Stuffed Poblano Peppers

Looking for more recipes where you can ditch the bread and use real food as wraps?  This stuffed poblano pepper recipe is pretty much like a burrito gone healthy.  You can enjoy all the flavors of a Mexican meal while still nourishing your body!

 

The poblano pepper is relatively mild so the nice thing about this dish is you can make it as spicy (or not) as you’d like.  The Crunch Pak green apples add just the right amount of sweetness to this savory dish.  

Nutritional break down of this meal: (the exciting part)!

Poblano Peppers – one poblano pepper contains 25% of the daily recommended dose vitamin b2 and riboflavin.  Riboflavin is what helps fight off cancer cells.  They also are great for the immune system and reduces inflammation.

Avocado – there are so many good thing about avocado, where to even start?  They are heart healthy, have more potassium than bananas, can help lower cholesterol, contain a lot of fiber, help fight cancer, and promotes healthy skin, hair, and eyes.

Green Apples – high fiber content, contain antioxidants, help lower cholesterol, contain potassium and vitamins like K and C.

Tomato – contains nice amounts of vitamins B6, A, C, potassium, and iron. Good for your heart, vision, and digestion.

Yogurt Cheese – my favorite reason to eat yogurt cheese, it provides a nice little dose of probiotics!

Stuffed Poblano Peppers

Ingredients
  • ¾ lb organic grass fed beef
  • 4 poblano peppers
  • ¼ yellow onion (optional)
  • diced Crunch Pak apples (green tart apples)
  • 1 tomato diced
  • yogurt cheese
  • ½ package simply organic taco seasoning (has no preservatives or fillers)
  • 1 avacado
  • jalapeños and a clean salsa (no sugar/preservatives) for topping (optional)
Instructions
  1. In a medium skillet brown ground beef and onion, add taco seasoning. Cut peppers lengthwise and clean out seeds. Preheat oven to broil. Remove beef and add tomato and apple. Stir. Stuff peppers with meat and top with yogurt cheese. Broil about 5-7 minutes. Garnish with avocado, jalapeno, and salsa. Enjoy!
