Written by Erin Porter

This almond butter pie is proof that it’s not that hard to still enjoy dessert when giving up sugar and gluten!  This pie is a no bake, so it’s ready in minutes and is also Kaufmann diet friendly.  If you are not sure what the Kaufmann diet is (diet created by Doug Kaufmann) here is the Kaufmann diet explained.  This almond butter pie recipe would be fine for the Kaufmann diet phase 2.

Making a gluten and sugar free dessert is not that difficult.  As a general rule, you will be using the same flour and sugar substitutes over and over again.  For a complete list of those substitutes check out my article titled What Can I Eat on the Kaufmann diet.

Read on and I’ll show you how to make this quick and easy no bake dessert.

Television Interview with Doug Kaufmann – Why Illness lead me to the Kaufmann Diet

Instructions

Blend all crust ingredients as seen in video above and place in pie pan.  Mix all pie filling ingredients and cover crust.  Melt chocolate chips and decorate top of pie.  Place in refrigerator.  Top with Whipped cream if desired.

What is the Purpose of the Kaufmann Diet?

The purpose of the Kaufmann diet is to starve pathogens, candida and fungus in particularly.  If you eat the Standard American Diet, have taken more than your share of antibiotics or have lived or worked in a structure that has had a mold problem, your illness could be caused by mold and candida.
