Roasted Tomatoes With Pesto (Kaufmann Diet Friendly)
We made these roasted tomatoes with pesto over a bed of quinoa and brown rice for lunch last week. Watch my video below and I’ll show you how easy it is to make.
What You Will Need For Roasted Tomatoes
- 4-6 roma tomatoes
- 1/4 cup olive oil
- 1 tablespoon jarred minced garlic
- 1/4 teaspoon red pepper flakes – more if you like spicy
- fresh basil
- 3/4 tsp salt (sprinkle more on top once roasted to desired taste)
- 1/2 teaspoon black pepper
- shaved parmesan for the top (optional)
Instructions
- Cut Roma tomatoes in half
- Toss with all ingredients listed
- Roast at 400 degrees for 30 minutes.
- Top with pesto sauce and parmesan shavings (optional if dairy free)
If you are following the Kaufmann diet, this roasted tomato recipe would be considered Kaufmann diet friendly. Specifically Kaufmann 2, formally known as Kaufmann phase 2. The reason this roasted tomato recipe is considered phase 2 is because of the parmesan in the pesto sauce as well as the brown rice. If you omit those ingredients this would be a Kaufmann 1 or phase 1 recipe.
