Guiltless Reuben Sandwich

Today was just one of those perfect days! My husband and I were both off today so once the kids were off to school we had the whole day ahead of us! But first and foremost on my mind was tearing into my order of breads, tortillas, and pizza crusts I received from Guiltless Foods! I have been on the hunt for great tasting wheat and yeast free bread for years now. Not an easy task as many of you know! When I saw Guiltless Foods being endorsed on the TV show Know the Cause I knew I wanted to try it.   So for lunch we decided to make Rueben sandwiches and I call this a “guiltless” Reuben not only because we used Guiltless foods bread but because there is also no thousand island dressing on this sandwich.  Instead we just added some spicy mustard and it was delicious!

We decided the bread tasted a lot like rye and the texture was fantastic!  It was moist and hearty and it did not make me miss regular bread in the least. Their bread is low carb, grain free, preservative free, and made from their signature blend of seeds and egg whites. If you are trying to follow the phase 1 diet or just trying to lose weight I recommend their sandwich bread!  Tonight…guiltless pizza is on the menu, can’t wait!

Guiltless Reuben Sandwich

Try this easy and healthy Guiltless Rueben Sandwich. I call this a “guiltless” Reuben not only because we used Guiltless foods bread, but because there is also no thousand island dressing on this sandwich.  Instead we just added some spicy mustard and it was delicious!
Course Main Dishes

Ingredients
  

  • Guiltless Sandwich Bread
  • Corned Beef antibiotic & hormone free
  • Gouda Cheese Slices
  • Sauerkraut
  • Spicy mustard if desired
  • Beanitos tortilla chips

Instructions
 

  • Stack the corned beef, gouda cheese, and sauerkraut on the bread. I prefer to heat in oven until melted.
  • Add the spicy mustard and a side of Beanitos tortilla chips to complete.

Notes

This sandwich is Kaufmann 1 Diet (Kaufmann Phase I).  Pairing with Beanitos would make it Kaufmann 2 Diet (Kaufmann Phase II). Sauerkraut is a great source of probiotics and contribute to healthy gut flora!
