Easy Flatbread

This bread is an absolute staple in our house.  I got the idea for this bread from a wonderful blog called Eating with Purpose but I tweaked the recipe a bit until I could get the kids to love it as much as I do.  Because of the brown rice flour this would make this recipe Phase II rather than Phase I (for those of you trying to follow Doug Kaufmann’s diet).  Kids can find it hard to transition from commercial white bread to a healthier bread but not with this recipe!  It tastes very much like the bread they may be so used to but a healthy version!  It only takes 8 minutes in the oven and about 5 minutes to throw together.  It doesn’t get any easier than that.  Use your imagination as you can do almost anything with this bread.  We use it to dip in olive oil and spices along side our pasta dishes and soups.  You can also use it for sandwiches as well.  Enjoy!

Easy Flatbread
Recipe type: Breads
 
Ingredients
  • ½ cup almond flour - SEE INSTRUCTIONS BELOW IF YOU ARE USING NAMASTE PERFECT FLOUR BLEND INSTEAD OF THESE 3 DIFFERENT FLOURS
  • ½ cup brown rice flour
  • ½ cup tapioca flour
  • 2 table spoons of flax seed (optional) OR Chia seeds
  • 1 teaspoon xylitol
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 3 organic eggs
  • ¾ cup plain organic yogurt, no sugar added - We use Stonyfield Organic
  • ****
  • You can also make this recipe by using ½ cup almond flour and 1 cup NAMASTE PERFECT FLOUR BLEND (if you use Namaste flour blend you can then disregard the brown rice and tapioca flour)
Instructions
  1. Pre-heat oven to 350º
  2. In a large bowl, combine almond flour, perfect flour blend, ground flax or chia, xylitol, baking soda and salt.
  3. In a small bowl, blend eggs and yogurt
  4. Add the egg mixture into the dry ingredients
  5. Pour batter onto parchment paper …Smooth batter out with a spoon over the entire surface area, so it is thin and even.
  6. Sprinkle herbs of choice and sea salt
  7. Bake at 350º for 8 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and cut into desired size with a pizza cutter.

    Hi Sandy,

    Xylitol is derived from the birch tree, it works well as a sugar substitute in baking and has been shown to have some anti-fungal properties. To me, unlike Stevia (also a healthy sugar substitute) it tastes exactly like sugar! I haven’t seen it in Walmart or mainstream groceries yet but I buy mine at whole foods. You can also order it online if you don’t have a whole foods near by. Thanks for writing.

    Amazing recipe…..this was a total life-saver in my home as my son was recently diagnosed as wheat and soy intolerant. We couldnt find a bread that we liked, and truly life without bread is difficult. We now make this fabulous flatbread for sandwiches or just to nibble on. We’ve made it garlicky and cinnamon bread and will be using the base as a pizza crust this weekend. Thank you Erin Porter!

    Erin,
    We just tried this recipe for the first time, and it is ahh-mazing! Wow, I love the texture and flavor! We added a little bit of rosemary and sea salt on top and that was tasty too! This will help me so much when I get bread cravings. And it’s so versatile! Thank you so much for coming up with this awesome recipe!!!

    Thank you for this recipe. The taste is amazing! One of the things I truly miss eating is bread!! A lot of store bought gluten free breads contain corn starch or potato starch which I can’t eat. This flatbread helps when I’m craving a sandwich.

    I’m just wondering, could you please tell me what sized tray you spread the mixture onto (with the parchment paper) and how thinly do I need to spread it?
