How to Make Delicious Crispy Coconut Onion Rings (Gluten Free)

I hope you enjoy these delicious crispy coconut onion rings.  The little side of aioli added even another layer of flavor to this bar food classic.  Below I also included a recent television interview I did on NBC.  I show you how to make my chocolate chip oatmeal bites while I talk about autoimmune disease, heart and gut health and the exciting new interviews in my second edition Eat Pray Get Well book.

What You Will Need To Make Coconut Onion Rings

Onion
Organic egg
Namaste Perfect Flour Blend (or any gluten free flour of your choice)
Chia seeds
Coconut milk
Coconut oil
Grass fed butter
Salt
Pepper

Shredded coconut optional

Instructions for Coconut Onion Rings

  • Slice onion into rings.
  • Mix egg and coconut milk in a bowl and set aside.
  • Melt butter and coconut oil in a large skillet on medium to high heat.
  • In a separate bowl mix Namaste flour with salt, pepper, coconut flakes and chia seeds. Dip onion in egg batter then into flour.
  • Place into oil once the oil is very hot. Fry on each side about 1-2 minutes or until golden brown.

Aioli Recipe

Simply mix 2 -3 tablespoons of yogurt with red pepper flakes, salt, pepper, and garlic powder to taste.

Course Snacks

Ingredients
  

  • 1 Onion sliced into rings
  • 1 Organic egg
  • 1/2 cup Namaste Flour Blend
  • 2 tbsp Unsweetened coconut flakes (optional)
  • 1 tbsp Chia seeds
  • 1 tsp Coconut milk
  • 4 tbsp Coconut oil
  • 1-2 tbsp Grass fed butter
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
