Creamy Cheesy Broccoli Soup...And Are you an Eagle or a Chicken?

  • 13.5 oz can light Coconut Milk
  • 1 head broccoli
  • 1 bag shredded cheddar cheese
  • 2 cloves garlic
  • 2 tsp salt
  • ¼ tsp thyme
  • ¼ onion chopped
  • 32 oz of chicken or bone broth
  • ¼ tsp black pepper
  • ¼ tsp parsley
  • ¼ cup gluten free flour
  • 2 tbsp butter
  • 1-2 tbsp olive oil
  1. In a large frying pan melt 2 tbsp of butter then add 1-2 tbsp of olive oil. Chop the garlic and onion in a food processor then sauté in butter and 1 -2 tablespoon of olive oil. Stir occasionally. Once garlic and onion are translucent place in a crock pot. Add other ingredients and cook on high for 4-5 hours or on low for 8 hours.
  2. If you have the Cuisinart 3:1 crockpot you can sauté the onion and garlic in the crock pot.
Note: This recipe is neither Phase 1 or 2 due to the cheddar cheese in this recipe
