[Video] Lemon Dijon Carrots with Feta

We love making bowls for dinner. If any of you have a Fresh Kitchen in your area, you understand what I mean by a “bowl.” You pick your greens, lentils, rice, protein and a plethora of different vegetables to chose from. And these are vegetables prepared in a way that you can actually get excited about! Currently I am very much into creating great tasting sides for our dinner bowls.
I hope you enjoy these lemon dijon carrots as much as we did. My husband had a great idea tweak, and that is placing the “sauce” in a blender so the garlic is blended. I love it, and will be doing it that way going forward. See video below for instructions and full recipe is below. Ingredients
- 1 bag organic carrots
- 1 tablespoon olive oil
- Juice of 1/2 lemon
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- 2 garlic cloves
- 1 tablespoon fresh dill
- 1/4 tsp salt
- Pepper to taste
- Feta cheese for the top after roasting

If you are following the Kaufmann diet, this lemon dijon carrot with feta recipe would be fine on Kaufmann 2. Also known as Phase 2 on the Doug Kaufmann diet.
