  • 1 package of Against the Grain Rolls (they are yeast/wheat/sugar free)
  • 2 pounds of pork roast (shoulder or butt)
  • Barbeque Sauce - This bbq sauce recipe is from Doug Kaufmann's book "Eating your way to good health"
  • 2 tablespoons melted butter
  • 2 tablespoons chopped green bell pepper
  • 1 cup water
  • 1 cup tomato juice
  • 2 teaspoons mustard power
  • 1 teaspoon salt
  • 1 teaspoon celery seed
  • 2 tablespoons honey or (stevia to taste)
  • 2 teaspoons lemon juice
  • Instead of chips on the side try Beanitos, they are such a great alternative and the pinto bean flavor is very similar to a corn chip!
  1. Place pork and ½ cup of water in a crock pot. Cook on low for 8 hours or on high for 4 hours.
  2. Once the pork is done it will be so tender you can split it with a fork. Remove the pork and place in a large bowl. Add your homemade barbeque sauce and roughly pull the pork apart with a fork. Serve on against the grain buns and top with coleslaw if desired.
