Homemade Caramel Pumpkin Coffee Creamer (and 7 Ways to Slow Aging)

It’s time for the pumpkin recipes and I have a great one for you.  Homemade Caramel Pumpkin Coffee Creamer.  I have never had a cup of coffee in my life for no reason other than I never liked the taste. My husband on the other hand feels the world is coming to an end if he can’t have a cup first thing in the morning and hey I get it, we all have our vices.  He also gets extra excited at the thought of trying new creamers, so this homemade caramel pumpkin creamer recipe is for him (and you fellow coffee lovers) and the rest of this post is for those who love all things anti-aging like me!

We are learning so much about aging that we really have a leg up on our mothers who really only knew how to manipulate the outside (plastic surgery) but now we have so much knowledge on how we can manipulate what is happening on the “inside” of us and as I like to say “catch it before it falls”.  There is also this novel concept of replacing what we are deficient in instead of giving into that prescription medication for everything that ails us.   I’ll explain more on this below, but now lets get to the 7 “ways”.  I am going to put these in the order of personal importance.

7  Ways to Slow Aging

1) Eat organic food whenever possible.  I know it’s more expensive.  You would cringe if I told you how much money I have spent on surgeries, doctor appointments, prescriptions for compound drugs that my insurance didn’t cover, infrared saunas, acupuncture, allergy shots, and much more clinging to hope these things would bring back my health.  They didn’t.  The biggest and most dramatic result came from my drastic change in diet.  My diet was pathetic.  I was feeding my broken body preservatives, dyes, artificial colors, chemicals, antibiotics, hormones and pesticides.  There was no supplement or prescription in the world that could help me as long as I continued putting poison in my body.  Have you ever heard this phrase “pay the farm now or pay the pharm later”? It’s true, and clean organic food really is the miracle “medicine”.

All of my recipes on my site follow the “Kaufmann Diet”.  A word about sugar, insulin is a major player in aging.  Sugar ages your skin, heart, brain, and entire body.  Let food be thy medicine and let medicine be thy food – Hippocrates.

2) A clean environment.   When we decide to eat organic, it’s because we have decided to ditch the toxins in our food,  but we also need to be concerned with the chemicals and toxins in our environment.  Recently I had the privilege of getting extensive testing (both blood and urine tests) and it was an eye opener.  I wasn’t just exposed to toxic mold in my past but also to petro chemicals in extremely large amounts.  We need to clean up our environment and detox our bodies to get our immune system ready for the challenge to heal.  There are ways you can test your home for mold with mold plates as well as safe antifungal sprays you can use in your home on a weekly basis to cut down on mold spores.

HEPA filters are fantastic and work really well to remove harmful particles in the air.  Switching over to more natural cleaning agents in your home can also lift some of the toxic burden off of your body.  A toxic body will cause damage and deficiencies which can age us faster on both the inside and the outside.

3) Feed and protect your mitochondria and telomeres.  What’s that mean?  Telomeres are a form of protection of our DNA at the end of chromosomes and our mitochondria have often been referred to as “the power plants” within our cells that produce the energy our body needs. If they are not healthy you are not healthy.  The length of your telomeres is linked to your life expectancy, they can grow back and here’s something interesting, there was a study that showed meditating resulted in longer telomeres compared to those that didn’t meditate.

Renowned cardiologist Dr. Stephen Sinatra suggests supplementing with what he calls the “awesome foursome” (CoQ10, L-carnitine, D-Ribose, and magnesium).  Not just to ward off problem with the heart but to help feed your mitochondria.  Also, toxins and chemicals in our environment and food can cause damage to telomeres and mitochondria.  He has many fascinating books discussing the link between heart problems and our emotional health.  If you haven’t read “Health Revelations from Heaven and Earth” I highly recommend it.

4) Gut health.  Do you have acid reflux or constant burping?  Then your gut is sending you signals.  We can’t be healthy if our gut isn’t healthy as we know almost 80% of our immune system is in our gut.  Many of you know I was on Pepcid AC and Nexium for 14 years, my gut was destroyed by decades of antibiotic use.  The maximum you should ever take of these medications is two weeks.  I did tremendous damage to myself that takes years to recover from.  We need our stomach acid to digest and properly absorb our food!  I had a well intentioned gastroenterologist who told me my severe reflux was caused by too much stomach acid.  Wrong. Sadly most physicians will tell you that and write you a script for some cancer causing antacid drugs.

It was a man working in the supplement section of a grocery store who told me to take Betaine Hydrochloric Acid with Pepsin, half way through a meal that has protein.  Hydrochloric acid adds acid and it was a life changer.  You actually see results instantly.  Digestive enzymes, probiotics, and colostrum play a big role in gut health as well.   I plan on dedicating an entire post to acid reflux soon because I think it’s that important to living a longer, healthier life.

5) Less stress and more sleep.  I know, easier said than done.  Meditation and even napping when you feel tired if you can’t get a full nights rest. I am a big fan of the power nap!  The word meditation can sometimes bring weird images to mind for some, but it can mean something very simple.  I have a yoga mat in front of my pool and I just stretch, thank God, and try to be still for 5 or 10 minutes.  It really helps with anxiety.

6) Supplementing with what we lack.  Recently I had extensive blood and urine tests in order to get a peek of what is happening on the inside.  It was an eye opener!  Typical blood work drawn by a doctors is normally cholesterol check, insulin, thyroid (which is usually incomplete as they rarely test for TPO antibodies)  I wish more doctors would run tests that check our amino acid levels, and organic acids test (especially if you were exposed to toxic mold).  As well as complete hormone levels, complete thyroid and gastrointestinal markers.
We are free to ask our doctors for some of these tests and of course chances are they will say no, but life extensions can run different labs for you without a doctors prescription.  Sadly insurance probably won’t cover it, but hopefully someday this changes.  One of the major things my results revealed was I was low on many amino acids (which goes back to gut health) armed with this information I can now not only supplement, but continue to work on the damage to my gut from toxic mold, antibiotics, and decades of bad eating.

Some anti-aging favorites:

NAD Cell Regenerator – Nad helps to repair cellular DNA breaks.

Collagen – collagen is a fantastic anti-aging supplement. While it’s busy doing its job helping your skin look firmer by increasing collagen levels, it also improves liver function, helps heal leaky gut, and is good for heart health.

CoQ10 – reduces free radical damage, good for fatigue, heart health, this is a good supplement to take for people who have to be on statin drugs.

NAC -Promotes healthy cellular glutathione levels, powerful antioxidant support and supports the immune system

Senolytic Activator – This supplement is only taken once per week and can cleans out old cells (cellular debris) which helps reverse the aging process, promotes youthful, healthy cellular function, helps the body manage senescent cells

7) Bioidentical hormones  (if needed).  Just last year I was asked if I wanted to start on hormone replacement and my answer was NEVER.   Synthetic hormones are well documented to cause an increase risk of cancer.  Plus why would we use pregnant horse urine thinking it’s close enough to the hormones humans need? Then I got a hold of Suzanne Somers book called “I’m too young for this”.  Suzanne interviews experts on the topic of bioidentical hormones vs synthetic.  While “synthetic” increases our risk of cancer and other health issues, bioidentical hormones made from yams and soy are different.  They are proven to decrease the risk of some cancers and other aging related diseases.

This caramel pumpkin coffee creamer recipe but appear to be high in sugar but it is not.  You are only using a tablespoon at most at a time.  You can make this sugar free by substituting the maple syrup for xylitol. Although I caution this because I tried it with monk fruit and it was NOT the same result.  Because my husband is sensitive to xylitol, I used maple syrup.  This creamer should last about 2 weeks in the fridge.

Homemade Caramel Pumpkin Coffee Creamer

Try this amazing homemade caramel pumpkin coffee creamer that is sure to please any coffee drinker!
Course Drinks

Ingredients
  

Homemade Caramel Sauce

  • 1 cup Coconut/almond milk blend (I used Califia Farms)
  • 1 tbsp Heavy whipping cream
  • 6 tbsp Organic maple syrup
  • 1/2 tbsp Organic grass fed butter
  • 1 tsp Vanilla extract
  • 1/8 tsp Sea salt

Caramel Pumpkin Coffee Creamer

  • 1 cup Coconut/almond milk blend (I used Califia Farms)
  • 1 cup Heavy whipping cream
  • 8 tbsp Organic maple syrup (you can make this is sugar free by using monk fruit or xylitol but I have not made it this way yet so I can't vouch for it.)
  • 1/2 cup Pumpkin puree (not pumpkin pie filling)
  • 4 tsp Pumpkin pie spice
  • 1 tsp Vanilla extract
  • 3-4 tbsp Homemade Caramel Sauce (depending on how sweet you like it)

Instructions
 

Caramel Sauce Instructions

  • Place all ingredients in a medium sized sauce pan on medium heat.
  • Bring to a boil stirring almost constantly with a whisk.
  • Once it boils reduce temperature to med-low and let simmer for 16-20 minutes while stirring VERY frequently. This part takes patience but it will thicken!
  • Once the caramel starts to stick to your spoon a bit it's done (mine took about 20 minutes after I reduced to simmer). NOTE- make sure the sauce is simmering (gentle bubbling in the pot) otherwise it can take up to 35 min to start to thicken. Be careful not to over cook it or it will be too thick. It will continue to thicken after you remove it from the stove.

Coffee Creamer Instructions

  • Place all ingredients in a saucepan and stir with a whisk until pumpkin puree and all ingredients are well blended. (about 1 -2 minutes)
  • Add 3-4 tablespoons of the homemade caramel sauce depending on how sweet you like it.
  • Place in a glass jar and store in the refrigerator up to two weeks.

Notes

UPDATE- I tried it substituting maple syrup for monk fruit and I do NOT recommend it, it was not the same result.
My husband did not drink his coffee with the whipped cream and extra caramel sauce this was fully for photographic effect 🙂

Green Tomatoes Caprese (Kaufmann Diet Friendly)

These Oven Fried Green Tomatoes are grain free, gluten-free, and are Kaufmann diet friendly.  If you are following Doug Kaufmann‘s diet this would be just fine on the Phase 2, also known as Kaufmann 2.  If you are not sure what the Kaufmann diet is, I have a full explanation in my article titled What Can I Eat as well as my television interview on Know the Cause discussing my years of chronic illness due to mold exposure.

What You Need For Tomatoes Caprese

  • 1/2 cup almond flour
  • 2 large green tomatoes
  • 1/2 cup coconut flour
  • 1 cup tapioca flour
  • 1 egg
  • 1/4 -1/2 cup coconut milk (or any milk of your choice)
  • mozzarella cheese in the shape of a ball you can slice
  • salt

Instructions

  • Heat oven to 400 degrees.
  • Mix egg and milk in a bowl.
  • Place all flours and salt and pepper and mix in a separate bowl.
  • Cut the green tomatoes about 1/4 inch thick.
  • Fully submerge tomato slice in the egg, then in the flour, then once again into the egg mixture and flour for a second time.
  • Place parchment paper over a baking sheet and grease the paper well. Add more salt and pepper before placing in the oven.
  • Bake for 20 minutes and turn them over half way through baking. You can also fry these in coconut oil. I have made them this way as well and it’s delicious.
  • Slice cheese in 1/4 inch slices and place between tomatoes AFTER they come out of the oven. My husband loves to put either a sugar free balsamic glaze or pimento cheese spread on his. Enjoy!

Oven Fried Tomatoes Caprese (Kaufmann Diet Friendly)

Course Main Dishes

Ingredients
  

  • 1/2 cup Almond flour
  • 2 Large green tomatoes
  • 1/2 cup Coconut flour
  • 1 cup Tapioca flour

  • Mozzarella cheese (in the shape of a ball to slice)
  • Salt

Chocolate Chunk Cookies (Kaufmann Diet Friendly)

My son and I headed to the beach for the day to relax and to make our favorite chocolate chunk cookies (Kaufmann diet Friendly of course!)  If you are not sure what the Kaufmann diet is, it’s a lower carb and low-sugar diet for the purpose of starving pathogens such as yeast and fungus which are responsible for many health problems.   This recipe would be considered fine as a Kaufmann Phase 2 dessert, also known as Kaufmann 2.

What You Will Need for Chocolate Chunk Cookies

  • 1 cup cashew or almond butter ( I used cashew butter)
  • 1 cup unsweetened coconut flakes
  • 1 bar of Lily’s Chocolate (it’s sweetened with Stevia) – I use the Milk chocolate Salted Caramel or the Milk Chocolate with Hazelnuts
  • 5 tbsp xylitol
  • 1/2 tsp vanilla
  • 1 organic egg
  • pinch of chia and flax seeds

Instructions

Ingredients

  • pinch Chia and flax seeds

Instructions
 

  • Preheat oven to 350 degrees.
  • Add coconut flakes, cashew butter, xylitol, egg, and vanilla into a bowl.
  • Chop up Lily's Chocolate bar into small chunks and add to mixture.
  • Sprinkle in some chia and flax seeds to the mixture.
  • Mix well for a dough like consistency.
  • Spoon portions of the dough onto a cookie sheet (15-20 cookies depending on size).
  • Bake for 10 minutes at 350 degrees
  • Let cool and serve!

To The Fatherless on Fathers Day + Sugar Free Blueberry Muffins

Happy Father’s day!  Many of you that know my past,  know I didn’t have the best example of a father growing up.  Today I wanted to share a story from my book about our difficult childhood.  Not to feel sorry for us, but to see how God can bring us OUT of hardship, replace lost love, and even bless us for our troubles.  In Isaiah 61:7 God promises us “double” for our former shame.  I didn’t have a biological father that treated me right but God did give me TWO fathers later in life that helped me regain trust in men and changed my life forever.  Below is an excerpt from my book that I hope you enjoy!

Because we have a lifetime of “material” my sister and I  didn’t know where to start  so we thought the best description would be a “day in the life’ for his two daughters.   A typical Saturday for his two girls ages 8 and 11 went a little something like this..…

According to our father sleep was for the lazy, so as soon as the sun rose  we would be awoken by our window shades being pulled up and his command for us to “rise and shine”.  Sounds nice enough doesn’t it?  But “rise and shine” meant get outside and start working on the yard and NO phone calls, NO bathroom breaks, and NO breakfast until the job is done! Our land consisted of  ½ acre but it felt like a ranch to us after moving to upstate New York from the Bronx.  Understandably this yard meant a lot to our father who was a city person his whole life, living in apartments and working in high rises, but deep down he was born to be outside.  Our father’s “passion” for his land translated into hours of US girls raking, pulling, mowing, trimming, moving dirt and rocks from one place to another and then there was the dreaded “barrel pull”.   Hours worth of raked leaves would have to go SOMEWHERE so he would have us place them in a plastic barrel (almost as tall as we were) and dispose of them in the woods (AKA our neighbor’s property).

Being new to the neighborhood, and coming from the Bronx with our funny accents, and not to mention we were children of a father that seemed a little crazy, did not make us popular.  The barrel pull only added to our reputation.  While all the other “normal” kids rode their bikes and roller skates up and down the street, we walked the barrel uphill 200 yards as the kids chanted  “look at them, all they do is work work work”.   Our father, not wanting to be left out, would add to the dialogue by standing at the bottom of the street yelling for us to “pick up the pace”!  For unknown reasons, our father called us “Charlie” and not in an endearing way.  He would say, “you’re really asking for it Charlie” or “stop dragging it, if that barrel gets a hole in the bottom of it I’ll cripple you”.  My sister and I would both say to each other “he’s talking to you Charlie”.   Did this experience grow discord amongst my sister and I?  Of course it did! My sister Christine’s recollection,  “after a couple hours into our day my sister would experience the beginnings of an asthma attack.  I hate to admit this and now feel guilty about it, but I hated her for it. The asthma attack meant that she could possibly convince my parents that she needed to stop working and I’d be out there on my own for twice as long.  I thought she faked it.  Now looking back she went from the allergy ridden outdoors into the mold infested indoors that started her journey of chronic illness”.

While we were outside working, our father loomed large over us either working alongside us or watching us from a window.  His approval of our work, technique, or general being was never positive.  He watched us with disgust, while lashing verbal insults regarding how lazy we were, how we were holding the rake incorrectly, and of course, how stupid we were because he had showed us how to hold it correctly hundreds of times before.  eventually, and without fail, he would rip the rake out of our hands and demand that we watch another stellar performance of Dad raking like a gold medalist.  We watched and thought to ourselves, he’s raking the exact same way we’ve been raking!  We could see the vein in his forehead bulging, we could hear the disdain and anger in his tone, and we felt the shame that went along with  just not being good enough.

Once done working, you started to plan your opportunity to bathe.  Our father felt bathing was a luxury not a necessity.  We would check the windows to see where he was in the yard, turn on the bath and walk from window to window to keep an eye on him.  If you lost site of him, you needed to turn off the water immediately until you could safely locate him outside.  Our baths could only be a few inches deep.  If caught and you were found to have more than a few inches of water, this would bring on a tirade and a heavy dose of sarcasm.  “Who do you think you are,  the Queen of Sheba?”   I didn’t know who the Queen os Sheba was, but if she was allowed to fill her bathtub with more than a few inches of watch and bathe undisturbed, I knew I wanted to be her!

Now that we are adults with our own children our former childhood rules seemed harsh, nonsensical and often strange. Other rules included no daytime television, no aimless sitting or reclining in any way unless it is bedtime, no laughing, no talking loudly, no making noise as you walked up the stairs.  Also, bedroom doors had to be open at all times, no opening or closing windows. Period!  There were also rules for knocking and ringing the door bell which we never seemed to get right, but each one of our rules has a wonderfully rich and funny story.  Every time we siblings get together, we reminisce and find ourselves in bouts of laughter.    

On rare occasions our father would get a stroke of conscience.  He was unable to show us affection so his awkward attempt was to throw sour ball candy at the back of our heads as some sort of apology or possibly it was his way of extending some sort of olive-sour ball branch.   I know our childhood sounded tough, and at times it was, but for all the pain there were positives that shaped us, and for that we are grateful to our father.  Our father had such a strong sense of responsibility and we learned from him or perhaps mimicked him in several areas.  We all have a tremendous work ethic.  I don’t remember one day my father called in sick to work and my sister and I follow suit. We have learned the value of money.  Nothing came for free in our house.  Everything had to be earned, worked, and saved for.  Our bizarre childhood also gave us a wonderful opportunity to create and sharpen our sense of humor.  

I’m sure most of us  have something to be grateful to our fathers for. Now it’s time to celebrate your father no matter what type of father you had or have.  Let’s celebrate and make some muffins.

RECIPE:

INGREDIENTS
  • Fresh organic blueberries (1/2 -3/4 cup) I like to use a lot and save some for the top!
  • 2½ tbsp lightly salted organic butter
  • ¼ cup xylitol
  • 1 egg
  • ¼ cup coconut milk
  • ½ tsp vanilla
  • ¼ cup coconut flour – we use a lot of Bob’s Red Mill around here
  • ⅛ cup almond flour
  • ⅛ cup tapioca flour
  • ⅛ tsp salt
  • ⅛ tsp baking powder
  • ⅛ tsp baking soda
INSTRUCTIONS
  1. Preheat oven to 350 degrees
  2. Place cupcake holders inside cupcake tray
  3. Mix all dry ingredients in a medium size bowl
  4. Mix all wet ingredients in a separate bowl
  5. Combine wet and dry ingredients
  6. Add ¾ of the blueberries to the mix and stir gently
  7. Using a spoon fill the cup cake holders ¾ way full
  8. Add some blueberries to the top of your muffins
  9. Bake for approximately 25-30 minutes (or when toothpick comes out clean)
  10. Let muffins cool for 30 minutes before eating
  11. Makes 6 muffins

How To Make Homemade Everything Bagels (Yeast, Dairy & Gluten Free)

These homemade everything bagels may be free of dairy, and gluten but don’t let that scare you.  They are delicious!  Oh, and for those of you that avoid yeast, they are also yeast free bagels.

As a general rule, all you need to make any gluten-free everything bagels, or any type of bagel, is to have a great gluten-free flour alternative on hand.  These are yeast free bagels, dairy free and gluten-free.  Read on and I’ll show you how to make homemade bagels that are crunchy on the outside and soft on the inside.  My son, a picky eater, just rated them a 10 out of 10.  

What You Need To Make Homemade Everything Bagels

Don’t use any substitutions in the flour or the yogurt.  I tried this recipe with a dairy yogurt as well as a different gluten free flour and it was too sticky to handle.

1 cup flour – I used Bob’s Red Mill 1 to 1 baking flour
1 cup Almond milk yogurt plain – I used 360 Brand
2 teaspoon baking powder
dash of salt
1 egg white (to use on top as the the egg wash)
Trader Joes Everything everything but the bagel seasoning for the top

Make 4 balls with the dough and place them on the parchment paper before gently pressing down on each ball.  Then proceed to make the hole (see directions) …..

Instructions For Making Homemade Everything Bagels

  • Preheat oven to 375.
  • Mix all ingredients except egg and everything bagel seasoning.
  • Pick up dough and roll into several balls the size of bagels, the dough is not too sticky to handle.
  • Place them on parchment paper and slightly push down on them.
  • Coat your index finger with flour and create a hole in the middle of the bagel.
  • Use the egg wash on top before placing in oven.
  • Bake for 25 -27 minutes.

Everything Bagel (Dairy, Gluten and Yeast Free)

Try these amazing dairy free, gluten free and yeast free Everything Bagels!
Course Breakfast

Ingredients
  

Instructions
 

  • Preheat oven to 375.
  • Mix all ingredients except egg and everything bagel seasoning.
  • Pick up dough and roll into several balls the size of bagels, the dough is not too sticky to handle.
  • Place them on parchment paper and slightly push down on them.
  • Coat your index finger with flour and create a hole in the middle of the bagel.
  • Use the egg wash on top before placing in oven.
  • Bake for 25 -27 minutes. Makes 4 bagels or 8 minis. Enjoy!

Notes

This would not fall under the Kaufmann diet due to the white rice and potato starch in the flour. This is one of the very few recipes you will find on my site that does not fit the Kaufmann diet as I do like to follow that way of eating 90% of the time.

Try this delicious healthier version of a Reeses Cup! You will be surprised!
Course Desserts

Equipment

  • Cupcake liners

Ingredients
  

  • 1 cup Lily's Mild Chocolate chips
  • Salted Almond Butter (if you use peanut butter make sure it's valencia peanut butter as they do not normally contain the mycotoxins found in commercial peanut butter.)

Instructions
 

  • Place tiny cupcake liners in a large Tupperware container.
  • Melt about 1 cup of the chocolate chips on medium to low heat. You want to time this just right and not over melt it as it will go from a liquid to back to a lumpy solid very quickly.
  • As soon as the chocolate is melted, spoon a small amount of chocolate into the cupcake liners.
  • With a different spoon, spoon desired amount of almond butter on top of the chocolate.
  • Place the rest of the chocolate on top of the almond butter and freeze for about 30 minutes to an hour.
  • Keep in the freezer until ready to eat.

The Best Chewy Chocolate Chip Cookies (Sugar Free and Gluten Free)

Enjoy this sugar free, gluten free chocolate chip cookie recipe. These cookies would be considered Kaufmann 1 diet friendly (also known as Kaufmann Phase 1.)
Course Desserts, Snacks

Ingredients
  

  • 1 cup Almond flour (use a super fine almond flour- no grit to it)
  • 1/2 cup Tapioca flour
  • 1 Egg yolk (you can save the whites for another time/meal)
  • 4 1/2 tbsp Salted butter melted
  • 5 1/2 tbsp Xylitol
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/2 tsp Xanthan gum - I tried leaving this out and the texture was not the same (omit this if you are on Kaufmann diet)
  • 1/2 cup Lily's chocolate chips (milk chocolate)
  • 1 pinch Salt

Instructions
 

  • Preheat oven to 350 degrees.
  • Melt butter and put aside.
  • Mix all dry ingredients in a medium size bowl. Add all other ingredients except chocolate chips and mix well. Batter may seem dry at first, use your hands to mix dough, it becomes moist quickly.
  • Add chips and stir.
  • Place parchment paper over cookie sheet and spray with non-stick.
  • Make cookies into balls place cookies on parchment paper leaving an inch in between, slightly press down on the cookies to flatten.
  • Bake for 10 minutes.
  • Only let cool 1 minute before transferring to plate. Makes 13 cookies.

 

Chicken Pot Pie Soup & Biscuits (Gluten Free)

Hello my friends,  it sure has been awhile.  Since most of us may now have a little bit more time at home, I will share some of the recipes I have been making and this chicken pot pie soup is one of them.  What I didn’t want to do was write a post about the virus, as the last thing everyone needs is more unsolicited advice, but shortly I will start to do Facebook “lives” and we can discuss, well, just about anything you want to!  Doug Kaufmann (Host of “Know the Cause”) will be one of my first guests and I will try to host them with a different person each time.  Sometimes doctors who can answer our questions, and sometimes people who just inspire me and I that I think would inspire you as well!   We will talk about health, disease, food, emotions, marriage, and healing (ALL TYPES OF HEALING).  Enjoy, and coming up a chocolate chip cookie recipe that is sugar and gluten free.  I have been trying to make chocolate chip cookies that are gluten free for about a year.  They were never good enough to share….until now.  Enjoy and see you soon on FB live!

Chicken Pot Pie Soup

Enjoy this hearty and healthy Chicken Pot Pie Soup recipe!
Course Main Dishes

Ingredients
  

  • 2 Chicken breast diced
  • 1-1/2 cup Chicken stock
  • 2 cups Light coconut milk
  • 1 cup Namaste gluten free flour (gluten free flour or any sugar free)
  • 6 Celery stalks chopped
  • 1 cup Frozen peas
  • 1 cup Carrots chopped
  • 1/2 Yellow onion chopped
  • 3 Garlic cloves chopped
  • 1 tsp Thyme
  • 2 tsp Salt
  • 1 tsp Black pepper

Instructions
 

  • Cook chicken.
  • Cut cooked chicken into cubes and set aside.
  • Place onion and garlic in food processor.
  • Place all ingredients in crockpot and stir well.
  • Cover and cook for 3-4 hours on high.

Easy Cheddar Biscuits (Gluten Free) in 10 minutes

These cheddar biscuits are not the Reeses cup smoothie I said was coming your way, but they are just as good especially if you miss warm bread!  I have the habit of experimenting with recipes and when they come out great, I jot them down on a piece of old mail usually never to be seen again.  That is what happened with the smoothie recipe and I just could not seem to duplicate it, so I went with these biscuits.  I don’t think you will be disappointed…. especially if you haven’t had bread in awhile.

Some exciting things are coming up.  I am going to start doing Facebook “Live” so you can come ask questions and learn from others questions, and Doug Kaufmann – host of the television show “Know The Cause” will be joining as my first guest!

Easy Cheddar Biscuits (Gluten Free)

Try this quick and easy gluten free cheddar biscuit recipe.
Course Breads and Muffins

Ingredients
  

  • 1 cup Namaste Perfect Flour Blend
  • 1 Egg
  • 4 tbsp Grass fed butter (cooled)
  • 3/4 cup Cheddar cheese
  • 4 tbsp Milk (I have used both a quality dairy milk, and almond milk in the past for this recipe)
  • 1 tsp Xylitol
  • 1/2 tsp Baking soda
  • 1 1/2 tsp Baking powder
  • 1/4 tsp Salt

Instructions
 

  • Heat oven to 450 degrees.
  • Spray cookie sheet with non stick.
  • Cut butter into 4 pieces.
  • Place all ingredients in food processor and mix well.
  • Drop biscuits on cookie sheet and bake approximately 8-10 minutes. I start checking the oven after the 6 minute mark as the size of the biscuit will depend on how long they take to turn golden brown. Enjoy!

Notes

Many recipes will tell you not to mix all ingredients together or blend too long. With this recipe I found placing ALL ingredients in the food processor at the same time and blending it really well works perfectly.
