Maca Chia Pudding

Yes that says “MACA” chia pudding not “MATCHA” pudding.  My intention was to buy matcha powder for it’s incredible health benefits including its detoxifying properties and because it helps fight certain diseases like cancer and diabetes.  Instead I got home, looked at my package and realized it said maca powder.  Sigh.  Now I had to research what exactly maca was before putting it in my recipe.  Turns out it’s a plant that mostly grows in Peru, and is sometimes referred to as Peruvian ginseng.

Besides being a good source of vitamins and minerals, it’s a plant that has been shown to increase libido (yes, they actually have the research to prove it) and make men more fertile.  It can also improve your mood which makes sense if it’s increasing ones libido?  While it wasn’t exactly the benefits I was looking for I decided to make the pudding with maca anyway.  The results?  My husband and I fell asleep watching the news like we do many nights.  No magical maca moments to speak of, but we did enjoy the pudding!  Disclosure – the kids did not like this pudding due to the texture of the chia seeds, I would say this is more of an adults healthy recipe.  For kids,  it might be better to stick with something like this banana chocolate pudding.

 

Maca Chia Pudding

Try this delicious maca pudding recipe which is also a good source of vitamins and minerals... not to mention it's proven to increase libido.

Ingredients
  

Maca Chia Pudding

  • 1 cup Unsweetened almond or coconut milk (I used a blend of both)
  • 4 tbsp Chia seeds
  • 1/2 tsp Vanilla
  • 2 1/2 tsp Xylitol (or more if you like sweeter. You can use maple syrup to taste)
  • 1/2 tsp Maca powder

Toppings

  • Unsweetened coconut (optional)
  • Cashew butter (optional)
  • Cacao chips (optional)
  • Kiwi (optional)
  • Berries (optional)

Instructions
 

  • Mix all ingredients (expect toppings) in a medium size bowl.
  • Transfer to a cup and refrigerate over night.
  • Add any toppings you like.

Notes

Kaufmann 1 Diet (Kaufmann Phase 1)
Kaufmann 2 Diet if using maple syrup.
If using kiwi this is neither Phase 1 or 2.
