Vitamix Broccoli Cheese Soup (A Step By Step Video To Dinner In 7 Minutes)

Come join myself and my teenage son as we make a delicious Vitamix Broccoli Cheese soup in under 7 minutes.   For two years I was on the fence about buying  Vitamix!  It was my interview with Supermodel Carol Alt that made me pull the trigger and buy one.  Now I realize without it, I wouldn’t have been able to consume the sheer amount of raw foods I know by body needed in order to begin to recover from chronic illnesses such as chronic sinus infections and four sinus surgeries, chronic Epstein Barr Virus, chronic fatigue, heart arrhythmias, Lyme disease, and much more.  You can read my story of decades of chronic illness(es) here.

Carol Alt told me she turned to a raw diet after dealing with chronic health issues for most of her life. Raw food helped her to regain her health.  Although I don’t have intentions on going “raw”, she inspired me to eat more foods in their raw state.  Carol’s advice to me was that all you need is a great blenderjuicer, and dehydrator and you will be on well on your way.  Come watch my teenage son and I make a Vitamix broccoli cheese soup in 7 minutes.  And yes, amazingly enough it will be piping hot soup!  The Vitamix we bought is the 2500 and I LOVE it!!

What You Need For Vitamix Broccoli Soup Recipe

  • 1 (13.5 ounce) can light coconut milk
  • Head broccoli chopped (1 head)
  • 1 bag shredded cheddar cheese
  • Garlic Cloves (2)
  • 2 tsp salt
  • 2 tsp thyme
  • ¼ onion chopped
  • 1 (32 ounce) container chicken or bone broth
  • 1/2 tsp black pepper
  • 2 tsp parsley

Note – You could also turn this into a chicken broccoli cheese soup by adding chunks of chicken AFTER its blended.

Instructions On How To Make Vitamix Broccoli Soup

For instruction see video. Note – for roasting the garlic and onion: Preheat oven to 425.  Place on baking sheet and sprinkle onion and garlic with olive oil.  Place in oven for about 10 minutes. I hope you enjoy my Vitamix broccoli soup recipe and if you are following the Kaufmann diet, this soup recipe would be considered a Kaufmann phase 2 soup recipe.

Try this delicious Vitamix Broccoli Cheese soup in under 7 minutes.
Course Main Dishes

Ingredients
  

  • 13.5 oz Light coconut milk
  • Head broccoli chopped 1 head
  • 1 Bag shredded cheddar cheese
  • 1 Garlic cloves
  • 2 tsp Salt
  • 2 tsp Thyme
  • 1/4 Onion chopped
  • 32 oz Chicken or bone broth
  • 1/2 tsp Black pepper
  • 2 tsp Parsley

Instructions
 

  • Prepare steamed broccoli.
  • Prepare roasted onions and garlic by placing on baking sheet, sprinkle with olive oil and bake at 425 degrees for 10 minutes.
  • Add all ingredients except broccoli into Vitamix.
  • Mix for about 6-7 minutes. It should be hot and steamy when you lift the lid.
  • Stir in steamed and chopped broccoli and serve.
