Chicken Pot Pie Soup & Biscuits

Ingredients
  • 2 chicken breast diced
  • 1½ -2 cup chicken stock (depending on how thick you want it)
  • 2 cups light coconut milk
  • 1 cup Namaste gluten free flour - or any sugar free, gluten free flour (I get no kickbacks from using this flour - I just love it)
  • 6 celery stalks chopped
  • 1 cup frozen peas
  • 1 cup carrots chopped
  • ½ yellow onion chopped
  • 3 garlic cloves chopped
  • 1 tsp thyme
  • 2 tsp salt
  • 1 tsp black pepper

Instructions
  1. Cook chicken, cut into cubes and set aside. Place onion and garlic in food processor.
  2. Place all ingredients in crockpot and stir well. Cover and cook for 3-4 hours on high.
