Strawberry Vanilla Bean Roasted Cashews

Strawberry Vanilla Bean Roasted Cashews
Ingredients
- 1 lb Cashews
- 1 Vanilla bean
- 2 tsp Vanilla extract
- 1/3 cup Xylitol
- 1 cup Dried strawberries I used Trader Joes brand
- 1/4 tsp Cinnamon
- pinch Salt
- 1 Egg white
Instructions
- Place cashews in bowl and just enough water to cover them. Add 1 tsp. of vanilla extract. Soak for 2-3 hours.
- Drain water and lay cashews out on parchment paper to dry completely (About 1 hour or longer.)
- Once cashews are dry preheat oven to 200 degrees and spray cookie sheet with coconut oil spray.
- In a bowl combine dry cashews with egg white, xylitol, vanilla, cinnamon, salt and dehydrated strawberries. Mix well and spread cashews onto cookie sheet.
- Sprinkle 1 tbsp. more of xylitol on top of cashews.
- Bake at 200 degrees for 2-3 hours. Toss cashews after 1 hour and continue to bake for another hour or two. If after two hours they still look moist continue to bake for another hour. Checking every 30 minutes. They will continue to dry out even after they are removed from oven.
- Take out of oven and store in air tight container. Enjoy!
Notes
Toss the cashews with a wooden spoon. Don’t be discouraged when you notice they are still wet after a couple stirs. They will dry up and they will also continue to dry when they come out of the oven.
