Bacon Avocado Egg Salad

I found the picture below on social media and found it both eye opening and fascinating.  Pictured below are school lunches from around the world in comparison to a typical American school lunch. Why do we feed our kids this way? It got me thinking about my son’s diet. Although his diet is MUCH better than it was and we’ve come a LONG way, there is still room for improvement. I have been letting him buy school lunch as the fight over packing his lunch was exhausting.  Well the fight is back on! It’s time to bump up his nutrition to another level. After a bit of negotiating we agreed he would pack lunch twice a week.  Hey it’s a good start.  Remember he was born eleven years ago, back when his mother was all junk food all the time.  I remember taking delight in feeding him cakes and sugary treats because I loved watching his little face would light up! Boy, I wonder if he sometimes misses his “old” mom.  I am happy to report that he’s actually excited about the change.  His dream is to become a professional football player so he’s willing to do (and eat) anything he has to achieve that goal. He has even asked me to become his personal nutritionist to help get him there. My reaction? I think we were in the car and on our way to the store picking out lunch foods within 15 minutes. A little overboard I know but I’ve been waiting for this day!

Here is our first packed lunch.  I’m so excited about this! Not only is it packed with protein from the eggs and yogurt, but the yogurt also contains probiotics, and the tomato (which may or may not end up in the school garbage can) supports heart health and is an excellent source of Vitamin C which can combat the formation of free radicals known to cause cancer.  His snack is a side of guacamole and Beanito chips, again some great healthy fat and protein from the avocado and the Beanitos are made from 100% navy beans (but they taste JUST like a corn chip).

I will be posting more lunch ideas as we work on this with a little trial and error (he’s a very picky eater).  If any of you have any good lunch ideas for kids I’d love to hear them!

Course Main Dishes

Ingredients
  

  • 2 strips Cooked bacon
  • Tortilla wraps (make sure they are yeast free)
  • 2 Organic eggs
  • 1 Handful of spinach leaves
  • 1 Medium avocado
  • 1 Tomato
  • 1/4 cup Plain yogurt
  • 1 tbsp apple cider vinegar
  • 1 dash Tarragon
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Place eggs in a saucepan and cover with water. On medium heat bring eggs to a boil. Then cover and remove from heat and let sit for 10 minutes.
  • Take eggs out of water with a spoon and place in a bowl. Put eggs in the refrigerator for 20 minutes to cool.
  • While eggs are cooling fry your bacon in a saucepan until crispy.
  • Peel eggs under cold water.
  • In a bowl mix the eggs with yogurt, apple cider vinegar, tarragon, salt and pepper. Cut avocado into chunks and lightly toss with your egg salad.
  • Place egg salad on wrap. Add bacon and top with spinach and tomato if desired.
