I created this Corn Free Nachos recipe for my husband because I didn’t want him feeling deprived while I was on this diet. He used to love going out on Friday nights and having a beer and some nachos (before the Kaufmann diet got a hold of him) and from what I have learned, almost all of our former guilty pleasures can be re-created into a healthier and often times tastier version! However, no replacement for the beer just yet.
Corn Free Nachos

Ingredients
- Beanitos (either original black bean or pinto bean)
- Erin's Chili (see recipe section under main dishes)
- yogurt cheese
- jalapenos
- salsa
- sour cream
Instructions
- Preheat oven to 350 degrees.
- Spray or wipe cookie sheet with coconut oil (I found a coconut non stick spray I love from Trader Joes)
- Spread Beanitos on cookie sheet and top with preheated chili and yogurt cheese
- Bake on middle rack for about 8 minutes. Top with jalapenos, salsa, and sour cream.
