I attribute much of my recovery to what I have learned from Doug over at Know The Cause and to his Kaufmann diet, so feeling healthy and alive is the perfect motivator for me to stick to the diet.  With that being said, I will be saving this wonderful recipe for my “cheat days” and it will serve as a reminder of how far I’ve come.  My cheat days used to include me hitting the drive thru at McDonald’s for a big Mac, followed by an ice cream soda and possibly a Krispy Creme donut or three.  Now my cheat days look a little more like this recipe and it makes me feel very blessed to have come so far and also to reach a place of balance!

Note: Ketchup shown is unsweetened but I added a bit of xylitol to taste.  Delicious!

Gouda and Sauerkraut on Oat Bread With Sweet Potato Fries

Try this too good to be true delicious gouda and sauerkraut melt on oat bread with sweet potato fries.

Ingredients
  

Sweet Potato Fries

  • 2 Sweet potatoes
  • 1-2 tsp Olive oil (just enough to lightly coat; too much will make them soggy)
  • 1/8 tsp Garlic salt
  • 1/4 tsp Paprika
  • 1/4 tsp Pepper
  • pinch Salt

Gouda and Sauerkraut Sandwich

  • Gouda cheese
  • Sauerkraut
  • 2 slices Yeast / wheat / sugar free bread (I used oat bread. You can also use my flat bread recipe)

Instructions
 

Sweet Potato Fries

  • Preheat oven to 450.
  • Peel sweet potatoes and cut length wise into 1/4 strips as seen above. Lightly coat with olive oil and toss with seasonings.
  • Place parchment paper on cookie sheet and bake for approximately 20 minutes or until golden and slightly crispy. Remove from oven after 10 minutes and flip sweet potatoes. For extra crispy fries you can turn off the oven after 20 minutes, open the oven door and let them sit for 15-20 minutes in the oven as it cools.

Gouda and Sauerkraut Sandwich

  • When sweet potato fries are almost ready, I pop the gouda and sauerkraut sandwich on the cookie sheet and let it melt. You can put real butter on the outside of the bread if desired. Remove when the bread is toasted.

Notes

Sweet Potatoes are Kaufmann 2 Diet (Kaufmann Phase II). Gouda used to be considered Phase II but Doug Kaufmann has updated his opinion on this cheese. For more information click here.
