Easy Pumpkin Soup (Kaufmann Diet Friendly)

If you are following the Kaufmann diet you may get stumped for Kaufmann diet dinner ideas.  I have you covered.  I have been following the Kaufmann diet for about ten years now.  If you are not sure what the Kaufmann diet is, it is similar to Keto with some exceptions explained under my What Can I Eat tab.

My creamy pumpkin soup recipe is gluten free and dairy free and would be considered Kaufmann 1, formally known as Kaufmann phase 1 diet.

What You Need To Make This Soup Recipe

  • 2 16 oz cans organic pumpkin (nothing added)
  • 32 oz chicken both broth or chicken stock
  • 1 cup light coconut milk
  • 1-2 tbsp olive oil
  • 2 cloves garlic chopped
  • ¼ onion chopped
  • 2 tsp salt
  • ¼ tsp black pepper
  • ¼ tsp thyme
  • 2 bay leaves (remove before serving)
  • dash cumin
  • dash cinnamon
  • dash nutmeg
  • ¼ cup gluten free, grain free flour of your choice
  • salted sunflower seeds for topping (optional)

Instructions for Making Pumpkin Soup

  1. In a large frying pan add 1-2 tbsp of olive oil. Chop the garlic and onion in a food processor then sauté in the olive oil. Stir occasionally. Once garlic and onion are translucent place in a crock pot. Add other ingredients and cook on high for 2 hours or low for 4 hours.
  2. Remove bay leaves and sprinkle salted sunflower seeds on top before serving.

Is Pumpkin Soup Good For You?

I’m so glad you asked!  Pumpkin contains Vitamins such as C, E, and folate as well as antioxidants all which can strengthen your immune system.  Onion and garlic are natural antifungals and can also protect against some cancers.

Coconut milk is a great source of healthy fat and is also a natural antifungal.  If you are unaware of the diseases that fungus and mold can cause please read my story.  Anyone who has lived in a moldy home (knowingly or unknowingly) have been on many rounds of antibiotics or birth control, or eat the Standard American Diet you may have a yeast or fungal issue.  Especially if you have been diagnosed with multiple health issues.

Try this perfect healthy comfort food pumpkin soup recipe!
Course Main Dishes

Ingredients
  

  • 32 oz Organic pumpkin (nothing added)
  • 32 oz Chicken both broth or chicken stock
  • 1 cup Light coconut milk
  • 1-2 tbsp Olive oil
  • 1 tbs Grass fed butter (coconut oil if you are vegan or dairyfree)
  • 2 cloves Garlic chopped
  • 1/4 Onion chopped
  • 2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Thyme
  • 2 Bay leaves (remove before serving)
  • Dash cumin
  • Dash cinnamon
  • Dash nutmeg
  • 1/4 cup Namaste Perfect flour Blend (or a gluten, wheat free flour of your choice)
  • Salted sunflower seeds (optional for toppings)

Instructions
 

  • In a large frying pan melt butter then add 1-2 tbsp of olive oil.
  • Chop the garlic and onion in a food processor.
  • Sauté chopped garlic and onion in butter and 1 -2 tablespoon of olive oil. Stir occasionally.
  • Once garlic and onion are translucent place in a crock pot.
  • Add other ingredients and cook on high for 2 hours or low for 4 hours.
  • Remove bay leaves and sprinkle salted sunflower seeds on top before serving.

Note:  You can also make Pumpkin soup in a Vitamix.  Just make sure you saute’ the onion and garlic first.  Place on the Vitamix soup settings and your soup will be ready in under 7 minutes.
