Chocolate Muffins & My Interview on “Know The Cause”

Chocolate Muffins & My Interview on "Know The Cause"

Recipe type: Dessert
 
Ingredients
  • 5 tbs of butter
  • ½ cups xylitol or monk fruit
  • 2 eggs
  • ¾ cup coconut milk
  • 1 tsp vanilla
  • 3 tbs cocoa powder
  • ½ cup coconut flour (I use Bob's Red Mill)
  • ¼ cup almond flour
  • ¼cup tapioca flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • ¼ baking soda
  • ¼ cup sugar free chocolate chips such as Lily's chips
  • walnuts optional
Instructions
  1. Preheat oven to 350 degrees
  2. Place cupcake holders inside cupcake tray
  3. Mix all dry ingredients in a medium size bowl
  4. Mix all wet ingredients in a separate bowl
  5. Combine wet and dry ingredients
  6. Using a spoon fill the cup cake holders ¾ way full
  7. Bake for approximately 22-25 minutes (or when toothpick comes out clean)
