Today Bob and I are celebrating our ONE year wedding anniversary.  For those of you who don’t know the story.  Bob was married to my good friend Laura.   My family and Laura’s family grew up together in Bronx, NY and we all considered ourselves family.  I eventually moved to Florida as did Laura soon after.

In July of 2012 Laura passed away from Melanoma.  I’ll do my best to describe Laura but my words won’t do her justice.  She was the most generous, thoughtful person you could ever meet.  She was always thinking of others before herself.  Maybe the biggest example of this selflessness was what was happening behind the scenes before her passing.  She was so concerned about everyone being happy and living life to the fullest that she was already planning  who she thought would be a great fit for Bob.  She sat him down a week before she passed and told him that she had somebody she thought would be great for him (or could put up with him I’m not sure).  It was me.  Although he wanted nothing to do with the idea of women or dating, after a period of time Bob got the nerve to ask me out for coffee.  We became inseparable from that day forward and fell in love.

We will both be forever grateful to Laura for the newfound joy we both found after such a period of grief and sadness.  I know some of you can sense some irony in our story.  I’ll add to that by saying that Laura and I share the same birthday.  Also, our sons (who are best friends) also share the same birthday.

I will end by saying God truly has a plan for all of us and I thank God everyday that Bob was a part of my plan.  Tonight we will be celebrating our anniversary on the beach.  Reminiscing about our wedding day one year ago and enjoying our favorite meal,  fish tacos!  (I actually tied in the fish tacos, I bet you didn’t see that coming)!  Trust God and enjoy your life regardless of what season you are in.  You never know what incredible surprises are waiting for you just around the corner.

Blackened Fish Tacos

Try this quick and tasty Blackened Fish Taco recipe!

Ingredients
  

Instructions
 

  • Sprinkle blackened seasoning on both sides of the fish..
  • Heat olive oil or coconut oil in a skillet or frying pan over med-high heat. Once the oil is hot (about 1-2 minutes). Place fish in pan and Cook for 4-5 minutes on each side
  • Preheat oven to 350 degrees. When fish is about 2 minutes away from being done, place tortillas in the oven and heat for 1-2 minutes.
  • Cut fish into bite size pieces and place in tortilla shells. Add desired toppings.

Notes

A quick note about the tortilla wraps - by now you have all heard me talk about Doug Kaufamann and his TV show Know The Cause (which was actually the catalyst in my changing my diet). Although he suggests eliminating most grains, flour tortillas in moderation are acceptable on his Kaufmann 2 Diet. I make sure they are also sugar, yeast, and preservative free.
