Chocolate Chunk Cookies (Kaufmann Diet Friendly)

My son and I headed to the beach for the day to relax and to make our favorite chocolate chunk cookies (Kaufmann diet Friendly of course!)  If you are not sure what the Kaufmann diet is, it’s a lower carb and low-sugar diet for the purpose of starving pathogens such as yeast and fungus which are responsible for many health problems.   This recipe would be considered fine as a Kaufmann Phase 2 dessert, also known as Kaufmann 2.

What You Will Need for Chocolate Chunk Cookies

  • 1 cup cashew or almond butter ( I used cashew butter)
  • 1 cup unsweetened coconut flakes
  • 1 bar of Lily’s Chocolate (it’s sweetened with Stevia) – I use the Milk chocolate Salted Caramel or the Milk Chocolate with Hazelnuts
  • 5 tbsp xylitol
  • 1/2 tsp vanilla
  • 1 organic egg
  • pinch of chia and flax seeds

Instructions

  • Bake for 10 minutes at 350 degrees

Ingredients
  

  • 1 cup Cashew or almond butter (I used cashew butter)

  • 1 Bar of Lily's Chocolate (it's sweetened with Stevia - I use Milk Chocolate with Hazelnuts)
  • 5 tbsp Xylitol
  • 1/2 tsp Vanilla
  • 1 Organic egg
  • pinch Chia and flax seeds

Instructions
 

  • Preheat oven to 350 degrees.
  • Add coconut flakes, cashew butter, xylitol, egg, and vanilla into a bowl.
  • Chop up Lily's Chocolate bar into small chunks and add to mixture.
  • Sprinkle in some chia and flax seeds to the mixture.
  • Mix well for a dough like consistency.
  • Spoon portions of the dough onto a cookie sheet (15-20 cookies depending on size).
  • Bake for 10 minutes at 350 degrees
  • Let cool and serve!

Quinoa, Sausage & Eggs (Kaufmann Diet Friendly)

I wasn’t planning on this ,Quinoa Sausage & Eggs being today’s post, but as I made this good-looking breakfast for my husband this morning, I thought it was too good not to share, so I grabbed my camera.  This is not just another pretty breakfast, it has a lot of substance, it’s full of protein and healthy fats, and only takes 7 minutes to make!  If you are following the Kaufmann Diet, this recipe would be considered a Kaufmann 1 breakfast recipe.  Also known as Kaufmann Phase 1.

7 Minute Quinoa Sausage and Eggs

This 7 minute quinoa sausage and eggs recipe is not just another pretty breakfast, it has a lot of substance, it’s full of protein and healthy fats,  oh and it really did only take 7 minutes to make!
Course Breakfast

Ingredients
  

  • 1 cup Quinoa & Brown Rice (I used seeds of change brand - this is already made and just has to be heated up.)
  • 1 Link of organic chicken sausage (I used Applegate brand)
  • 1-2 Organic eggs
  • Handful of spinach
  • 1/4 Avocado
  • Jalapenos (optional)

Instructions
 

  • In medium skillet melt coconut oil or grass fed butter on medium heat.
  • Add quinoa and brown rice and sausage and spinach. Cook about 3-4 minutes.
  • Make room for the egg in the skillet and cook the way you like it.
  • Place on a dish and top with avocado and jalapeños.

When I first started the Kaufmann diet due to chronic illness many many, years ago, I didn’t know how I could ever go without my nightly dessert.  The deeper I dove into the diet and studied the ingredients, I realized there is a plethora of desserts to be had!  This coconut whipped cream recipe takes three minutes to make and can be topped on berries, grain free pancakes, or on its own.  Having something that resembles dessert on the Kaufmann diet can make this life change very satisfying to both your health and your sweet tooth.

In order for a dessert recipe to be Kaufmann diet friendly, all you really need to do is replace ingredients such as wheat and sugar with the proper substitutes.

What is the Kaufmann Diet?

The purpose of the Kaufmann diet created by Doug Kaufmann is to starve pathogens such as candida and yeast in order to avoid or recover from the many diseases they cause.  For a full explanation, read my article titled What Can I Eat.

What You Will Need for Coconut Whipped Cream

  • 1 can coconut milk chilled overnight (not coconut cream) You may also use heavy whipping cream and this would also be ok on the Kaufmann diet.
  • 1 1/2 tsp vanilla extract
  • 1 tbsp xylitol or stevia to taste

Instructions

  • Open can of coconut milk that has been refrigerated overnight.
  • Remove only the “cream” at the top and set aside coconut milk.
  • You can store this for later use in smoothies, etc.
  • Place cream, vanilla, and sweetener in a bowl and mix with hand mixer until smooth (about 2 minutes).

Zucchini Fritters (Kaufmann Diet Friendly)

I am normally not zucchini’s biggest fan, but I love all the fresh ingredients that go into this recipe and I especially recommend making the aioli for dipping.  If you are following the Kaufmann diet, this recipe would be considered a Kaufmann 1 recipe, also known as Kaufmann Phase 1 recipe.  If you suspect your health issues may be from mold exposure check out Doug Kaufmann at Know the Cause.

What You Will Need for Zucchini Fritters

Ingredients

  • 2 Large Zucchini
  • Jalapeno Pepper (just a few slices)
  • 1 Organic egg
  • 2 Scallions chopped
  • 2 cloves Garlic chopped
  • 10-11 tbsp Gluten free flour blend (I use Namaste. You can use any grain free flour blend you like)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  • Chop zucchini, garlic, and jalapeno in food processor. Make sure you still have small chunks you don’t want to puree it.
  • Place mixture in a bowl and add egg, flour, salt and pepper.
  • In a medium to large skillet heat 1-2 tbs olive oil and 1 tbs butter on medium heat.
  • Once the pan is hot place the batter in the skillet with a spoon. Flatten out with the back of the spoon until they are flat and round.
  • Cook on both sides until golden brown. About 7-9 minutes on each side.
  • Serve with a side of aioli for dipping.

Aioli

  • 2 cups Greek yogurt
  • 4 cloves Garlic
  • 2 tbs Lemon juice
  • 1/4 tsp Sea salt (to taste)
  • 1/4 tsp Black pepper (to taste)
  • 1/4 tsp Crushed red pepper fakes (or more if you like extra spicy)

Bone Broth Recipe (And Meeting Charles Stanley)

I don’t know what to talk about first?  This bone broth recipe or my recent opportunity to meet Charles Stanley!  Both are exciting in different ways, but I’ll start off with Charles Stanley.  Many of you know who he is and for those that don’t, he has been a preacher for over 60 years and you can find his television show “InTouch” on TV (and radio) each week.  If you are scratching your head right now wondering why this could be exciting, let me explain why this meeting meant so much to me.

How I met Charles Stanley

The short and sweet version is that twenty years ago, my life was a mess. And not just in the physical.  I had already been dealing with over a decade of chronic illness(s) by this point, but emotionally my life was also in shambles.  For me, his sermons were the equivalent of someone throwing me a life preserver if I were drowning.

Many nights I would fall asleep with his sermons playing on my phone next to my pillow.  His messages enabled me to find peace through the darkness, as well as guidance.  I had always thought about wanting to meet him, and for years I knew EXACTLY what I’d say if I ever got the opportunity.  Bob and I watch him without fail every Sunday, and every Sunday I say the same thing.  “One day Bob, I want to meet Charles Stanley”! (as I’m typing this I realize this all sounds a little stalker-ish, but it’s really not, I promise) I just had enormous gratitude for what his words have helped me accomplish in my life.  Well, last weekend I go to do just that, and even better I got to hand him the heartfelt letter I wrote (that is what he’s looking at in his hands).

 

I found out the odds are of meeting him are close to nil.  People come from around the country each week to attend his services.  But as it says in Matthew 19:26, “with God all things are possible”.  I am honored and thankful I got to tell one of the most influential people in my life “thank you”.

What You Will Need For Bone Broth (Kaufmann Diet Friendly)

  • 2 pounds chicken or beef bones
  • 1 bag of carrots diced
  • 6 ribs of celery chopped
  • 2 garlic cloves chopped
  • 1 onion chopped
  • 32 oz.organic/yeast free chicken broth (for extra flavor)
  • 1 1/2 cups water
  • 2 tsp. salt

Instructions

  • Place all ingredients in crock pot and simmer for 24 hours. Let cool before refrigerating.
  • If you are following the Kaufmann diet, this bone broth soup recipe would be considered fine on Phase 1 (also known as Kaufmann 1)

Buttery Pop Overs

I hope you bread lovers enjoy these buttery pop overs as much as I do! I got the inspiration for this wonderful recipe over at Know the Cause and just revised it a bit. The best part of the recipe is, they were made without using white or wheat flour!
Course Breads and Muffins

Ingredients
  

  • 3 Eggs (room temperature)
  • 1 Egg white (room temperature)
  • 3/4 cup Almond milk (room temperature)
  • 3/4 cup Coconut cream (room temperature)
  • 1/2 tsp Sea salt
  • 3 tbsp Clarified butter or ghee melted
  • 2 tbsp Coconut flour sifted
  • 1/4 cup Almond flour
  • 1 cup Tapioca flour

Instructions
 

  • The key to these pop overs coming out perfect is to have all ingredients at room temperature before beginning.
  • Preheat the oven to 450°.
  • Sift the coconut flour into a bowl.
  • Add almond flour, tapioca flour and salt and whisk together to combine.
  • Place the eggs and egg white into a blender (I use my bullet instead) and blend until very light in color, about 2 minutes.
  • Add almond milk and coconut cream and blend.
  • Add the dry ingredients. Blend again until thoroughly combined.
  • Add one tablespoon of the melted butter or ghee and blend one more time to combine.
  • Pour about ½ teaspoon of melted butter or ghee into the bottom of each cup in a standard 12-cup muffin tin. Place the muffin pan into the hot oven for 3 minutes.
  • Remove the pan from the oven, quickly closing the oven door so as not to allow the heat to escape, and fill each cup with batter about 2/3 of the way full.
  • Return the filled muffin pan to the hot oven on the middle rack, leave the oven light on as you want to look at them at the 15 minute mark to make sure they are not too golden brown, BUT DO NOT OPEN THE OVEN AT ANY TIME DURING BAKING OR YOUR POPOVERS WILL DEFLATE!
  • After 15 - 20 minutes, reduce heat to 350° and reset timer for an additional 5- 10 minutes. Serve immediately.

Berries and Whipped Cream

It doesn’t get any easier than this for a sweet tooth!  Classic berries and homemade whipped cream.  Sometimes we forget about the simple….sugar free (except for the berries) and can be made dairy free.  See substitutions below.  Enjoy!

Course Desserts, Kaufmann 1, Snacks

Ingredients
  

  • 16 oz Organic heavy whipping cream OR coconut cream chilled overnight unopened
  • 1 tsp Vanilla extract
  • 2 tbsp Xylitol or monk fruit

Instructions
 

  • In a large bowl mix heavy whipping cream, vanilla, and xylitol with an electric mixer until stiff peaks are just about to form. Make sure not to over-beat, cream will then become lumpy and butter-like. You can also use a wire whisk but it takes much longer to thicken.
  • If using coconut cream, chill overnight in the refrigerator, open and only remove the "cream" leaving the milk and saving for other recipes. Same steps as above, mix with vanilla and sweetener.

Bacon Brussels Sprouts (Kaufmann Diet Approved)

This bacon Brussels sprouts recipe is not only Kaufmann diet approved but one of the few things all three of my kids agree about.  They love them.  This recipe would be considered Kaufmann 1, also known as Phase 1.

What You Need For Bacon Brussels Sprouts

  • Organic bacon – Update:  I try not to eat pork anymore so I buy organic nitrite/nitrate free turkey bacon
  • Brussels sprouts
  • 1 tbsp olive oil
  • salt to taste
  • pepper to taste

Bacon Brussel Sprouts

A guilt free way to eat bacon! These Brussel Sprouts are still delicious on their own but the bacon really adds some delicious flavor to this side dish. I serve a vegetable to our 3 kids every night and I could not find one they all agreed on until now. This is a recipe the kids get excited about and we eat this side dish about twice a week.
Course Kaufmann 1, Side Dishes

Ingredients
  

  • Bacon-organic Nitrite/Nitrate free
  • Brussel sprouts
  • 1 tbsp Olive Oil
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Cook the bacon until it’s crispy, then crumble into small pieces.
  • Cut the bottoms off of the Brussel sprouts and then cut them in half. Steam the Brussel sprouts for approximately 15 minutes. I do not recommend boiling them. It changes the flavor and consistency in an unfavorable way.
  • In a bowl toss the Brussel sprouts with a tbsp of olive oil and the bacon pieces.
  • Salt and pepper to taste.

Health benefits of brussel sprouts - Brussels sprouts are surprisingly high in protein for a green vegetable, and just one serving would meet your needs for vitamin C and vitamin K for the day. Not only do brussel sprouts help prevent cancer but they offer digestive support, are an anti-inflammatory and they lower your risk of heart disease. This is to just name a few.
