I have a friend who’s child is allergic to so many foods and is constantly sick.  When I mention that going on a diet free of wheat (most grains actually), sugar, soy, peanuts, yeast, and corn people feel so overwhelmed they just give up and say it’s too hard.   They also usually add a little quip about how they could never get their kids to eat “rice cakes” all the time.  I get it! I felt that way at first too and therefore I stayed sick for many MANY years.  I loved food and it was just TOO hard.  I learned it’s only hard until you get a glimpse of everything you still CAN eat and how fun it becomes to make your once favorite indulgence foods into something healthy you can eat all the time.  This is why I’m so excited about this blog.  If I had these resources back when I was struggling I think I could have gotten off the hamster wheel much much faster.

This is what I whipped up this morning.  We had two different Niman Ranch brand sausages in the fridge (spicy Italian and chorizo)  that had to be used.  We bought them with the intention of grilling out but the weather didn’t cooperate. Their meats are hormone, antibiotic, and nitrate free.  As for the tortilla wraps, by now you have probably all heard me talk about Doug Kauffaman and his TV show know the cause (which was actually the catalyst in my changing my diet).  He says although most grains are not to be eaten, flour tortillas in moderation are acceptable on his phase II diet. I make sure they are also sugar and preservative free.  Whole foods brand (360) is what we normally buy, we did however just buy a tortilla maker so stay tuned for homemade tortilla recipes!

Sausage Cheese Omelette Wrap

Servings 2

Ingredients
  

  • Sausage (antibiotic, hormone, nitrate free)
  • 3 Organic eggs
  • Organic milk
  • Shredded cheddar or mozzarella cheese
  • Spinach
  • Tortilla wraps
  • Salt and Pepper

Instructions
 

  • Melt butter in a skillet or frying pan.
  • Beat 3 eggs with 2 tablespoons of milk.
  • Pour eggs in pan on medium heat and sprinkle with salt and pepper. When the egg no longer looks wet on top (see my picture at the top of this blog for reference) add your sausage and cheese and sprinkle with spinach.
  • Let cook additional 3-4 minutes before lifting one side of the egg with a spatula folding it over into a moon shape. Cut as desired and roll into the tortilla wrap. Enjoy!

Kaufmann 2 Diet (Kaufmann Phase II)
Flour tortilla wraps are eaten only in moderation on the phase II diet.
